A scientific breakthrough to eliminate chocolate food waste... For years we have abandoned the cocoa fruit in favour of its golden heart – the cocoa beans. But is it necessary to generate so much food waste just so we can have our chocolate (and eat it too)? Swiss scientists have developed a new method to use the entire fruit; the pulp, the juice, the husk, and the mighty bean. To produce this sustainable chocolate, they took the sweet fruit juice and distilled it down to a concentrated syrup. When combining this syrup with the pulp and dried husk, it forms a cocoa gel. They then use this to sweeten the cocoa beans, creating a completely self-sufficient chocolate bar! Swedish video game developer King has purchased the first UK biodiversity credits. The project, by nature tech company Earthly, is part of the UK’s first voluntary biodiversity credit scheme. The nature restoration project in South Downs National Park is working to improve biodiversity and reconnect wildlife corridors, alongside enhancing carbon sequestration. While trees are often in the spotlight when it comes to carbon capture, there are several alternative methods that are just as efficient. Scotland’s Flow Country, the largest expanse of blanket bog in the world, has recently been awarded the status of UNESCO World Heritage Site, putting it on par with the likes of the Grand Canyon and the Great Barrier Reef. Not only does the Flow Country store more than twice the carbon in all UK woodlands and forests combined, but it is also home to a vast variety of species including otters, water voles, mountain hares, golden eagles, waders and several other waterfowl, making it a treasure trove of biodiversity.
