Chef Jeffrey Quasha, our Sr. Director of Culinary Innovation, recently joined the "Food-as-Medicine" panel at FoodService Director Online's Menu Directions Conference to discuss the role of food in a patient's healing journey. Tomorrow, we celebrate Juneteenth, the day that the last enslaved African Americans learned of their freedom. This important moment in history reminds us of the ongoing journey toward equality and justice in our country. Chefs Mike Walker, Judith "JuJu" Morrison, and Anthony Cardwell came together to craft menus that blend flavor, culture, and history to share with visitors at UConn Health's Main Cafeteria. Special offerings include Chef Mike's seafood & sides, Chef JuJu's Jamaican delicacies, and Chef Anthony's family-inspired barbeque.
