* Boil the peeled potatoes until fork tender. Mash them well.

* Allow the mashed potatoes to cool slightly before serving.
* Combine the mashed potatoes, almond/cassava flour, beaten egg, and salt in a large mixing dish. Mix everything together until a dough forms.
Gnocchi Shape:
* Cut the dough into little pieces.
* Make a long rope out of each half and cut it into bite-sized pieces.
* For added texture, make fork marks on each piece.
Make Gnocchi:
* Bring a kettle of salted water to a boil.
* Place the gnocchi in a pot of boiling water. They are done when they float to the surface (typically after 2-3 minutes).
Serve:
* Serve the gnocchi with your favourite sauce.

To make the noodles:
* For paleo, bake spaghetti squash until fork tender. Scrape the strands out.
* For keto, properly rinse shirataki noodles or spiralize zucchini into noodles.
Prepare the Sauce:
* Heat olive oil in a skillet and sauté minced garlic until fragrant.
* Cook for a few minutes after adding the smashed tomatoes.
