Take time to sit with your client and reevaluate their budget and vision. Ask them what top three things they must have at their event in order to make it “perfect”. Ask them what they would like to notice first when they walk into the event, what would stand out to them and hopefully to their guests. Review the guest list, have there been any declined invitations, take a look on how this could affect food and beverage minimums and ordering. Lastly, has your client ordered enough or too much of their selected menu items. Friendly reminders to clients that not all of their guests will eat all of the food provided. It may be more effective to serve multiple smaller portions than a few larger portions.
