The Food Hygiene Rating Scheme gives customers reassurance that food businesses are legal and have high standards of food hygiene. The scoring is divided into 3 parts: 1. Food Safety and Hygiene, 2. Structural and Cleaning Standards, and 3. Confidence in Management. Here are my 9 top tips for getting a 5* rating at your next food hygiene inspection. 1️⃣ Check all food is within date, particularly chilled foods. Any prepared foods should have a maximum shelf-life of 3 days including the day of preparation. 2️⃣ Store and handle allergens safely particularly when making allergen free meals 3️⃣ Regularly check temperatures of fridges, freezers and cooked food and keep all your monitoring records up to date. 4️⃣ Do ongoing maintenance checks and do preventative maintenance including replacing or repairing flooring, broken tiles, flaking paint, equipment when required. 5️⃣ Use a cleaning schedule with daily, weekly, monthly and monthly/annual cleaning tasks and make staff accountable by having sign off for staff and supervisors/managers 6️⃣ Deep clean the kitchen regularly to prevent build up of dirt 7️⃣ Keep an up-to-date food safety management system based on HACCP principles that is relevant to your business activities on the premises at all times. 8️⃣ Audit your business regularly both inhouse and by a 3rd party to identify issues and problems 9️⃣ Train and supervise your staff in food safety and allergen awareness Contact us at [email protected] or book a virtual call https://buff.ly/3vElefm to make sure you ace your next food hygiene inspection. #FHRS #foodsafety #foodbusiness #foodbusinessowner

**Beyond Trends: Food Safety and Hygiene, a Timeless Necessity** Of all the constants in human evolution, perhaps none matters more than what we put into our bodies. Food, with its endless variety and delicious flavors, will always spark conversation and intrigue. But alongside our love for food, we must consider its safety and hygiene, particularly the hands that prepare it. In the article "Food Safety in the 21st Century," written in 1999, the author highlights the crucial, yet often overlooked, importance of food safety. While some may consider this outdated, the article's message remains relevant today, especially in the context of new and emerging foodborne threats. As recently as 2004, the Salmonella Enteritidis outbreak in Singapore was traced back to contaminated imported eggs. While food import controls play a vital role, Salmonella can also be spread through cross-contamination during food preparation, involving contact between raw meat, poultry, or eggs and other foods. Moving closer to the present, Hepatitis E infections have also seen an increase. The Singapore Food Agency (SFA) has linked this to the consumption of raw or undercooked pork, pig liver, and venison. Similarly, Sengkang General Hospital further underscores the importance of food safety. Dr. Chan Kwai Peng, Senior Consultant in the Department of Microbiology at SGH, emphasizes that "the safest way of consuming food, including pork, is to cook it thoroughly." Fortunately for Singaporeans, the SFA has implemented a mandatory food safety course for all food establishment operators. While some may view this as an unnecessary expense, the course provides much more than a certificate. It's an ongoing lesson in staying relevant and ensuring the safety of customers in our ever-changing times.
