    This 9/11, Eat Happy Now was honored to partner with the 9/11 Day Non-Profit as a Support Staff Lead to pack meals in remembrance of the lives we lost 23 years ago. It was a deeply moving and gratifying experience, and a powerful way to give back. Together, in two shifts, more than 450 volunteers packed an incredible 260,000 meals which are being distributed by Food Lifeline to feed those in need. We’re especially thankful to our amazing volunteers from Eat Happy Now who joined us in this massive effort: Manisha Advani, Rajib Chakraborty, Archana Verma, Anuja Regmi, Sandeep Thomas, and special thanks to Quadrant Technologies for your invaluable support. This day reminded us of the strength of community and the power of coming together to make a difference.     Join Eat Happy Now's food rescue revolution! At Eat Happy, we're on a mission to stop edible, healthy food from ending up in landfills. We connect surplus food from retail stores to communities facing hunger, all through our easy-to-use app. Food insecurity is a global challenge, but did you know we already produce enough food to feed everyone on the planet? Despite this, millions still face hunger every day. Producing more food isn't the answer—it’s time to tackle food waste instead. However, according to the UN, we already produce enough food to feed the world's 8 billion people. Despite this fact, 309 million people in 72 countries still face acute food insecurity. Furthermore, just producing more food risks multiplying waste and worsening climate change. It's a stark reminder that that food loss and waste are prevalent even while hunger persists. This is where Eat Happy comes in. Through short, 30-minute deliveries, our volunteers rescue food and deliver to communities struggling with hunger.     We’re thrilled to announce our partnership with The Food Bank at St. Mary's! Their mission to eliminate hunger aligns perfectly with Eat Happy Now’s goals. The Food Bank at St. Mary’s, Seattle’s largest neighborhood food bank, serves 800-1,000 people each week, and we’ve already donated over 5,500 ready-to-eat meals since teaming up. 🙌 Did you know? Food waste is a massive issue worldwide, with 2.5 billion tons discarded each year—60 million tons of that in the US alone. 🍽️ Marlowe, St. Mary’s Development and Admin Manager, shares, “The variety of culturally appropriate meals from Eat Happy is invaluable for our clients who need ready to eat options. They're packed with protein, healthy fats, and a variety of vitamins and minerals. Just clean, season, and roast them in the oven for a crunchy treat! 🌟 Watermelon Rind: The rind, often discarded, can be pickled or used in stir-fries and salads. It’s a great way to add some crunch and use up every part of the fruit. Pickled watermelon rind is a delicious and refreshing addition to your meals.
