I knew a (now famous) chef that almost every day, would really not like something in his restaurant and if you worked for him everything was "yes, chef" breakdown the kitchen (30 voices say "yes, chef") the kitchen would be spotless in 10 mins. (top to bottom) The forks, I dislike how the hit the lips for serving my pasta. "yes, chef" The stem ware leaves a void for this 1982 pinot. change them. "yes, chef" the curtains bring a sense of bland, replace them now. "yes, chef" He created #1 restaurants in major cities, Then created an empire If your job is to not only make the best food in the world, but to create an experience so exceptional that nothing is questioned, you will have to make a ton of changes. You do this by learning on the job each day. Nothing in business is set it and forget it. The second, you think there is a finish line is the second you start being very average.
