Yogurt Vanilla Bean Waffles
Happy National Waffles Day! Today I’m sharing theย best waffle recipe for classic pile’m high waffles: ย Yogurt Vanilla Bean Waffles. These homemade waffles are always a hit and make a fabulous platform for all the toppings you can handle.
Alright, alright, alright…
When you say “best” there’s always someone close by to disagree with you.
So let me clarify. This is MY best waffle recipe for traditional homemade waffles.ย However, the word traditional might raise alarm as well, since I’ve added a hefty dose of greek yogurt to the batter.
So let’s get down to what’s important…
These homemade waffles are amazing and you should make them.
With a tangy note from the yogurt and a deep vanilla essence from a fresh vanilla bean, these slightly sweet waffles need no toppings whatsoever, but can stand up to the widest array of toppings around.
Not only is the flavor on spot, the texture is deeply alluring! With a crisp outer crust and a moist airyย almost custard-likeย interior, I can think of no other waffle I’d rather serve at a waffle bar party!
What’s that? Never heard of a waffle bar?
Well, you have come to the right place for National Waffle Day because I’m going to break it down.
A waffle bar party is any party where the main attraction is a waffle maker, a big bowl of waffle batter, and a line of fresh toppings. This works particularly well for showers and brunches, but who’s to say you couldn’t throw an impromptu waffle bar party tonight for National Waffle Day.
I mean you do have the best waffle recipe at your fingertips…
The main things to remember when making homemade waffles are:
- Make sure your waffle iron is piping hot.
- Cook until the majority of the steam escapes.
- Use thin batter. (Seltzer water helps make the waffles light and airy, but crisp.)
- Never ever stack waffles on a plate. (I only did it for photography purposes.) Stacked waffles lose their crunch-factor. Always keep a warming draw or warm oven ready to hold the waffles until time to serve.
Once your hot crispy homemade waffles are ready, pile them high with syrup, yogurt, berries, nuts, granola… the possibilities are endless.
However, I do suggest taking a bite of aย naked waffle, just so you know what you’re dealing with. Waffle perfection is hard to define.
Best Waffle Recipe
Ingredients
- 2 1/4 cup all-purpose Gold Medal Flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 vanilla bean
- 2 eggs
- 1/4 cup vegetable oil
- 1 cup vanilla Greek yogurt
- 1 1/2 cup seltzer water
Instructions
- Preheat the waffle maker and preheat the oven to 200 degrees F. In a large bowl mix the flour, sugar, baking powder, and salt. Cut the vanilla bean down the middle lengthwise, and scrape out the seed paste.
- Add the vanilla bean paste, eggs, oil, and yogurt to the bowl. Whisk well, then whisk in the seltzer water to thin out the batter.
- Pour the batter into the waffle maker. Use enough batter to fill the griddle sections, without overflowing. Cook for 3-4 minutes, until the majority of the steam has stopped pouring out of the waffle maker. Then check the waffle for a golden brown color.
- As the waffles come out of the waffle maker, place them directly on the warm oven racks, so they stay crisp. Serve with maple syrup, or lots of toppings waffle-bar style!

We love waffles and until I made this recipe the best waffles I ever had were at the Luxor in Las Vegas. These waffles are as good or better. Crunchy on the outside, light and fluffy on the inside.ย
I donโt stock vanilla beans so I substituted 1 Tbsp vanilla. I tried adding the sofa water before mixing all the other ingredients but they did not turn out as good. The batter is very thick before you add the seltzer but I recommend following the recipe on this.

Absolutely delicious!! ย Never have I thought of subbing seltzer water…my hubby was a little skeptical at first but I told him it must help with the rise and fluffiness! ย They were airy and fluffy not dense and overly hard like crusty sourdough bread. ย It took me a try or two to perfect the waffles but once i got it down pat, they came out beautiful. The mishaps will go to my sons dogs. ย โบ๏ธ ย His dogs love everything I send them, even lettuce. This will forever be my waffle recipe. Thank you!! ย

I would think so… The only one I’ve used is Bob’s Red Mill 1-to-1 GF Baking Mix, but it usually works just like regular flour. :)
