Potatoes are loaded with nutritional benefits, are delicious, versatile, and budget-friendly - what’s not to love? 💞🔥🥔 This is my plant-based take on a traditional favorite: Cheesy Scalloped Potatoes with Mother Raw Ranch! This dish comes together with only a few simple ingredients, including: Skinned and Sliced Potatoes (2-4 Potatoes) Vegan Butter or Vegetable Broth (⅓ Cup) Gluten-Free Flour (3 Tbs) Mother Raw Ranch Dressing (3 Cups) Vegan Mozzarella Cheese (2 Cups) Vegan Feta Cheese (1 Cup) Chopped Green Onions or Chives (⅓ Cup) Salt and Pepper to Taste 1️⃣ Skin potatoes and slice them to create thin circles. 2️⃣ In a pot, melt vegan butter and then slowly mix in gluten-free flour. Pour in a little bit of vegetable broth until a thick roux forms. Then add Mother Raw Ranch Dressing to create a creamy cheese sauce. 3️⃣ In a vegan-buttered glass pan, add a layer of sliced potatoes by placing them side by side. Next, pour in a drizzle of ranch cheese sauce and spread it from corner to corner, edge to edge. 4️⃣ Sprinkle over a layer of mixed vegan mozzarella, feta cheese, green onions, and repeat the potato, sauce, cheese, onion layering until you run out of sauce. 5️⃣ Garnish the top with cheese and chopped green onion. 6️⃣ Cover the glass pan with aluminum foil and bake the potatoes at 400°F for 50-65 minutes or until the potatoes are soft enough to easily pierce with a fork. 7️⃣ Top the scalloped potatoes with chopped green chives. 8️⃣ Sing your song, do your dance, speak your truth, a nd enjoy the vegan scalloped potatoes! 🎶🎤
