One of the most striking findings is that coffee drinkers are less prone to developing Type 2 diabetes. Many large studies have found that people who drink three to four cups of coffee daily have about a 25 percent lower risk of the disease compared with people who drink little or no coffee. All carbs affect blood sugar levels. Carbs that break down slowly during digestion with a gradual increase in blood glucose levels have a low GI, while carbs that break down quickly with a rapid rise in blood glucose levels have a high GI. Food composition, preparation, and fat content all affect glycemic index. Glycemic index is one useful tool in meal planning, but it is also important to consider portion size, nutritional value, glucose response and individual health goals. Potato chips have a low GI of 54 but would not be considered a healthy choice. A better choice would be a baked potato with a high glycemic index of 85. Remember that diabetes management is very individual and self- monitoring blood glucose levels is the best way to evaluate a food. It has been an amazing journey for me to become a CDE since 2011. I have learned so many valuable lessons from my mentors and patients. Yes, lessons from my patients too, like courage, determination, and patience. If I truly listen and allow my patients to also be my teachers, I realize that although I began with knowledge, I ended up with wisdom. Have you checked your HbA1C lately?
