Sirloin • Hot Pork Sausage • Housemade Ricotta • Mozzarella • Gnocchi Dough • Roasted Cherry Tomato-Leek Sauce • Béchamel • Swiss Chard That is correct, a Lasagna Tamale!! This is what happens when you love Italian Cuisine and Mexican Cuisine, you make 🌎‘s collide!! 💥 I have never seen anyone create this using Gnocchi dough as the "masa" and it worked. My original plan was to steam them wrapped in Escarole leaves but could not find large enough leaves so went back to the corn husks. I made a concentrated meat sauce for the filling so it was not too wet as I wanted a lot of filling to really create the flavor and feel of a lasagna but cooked in a tamale fashion.
