We think we're an evolved species as humans, but really, nature WAY out-performs us, even POTATOES. 🥔 Here's what I mean. 👇 Look at this EPIC sweet potato that came in my CSA box. This thing was the size of my ENTIRE forearm. 🤪 Do you think this potato feels that it's too big, too awkward shaped, too tall or too strangely colored to fulfill it's purpose??! 🤔 HECK no! 😉 There's nothing that this potato needs to do to earn the love of it's consumer (aka me) ❤️. This potato doesn't care that it's WAY bigger than all the other potatoes, that it might stand out in a crowd, that it looks unusual. It just IS. No comparison, no competition - just being the best that IT can be. 👏 I think we have a thing or two to learn from this potato. Expiration dates are not just for spices! At Meat & Potatoes Organizing we like to empower our clients using expiration dates. Any boxes or totes we contain that might be used once or twice per year...we put an expiration date on it! That way, when the items are revisited, we can have an honest conversation. Did we ever use these items? How useful were they to us? And was it worth it...these items taking up my precious space in my own home!!! Pumpkin Seed Pate (Makes 2-4 servings) ½ cup raw pumpkin seeds soaked overnight ½ cup hemp seeds 2 cloves garlic, minced 2 scallions, chopped 1 large lemon, juiced 2 tablespoons tahini ½ cup fresh parsley, loosely packed ¼ teaspoon cayenne pepper (to taste) Drain the pumpkin seeds and rinse well. Pulse garlic with pumpkin and hemp seeds until well-ground using a food processor. Add remaining ingredients and blend until creamy (about 2 minutes). Refrigerate in an airtight container.

11th June - Corn on the Cob Day. Some call it “corn-stick,” others go with “sweet pole,” but we like to call it amazing — especially when you use those cute plastic corn on the cob handles. National Corn on the Cob Day falls on June 11 — the perfect pre-summer date. (Although, for most home gardens, mid-June is still too early for the harvest.) But you can’t blame anyone for being in a hurry. The sweetness doesn’t hang around for very long. It has to be picked at its freshest, otherwise there’s a risk of — nothing really — it’s just slightly less incredible tasting. Note: If you plan on doing the picking yourself, there’s a trick to spotting when the corn is ready. During the milk stage, the kernels are still soft, and this is nature’s way of saying “come and get it!” Boil it, steam it, roast it, or grill it — there’s no wrong or right method as long as it stays on that cob.
