Braised eggplant with green peas, herbs, yoghurt & grilled chicken breast

SERVES 6 PREP + COOK TIME 40 MINUTES

1.6kg eggplant

350ml extra virgin olive oil

2 tablespoons fresh rosemary, coarsely chopped

200ml water

2 x 250g boneless chicken breast, skin on

500g frozen green peas

400g diced canned tomatoes

¼ cup flat leaf parsley, chopped coarsely

240g Greek yoghurt
