In fruit and vegetable processing, significant heat is needed for drying, often sourced from coal, electricity, natural gas, or solar energy. Unfortunately, much of this heat goes to waste due to lengthy drying times and inefficient transfer processes. An article in the Journal of Food Science explores catalytic infrared drying technology, which could reduce the amount of heat wasted during the fruit and vegetable drying process. After starting with a field of 31 startup founders and executives, 13 finalists presented their pitches about their company's potential influence on the food value chain to a panel of judges on Wednesday at the Pitch Finals in the IFT FIRST Startup Pavilion.
