    Keto Salmon with olive-pistachio tapenade and tomatoes

    Cooking Time: 35 m

    Servings: 4

    Ingredients

    4 oz. green olives, pitted

    3 oz. pistachio nuts, shelled

    30 oz. salmon fillets

    20 oz. cherry tomatoes with stems

    1 tbsp dried thyme

    ½ cup fresh dill, chopped

    ½ cup olive oil

    salt and pepper, to taste

    Directions

    Step 1: Heat the oven to 350 Fahrenheit (180 Celsius).

    Step 2: Finely chop the olives and pistachios and place in a small bowl. Stir to combine with olive oil.

    Step 3: Place the fish in a baking pan. Add the olive mixture around and between the fillets.

    Step 4: In a separate baking pan place the tomato and seasoning with thyme, salt, and pepper. Sprinkle over with olive oil.

    Step 5: Bring the fish and tomatoes to bake in the oven for 15 minutes until the fish is opaque in the middle.

    Step 6: Add some of the dills on top of the salmon and serve.

    Keto falafels

    Ingredients

    15 oz. mushrooms, sliced

    1 cup light olive oil, divided

    1 cup pumpkin seeds

    1 cup almonds

    1½ cups vegan unflavored protein powder (pea protein)

    ½ cup water

    8 tbsp chia seeds

    4 garlic cloves, minced

    4 tbsp fresh parsley, finely chopped

    2 tsp salt

    2 tsp onion powder

    2 tsp ground cumin

    2 tsp ground coriander seed

    ½ tsp ground black pepper

    Directions

    Step 1: Heat the oven to 350 Fahrenheit (175 Celsius).

    Step 2: Roast the pumpkin seeds and almonds in heat large dry frying
