I bake cookies every day, and it has always been my dream to have all my favorite cookie recipes together in one book. I have been building my cookie recipe collection since I was a girl with the help of my mother and many generations of Grannys.
I had a wonderful time putting this book together. It brought back great memories of my childhood when I first fell in love with baking. I will always remember my mother and my granny humming a tune in the kitchen while baking up another batch of their amazing cookies. They taught me that baking is a joy and a great way to relax before the day begins. What a fantastic way to start your day. And the wonderful aroma that fills your home is priceless.

Cooking, baking, and preserving from scratch is an art and one we all need to know how to do. Read your recipe carefully before you start. Be sure you have all the ingredients called for and you understand the recipe clearly.
Gather all the bowls, pans and utensils you will need on your counter or workstation before starting. Use standard measuring cups and spoons. Prepare the pan carefully according to the recipe. Place pans as near the center of the oven as possible, do not place pans directly over another or crowd the oven for this will make for uneven baking. Use a shiny cookie sheet to insure even baking and browning of your cookies.
If your recipe says the ingredient must be room temperature, be sure it is room temperature before using.
Use fresh ingredients. Check expiration dates of baking powder and baking soda. For testing purposes, baking soda should bubble when added to vinegar and baking powder should bubble when added to hot water. Be sure to mix baking powder and soda into the flour before adding to the wet ingredients; this distributes everything evenly for a perfect cookie.
Control the spread of your cookies with baking soda. Cookies spread when they have too little structure and cannot hold their shape. Often some spread is desirable. By adding a little baking soda to your cookie dough will increase the spread of your cookies. Baking soda weakens gluten and egg protein structure; with less structure, cookies spread more and you will have a coarser, more porous crumb. Baking soda often provides a crisper crumb and increase browning. When baking at high altitudes, omit baking soda from cookie dough. The lower air pressure at high altitudes encourages spread.
flora.jpgWhen baking at high altitudes, 3500 feet above sea level or more, there is generally lower humidity so flour tends to dry out more quickly and may absorb more liquid in a recipe. The air pressure is lower so this allows baked foods to rise faster. Leavening agents such as yeast, baking powder and soda weaken the structure of baked goods. Also too much sugar can weaken the structure of baked goods. Water boils at a lower temperature than at sea level, as the elevation increases, the boiling point is reduced two degrees per 1000 foot increase, so foods take longer to cook. Liquids evaporate faster so cookies, frostings and candies will become harder more rapidly. So for cookies you need to increase the oven temperature about 20 degrees and slightly decrease the baking time. This will keep your cookies from drying out. For cake and bar type cookies, reduce the sugars called for in the recipe by three Tablespoons per cup. Use the largest pan size suggested.
Kneading dough evenly distributes the ingredients, develops structure and makes the dough elastic so that it will rise and stay risen as the leavening agent works. Use a press, fold and turn motion. Flatten the ball of dough with your hands and fold it in half toward you. Press and push the dough away with the heels of your hands. Rotate the dough a quarter turn and repeat these steps until dough is smooth and elastic.
Folding in ingredients: beaten egg whites or whipped cream are common ingredients folded into batters and other mixtures. They both contain air in the form of small bubbles, so folding, rather than mixing, is done to retain the air in the mixture. Start with a large bowl containing the heavier mixture and place half of the egg whites or whipped cream on top of the mixture. Using a circular motion with a rubber spatula, cut through the center of the mixture across the bottom of the bowl, gently lifting up and over. After each fold, rotate the bowl slightly in order to incorporate the ingredients evenly. Fold in the remaining egg whites or whipped cream until both mixtures are evenly combined and no streaks remain.
Baking cookies with honey will sweeten your cookies along with making them moist. Just replace your sugar with the same amount of honey to create a chewy cookie, lasting several days.
flora.jpgFlavoring your baked goods
Chocolate is a favorite flavor in many baked products. Baker’s unsweetened chocolate or cocoa powder has a rich natural flavor and smooth texture make it a universal choice.
Coconut is friendly to all home baking. Its snowy shreds bring flavor and decoration to a host of desserts. Baker’s Coconut, Southern Style, is fresh-grated coconut, slightly sweetened and packed with out coconut milk, in airtight containers. Its long, lacy shred is especially appropriate for sprinkling over or rolling baked goods in. Baker’s Coconut, Premium Shred, is finely shredded and sugar-cured. A favorite for use in cookies, cakes, pies and other baked good recipes. Coconut is a great substitute for nuts.
Vanilla is perhaps the most popular extract. Lemon, orange, and almond are also great favorites. Many delicate, delicious blends may be produced by skillfully combining different flavors. Lemon and vanilla, or rose and almond, both give a subtle flavor.
Spices must be fresh and of good quality. Measure carefully, for too much spice disguises the delicate flavor of baked goods. Spices should be sifted with flour to mix evenly with other ingredients.

Set butter and eggs out the night before to become room temperature.
Always use large sized eggs.
Always use unsalted butter and nuts.
Always use pure extracts of vanilla and almond.
Always use rolled oats or quick cooking oats, never use instant oatmeal.
Be sure to measure accurately, the best baking relies on the correct ratio of ingredients.
Lightly spoon flour into a dry measuring cup and level off with a knife.
Do not sift flour unless recipe calls for it.
To keep cookies from sticking to the baking sheets, butter, shortening, cooking spray or parchment paper should be used.
Try not to substitute fats, if the recipe calls for butter use butter.
Chill dough for cut-out cookies and soften at room temperature a few minutes before rolling out.
Cool cookies completely before decorating.
flora.jpgLeave 2 inches of space between cookies unless other called for, so cookies do not spread into each other.
Adjust baking time to achieve the cookie texture you crave. A little less time makes a chewier cookie, a little more makes a crispier cookie.
Bake bar cookies in the pan size called for in the recipe.
Always preheat your oven before baking your cookies.
Store soft cookies, like bars cookies, in an air tight container. To keep moist add a slice of apple to the container.
Store crispy cookies in a container like a cookie jar or a container with a loose lid. If there is a lot of humidity in the air, add a piece of bread to the container. The bread will absorb the moisture.
Rub flour or powdered sugar over rolling pin to prevent sticking to dough while rolling out. Roll out dough to 1/8 inch to 1/4 inch thickness before cutting out.
When using raisins or berries, put them in a paper bag with flour and shake to coat, then they will not sink to the bottom of the batter during baking.
When melting chocolate, grease the pan it is melting in and the chocolate will not stick.
To cut marshmallow, rub butter on scissors or knife to prevent sticking.
flora.jpgFor chewy cookies: do not over mix cookie dough, bake cookies the minimum amount of time, even though the center may look a bit under-baked. Let cookies stand on baking sheet for a few minutes to continue to bake, and then remove to cooling rack.
Bar Cookies are prepared by putting the dough in a pan, baked and cut into squares. Most drop cookie recipes can be converted to this type of cookie. They are the easiest cookies to make, baking several batches at once.
Molded Cookie dough is formed by the hands into shapes like: wreaths, crescents, canes, or balls. Balls are sometimes flattened with the bottom of a glass.
Pressed Cookies are made by pressing dough through a cookie press or pastry tube to form different shapes.
Refrigerator or Icebox Cookies are prepared by shaping the dough into long rolls or logs and then refrigerating them. Once cold, the dough can be sliced and baked. This is a great prepare ahead of time dough because it can also be frozen.
Rolled Cookies take a little more preparation. With a rolling pin, chilled dough is rolled out. The dough is cut into shapes by using a knife, pastry wheel or cookie cutter.
Freeze your cookies for later use. Cool completely before freezing. If your cookies are frosted, flash freeze on a cookie sheet then stack them in freezer containers between sheets of wax paper. For bar cookies, place uncut bars in a freezer container and freeze for up to 1 month. Before serving, thaw 15 minutes and cut into bars. You may freeze unfrosted cookies 4 to 6 months, frosted cookies 1 to 2 months. Thaw in package at room temperature. For cookies that should be crisp when thawed, removed from container.
