Specifically, each additional 5 grams per day of allium vegetables, which includes onions, was associated with an 18% decrease in ASVD mortality risk. This highlights onions as a beneficial component to a heart-healthy diet.⁠ ⁠ Why may this be?⁠ ⁠ ⭐️ Organosulfur compounds in allium vegetables, like onions, may help protect the heart in several ways. They may help reduce oxidative stress, lower inflammation in blood vessels, prevent blood clotting, and boost nitric oxide levels which protects arterial health. ⁠ ⁠ ⭐️ Expert tip: Quercetin and allicin, two bioactive cardioprotective compounds found in onions, are retained in the raw form and are easily destroyed with heat. A 56 year old physically active and fit gentleman came to see me because his coronary calcium score was high, putting him at very high risk for a cardiovascular event. He wanted to be as proactive as possible to reduce his risk of future cardiovascular issues. His waist circumference and weight were within normal limits, and his lab results were generally normal. However, given his elevated risk, there was room for improvement in his levels. He was uncertain about what to eat and had removed many foods from his diet, which left him feeling hungry and fatigued throughout the day. He enrolled in my VIP intensive program where we collaborated closely to incorporate therapeutic foods he was missing to help reduce inflammation, combat oxidative stress induced by high levels of physical activity, and improve his blood vessel lining and health. ⭐️ These are all goals centered around helping him prevent progression of atherosclerosis and stabilize current plaque formation given his high calcium score. 
⭐️ In just 2 weeks he felt more confident and satisfied with his food choices. His blood pressure also significantly improved from an average of 125/85mmHg to average of 112/72mmHg with an optimal pulse pressure. ⭐️ After 6 months, all of his blood parameters improved: his LDL cholesterol decreased by 46 points (113mg/dL -> 67mg/dL), his apoB (plaque forming cholesterol) decreased by 19 points (92mg/dL —> 73mg/dL) and his inflammatory marker decreased by 1.2 points (hsCRP from 2.3 ->  1.1mg/dL). ⭐️ Most importantly after 4 months, he was nutrient sufficient, feeling satisfied with his meals, sustained high energy levels throughout the day, and felt like he could do this for the rest of his life. He mentioned that both the 1 on 1 support and group support has taught him about science based nutrition in a different level he thought was possible and he is beyond grateful for this journey.
