Indonesian Fried Rice (Nasi Goreng)
Cooking Time: 2 h
Servings: 6
Ingredients
1-1/2 cups uncooked white rice
3 cups water
1 serving cooking spray
4-1/2 eggs, beaten
1 tablespoon and 1-1/2 teaspoons vegetable oil
1-1/2 onion, chopped
1-1/2 leek, chopped
1-1/2 cloves garlic, minced
3 green chile peppers, chopped
3/4 pound skinless, boneless chicken breasts, cut into thin strips
3/4 pound peeled and deveined prawns
1-1/2 teaspoons ground coriander
1-1/2 teaspoons ground cumin
1/4 cup and 1 teaspoon sweet soy sauce (Indonesian kecap manis)
Directions
Step 1: Boil the rice and water in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer about 20 to 25 minutes, until the rice is tender, and the water has been absorbed. Spread on to a baking pan, and refrigerate 2 hours until cold.
Step 2: Over medium heat, heat a large nonstick pan. Spray with nonstick cooking spray. Place eggs, beaten into a pan. While the eggs begin to set, lifting up the edges of the set eggs to allow the uncooked egg to contact the hot pan. Flip it in one piece and cook about
