With a forthcoming ban on cultivated meat set to begin on July 1, UPSIDE Foods is organizing a one-night pop-up event in Miami to celebrate food innovation and the freedom to choose what we eat. This event, featuring Miami chef Mika Leon and mixologist Gio Gutierrez, offers Floridians their first and last opportunity to try cultivated meat before the ban. UPSIDE Foods pioneered the introduction of cultivated meat in the US market after receiving regulatory approvals from the FDA and USDA. The company advocates that cultivated meat is a crucial part of the future food landscape due to its potential to meet growing meat demands in a safer, more humane, and sustainable manner. Despite these benefits, Florida Governor DeSantis signed Senate Bill 1084, which criminalizes the production and sale of cultivated meat in the state. The "Freedom of Food" event, co-hosted with The Brick & Timber Collective, is scheduled for June 27 and will be free and open to the public on a first-come, first-served basis. In their Consumer Food Insights survey, Purdue University asked consumers to group different animals based on their willingness to try conventional and cultivated meat cuts in a professional restaurant setting. While there's still hesitation about the taste and healthiness of cultivated products, some findings are promising. They found that around 60% of consumers are willing to try cultivated beef, chicken, and pork in restaurants, while around 30% are unwilling. Cultivated meats in EU - here we go!? GOURMEY has announced the filing of an application for approval of its cultivated foie gras with the the European Commission (EC) and European Food Safety Authority (EFSA). This is the first application for a cultivated meat product in Europe. Last autumn, The Cultivated B had entered the pre-submission phase with its hybrid sausage product, but the company has not officially filed for approval yet. I'd be curious to hear your opinion: given that "real" foie gras is a highly controversial product – is it a stroke of genius to start the process in EU with it? Will it help accelerate decision making? You can now cook cultivated meat at home. Eat Just, Inc. has rolled out its new, cheaper Good Meat chicken at Huber's Butchery in Singapore, marking the first time cultivated meat is available in retail anywhere in the world. This version of Good Meat contains 3% cultivated chicken, instead of the 60-70% in previous iterations – but Eat Just says there's no compromise on taste or texture, based on results from sensory testing. "Giving consumers the opportunity to buy cultivated chicken in-store and bring it home to prepare and serve to their families is a huge step towards normalising this new type of food,” CEO Josh Tetrick tells me. It's a massive step forward for an industry where costs and scalability have been two major hurdles. While Florida and Alabama push regressive policies that threaten the future of the food system, Singapore continues to consolidate its position as a world leader in food tech innovation. Josh Tetrick's attempts to disrupt our food system with his plant-based food products tell us so much about the "powers that be" in our food systems, and the lengths they will go to to ensure we eat the food they produce regardless of health effects and negative impacts on the environment (not to mention animals in the factory farming system). His "Just Egg" product has cornered the plant-based egg substitute market, but only after some significant struggles- as this article discusses, both Unilever and the American Egg Board have targeted Beyond Egg. BE has had to fight for the right to call its "Just Mayo" mayonnaise- because it does not contain chicken eggs- after a two-year war orchestrated by the Egg Board to eliminate the concept of a plant-based mayonnaise. The entire ordeal helps display the attitude much of the food industry has toward plant-based and vegan products: a harsh competitiveness fueled by energy and effort that could be used to develop products that are both sustainable and desired by consumers- but aren't. The corporatization and industrialization of our food system are well-known, but specific instances of infighting and toxic legal strategies are less so. At Wanda Fish, we take pride in our commitment to science-driven food development. Which is why it is extremely disappointing to see the level of discussions carried at the Alabama House of Representatives when they passed a bill aiming to ban cultivated meat. The following is a quote from an article published just a few days ago: "There was very little discussion about the bill. Rep. Danny Crawford, R-Athens, who spoke for the bill in the House, mocked the concept of cell-cultured meat in his brief explanation of the bill. “They throw a couple of animal cells in there. Throw some chemicals in there. Some ingredients, and boom, you get a chicken leg out,” Crawford said. That got some laughs but no questions from House members about how the process really worked." Let's set the record straight: Cell cultivation doesn't produce chicken legs; rather, it's used to create products like fish fillets or chicken nuggets, similar to UPSIDE Foods or GOOD Meat's products. Moreover, we don't simply "throw some chemicals" into the mix. We go through a vigorous process to unsure healthy and delicious products. With many companies supporting this process (Nutreco, ADM, Multus, Sigma-Aldrich, Sartorius and many others), some of which also operate in the traditional food business. We should also express gratitude and support to companies and organizations leading the educational process on behalf of our industry. 🥩🍽️ WILL THIS BE A GOOD YEAR FOR CULTIVATED MEAT? July 2023 was a landmark moment for cultivated meat. It was the month after Californian startups Eat JUST’s GOOD Meat and UPSIDE Foods received USDA approval to sell their cultured chicken nationwide, and became the month that saw the debut of these products in restaurants. UPSIDE Foods’ chicken made its way onto the menu of Dominique Crenn's Michelin-starred eatery Bar Crenn in San Francisco, while José Andrés’ Washington, DC restaurant China Chilcano debuted GOOD Meat’s product, which rolled out for public tasting weeks later. “It represents a giant leap towards a world where people no longer have to choose between the foods they love and a thriving planet,” UPSIDE Foods CEO Uma Valeti, MD said at the time, summing up the weight of the occasion. “I can’t wait for more people to get their first bite – it’s a magical moment that inspires an exciting world of new possibilities.” Now, however, people can’t get those bites anymore, not in the same capacity anyway. UPSIDE Foods and GOOD Meat have hit pause on their restaurant collaborations for now. And that’s not just in the US – GOOD Meat’s products are no longer available in Singapore either, which was the first country to approve the sale of cultivated meat anywhere in the world. Would you eat cultivated meat? In a survey from Purdue University, 60% of US consumers said they would be open to it. What's my opinion? In my perfect world, everyone would eat plant-based, and there would be no need for meat at all. But I'm also aware that the likelihood of that is very slim. While I wouldn't eat cultivated meat, as I've thrived on a meat-free diet for over 20 years, I can acknowledge it as a route to provide a slaughter-free food system. And for that reason, I am in support of it. #futureoffood
