In the future, cooking is transitioning to printing. Israel-based foodtech company ‘Stakeholder Foods’ has created the world’s first 3D printed eel, giving new momentum to the plant-based industry. They focused on 3D printing eels. The fishing industry has been pointed out as one of the causes of marine destruction. I welcome #innovation in #foodsystems and I really hope these products aren't high in salt, like most plant based meat substitutes I've tried --> "A #3Dprinted food firm is developing a #plantbased bacon product for the UK market and is seeking local partners for a launch. Spanish company COCUUS delivered its first batch of 3D printed plant-based bacon to Carrefour in Spain earlier this month, marking the first time such products have retailed globally, it claims. Vegan foie gras and plant-based tuna – 'that mimics the texture, structure and taste of regular tuna and the same nutritional benefits' – are scheduled to follow in the coming months. The #foodtech firm analyses the 'morphological structure' of different meat products, digitalises their molecular structures and maps them, before 'rapidly, reliably and realistically replicating them on an industrial scale'. While other bacon-like plant-based offerings are already on the market, 3D printing allows for a product that 'goes much further in mimicking the real thing', the company says. 'The product is composed of a meaty section, a fatty part and a thin crust on one side. When the bacon is cooked, each part reacts differently to heat in the pan, just like regular bacon does,' said Patxi Larrumbe, co-founder and chairman of Cocuus. 'This 3D printing technology allows us to carry out industrial scale production, efficiently creating plant-based products that have the look, feel, and taste of meat and fish,' Larrumbe added. 3D printed plant-based bacon producer COCUUS eyes UK launch. Foody’s and Cocuus, two food tech enterprises based in Navarra, Spain, have partnered to manufacture and market 3D-printed plant-based foods. The initial focus will be on bacon. Within this collaboration, Foody’s will be industrialising and promoting Cocuus’s 3D bioprinted alternative meat, presented under the joint brand Foody’s & Cocuus. Patxi Larumbe, founder and CEO of COCUUS, commented, “Undoubtedly, this technology will forever change how we produce healthy, tasty, and sustainable food for the world at scale. It aspires to revolutionise food science through disruptive solutions for the industry,” The 3D bioprinting platform works with in-house designed bio-inks, AI & and mathematical models to mimic meat's structure. They claim it can print cutlets, bacon, and lamb ribs at a rate of 8 kilograms per minute. Gonzalo Agorreta Preciado, CEO at Foody's comments, “This is the first in a series of products that are superior to those known in the category to date. This industrial printer is unique worldwide and will enable us to produce 1,000 tons of 100% vegetable bacon per year". Since being established in 2017, COCUUS has achieved several milestones, including raising €2.5 million last year with Cargill Ventures, allowing them to scale its technology.
