Did you see Dorking step back in history yesterday? Here’s what happened: The White Horse officially opened its doors again yesterday, and made sure everyone was entertained with a horse drawn carriage pulled by two magnificent white (of course!) horses, Dickensian singers and a reading from Charles Dickens himself. Lobster season in The Bahamas has officially arrived 🦞 Bahamian lobsters, also known as spiny lobsters, belong to a family of over 45 species of achelate crustaceans. Harvested primarily from the clear, warm waters surrounding The Bahamas, this lobster species is a key element of local cuisine and an important part of the island's economy. The fishing of Bahamian lobsters is traditionally carried out through skillful diving amongst coral reefs and rocky habitats - this sustainable practice ensures the preservation of lobster populations and their environment. Visitors can even enjoy guided diving adventures which provide an opportunity to explore vibrant underwater ecosystems while harvesting the lobsters. Local festivals and seafood feasts often feature Bahamian lobster, two of the most common preparations being Bahamian lobster tails and lobster salad. Revered for its sweet, tender meat, this seafood delicacy is a staple in local dishes showcasing its importance in community gatherings and celebrations. Prices for Bahamian lobsters vary depending on size, season, and market demand, but they generally command a premium due to their high quality and the cost of sustainable harvesting practices. Typically, the retail price range is between US$16.20 and US$24.79 per kilogram or between US$7.35 and US$11.24 per pound (lb). Their distinctive flavor and texture make them a sought-after delicacy in both local and international markets.
