Just a few ideas...
Carl Sagan (except Contact as that is actually fiction, not non-fiction).
Stephen W. Hawking
Jane Goodall
Stephen Jay Gould
Charles Darwin
Richard Dawkins
Albert Einstein
You could find a book about something that you're interested in... say you're interested in electricity - there are some good books about Tesla out there, etc.

I recently read The World Without Us which discusses what would happen to the planet if humans were to disappear tomorrow. Its truly fascinating and I actually ranked it as one of my favorite books of the year. I highly recommend it if you are looking for a book for this category.

Some interesting science books I've read, and ones that don't require a degree in chemistry or physics, are -
Zero The Biography of a Dangerous Idea
Napoleon's Buttons How 17 Molecules Changed History
Longitude The True Story of a Lone Genius Who Solved the Greatest Scientific Problem of his Time
That's the Way the Cookie Crumbles 65 All-New Commentaries on the Fascinating Chemistry of Everyday Life
Hope this helps.
