Last night CBCI had the opportunity to sponsor the Research Chefs Association Chicagoland Region's "Artisan Cheese Seminar, Tasting, and Reception" This event was amazing, to say the least! Chef Giles Schnierle, founder of THE GREAT AMERICAN CHEESE COLLECTION, INC. presented on the growth of American artisan cheeses. One of the cheeses that stood out to us was the Dirt Lover from Green Dirt Farm in Weston, MO - a 100% sheep milk bloomy rind cheese with a light coating of vegetable ash, that features notes of mushroom and is one of the very few soft ripened sheep's milk cheeses made in the US. It was delicious, along with many more of the cheeses that were presented! We had a great time learning, tasting, and connecting with those of you who attended. Last night was truly inspiring and full of flavor! Love seeing Mickey Miller .
