In between meetings, working and looking after the little munch, I love to cook. Sharing a bit of my culinary adventure with you all... Here's my simple yet sumptuous prawn linguine recipe that's perfect to unwind after a hectic week. Something to satisfy the palate and recharge the mind, let me know if you decide to try it out! Lemon & Garlic Prawn Linguine (Serves 2) Steps: 1) Cook 130g (for 2 people) of Linguine / Spaghetti, drain and set aside. 2) Into a pan, add 2 tbsp Olive Oil & 2 tbsp butter. 3) Add 4 cloves of garlic and 1 tsp of crushed red pepper. 4) Add 1 1/4 lbs (550g) of RAW prawns (If they're already cooked, put them in a jug of hot water and add them at the end to avoid overlooking). 5) Add salt and pepper to season. 6) Add 1 tsp of dried oregano. 7) Add 4 cups of baby spinach. 8) Throw in the pasta with 6 Tbsp of butter. 9) Add 1/4 cup of Parmesan and 2 Tbsp of parsley. 10) Stir everything together and add 1 Tbsp of lemon juice. 11) [Add the pre-cooked prawns here if that’s what you’re using] 12) Serve and enjoy. #WorkLifeBalance #CulinaryCreativity
