The role of cheesemakers, affineurs and cheesemongers across the world is to supply high-quality, great-tasting cheese, all whilst working within regulations designed to keep their customers safe. With our two Regulation and Good Practice modules you can learn, in detail, about the pathogens that cheesemakers need to control and strategies for managing the risks, see how different governments legislate for food safety and how to interpret the criteria for producers. The two modules will take you through the 12 steps of HACCP, considerations for building a dairy, and the law in major cheese producing territories for testing for pathogens. These modules are part of our Level 3 Certification but can be taken as standalone material to support personal development and staff training in this area. About us
The Academy of Cheese is a new not-for-profit industry-funded organisation. The Academy has been set-up to promote cheese knowledge and provide career development, both within the industry and amongst the wider public. It culminates in the highly qualified and industry accredited role of Master of Cheese. The programme will build knowledge and skills in the full cheese cycle; from cheesemaking through affinage to selling to consumers - in both retail and food service environments. At its core, the Academy is building a training and examination programme.
