In order to maintain a successful restaurant, it is crucial to establish and enforce rules for employees. These rules ensure that the necessary standards and regulations for safety are met in the food service industry. One important aspect of these rules is the appearance and hygiene of employees. Hair should be properly secured, whether through hair nets or ponytails, to prevent it from coming into contact with food. Additionally, facial hair should be well-groomed for both appearance and hygiene purposes. Uniforms should be clean, free of stains and tears, and of appropriate length. Shoes should be coordinated and have good grip on the soles. Regular handwashing with soap and warm water is essential, and employees should also use deodorant and avoid overpowering perfumes or colognes. Another aspect of the rules pertains to manners and communication skills. Employees should promptly greet and attend to customers throughout their dining experience, from seating to ordering to paying. It is important to listen attentively without interrupting and to maintain direct eye contact to show respect and attentiveness. This courteous demeanor should extend to all customers and colleagues alike. Lastly, employees must be prepared to work long, demanding shifts in a hot environment.

I’m flexible, so I palletise cheese, help in different areas around production such as debox, packing, stacking and I cover breaks and cleaning. Being in a flexible role means I can help any team when needed so we can be more responsive to customers. 📆 How long have you worked at Bridge Cheese? I have worked at Bridge Cheese for one year and four months. 🤩 What excites you most about your job? The co-operation and harmony among my working colleagues means we all get along really well, so that makes work exciting and enjoyable. 🦸 What is your superpower at work? My superpower at work is my wrapping skills! This makes sure the pallets can be safely transported to our customers. ❤️ What do you like the most about working for Bridge Cheese? I like that Bridge Cheese has a very conducive working atmosphere, which helps us to work to our best abilities. 😋 Favourite cheese and why? My favourite cheese is mature Cheddar because of the taste.

I would spend hours out on the production floor, even though it was 40 degrees F (food processing plant). At the time I was in sales support but I came from quality auditing so I would help the QA manager with incoming inspections and product quality on the floor when they were short staffed. I would talk to the operators and they would ask me questions and I was curious on what they were doing as well. After days and weeks of constantly being out there they would notice when I wasn’t and ask if I was busy at my “desk job” or out for the day. Some even expressed they were proud of me for having a desk job so young (mid 20s at the time)! Being out there gave me a unique perspective during our mandatory 9am production meetings. In this meeting, there was 1-2 representatives from each department and we would stand in a circle in the cold production office:  Production Manager Quality Manager Operations Manager Shipping Manager Sales We would literally go around the room to update for the day projections, any possible issues that could arise, what happened on the night shift etc… When it was my turn I would say my “sales” part then go on to production and quality concerns that came from the operators that “made sense”! And there was no way for anyone to catch it because there is a lot going on and some were small details that you would only get by doing it all day every day. Back to my original statement and image below…the operators did not have representation at this meeting! Well not “officially”… Don’t get me wrong, these operators mostly spoke Spanish and were from a 3rd party company and some were a little sketchy but did their job. BUT I knew who they were because I was close to other workers who were genuinely good people with families and kids (and also made DELICIOUS food)! THEY are the ones I was getting valuable feedback from, it is up to the people in that meeting to get to know the employees so you CAN make a difference. Back then, I didn’t have much say as a new “salesperson” for safety improvements to make the workers a little more comfortable out there on the freezing floor standing all day. Now, I am still in sales… BUT I get to help more than just one plant. I help choose the more effective air blow guns that operators use every day. My goal to improve their working environment AND provide a solution that works for them so they can meet all of their goals! Many (not all, I am realistic) were the happiest people I have met, wanted to do a great job, and care for their family. #manufacturing #safety #sales

Mastering the technique of managing non-conforming products on the shop floor is crucial to reducing trade returns/recalls. There will be non-conforming products (products that do not meet set specifications in terms of food safety or quality) from time to time. That is why quality control is done even at the last stage of the manufacturing process, that is, at the finished goods evacuation point. As a newbie QAQC how can you ensure that defective products do not get to the market? 👍🏼First, Know Your Product (KYP). If you do not know your product thoroughly, how will you identify when there is a deviation from acceptable standard? Take a few samples of the product and observe. From the raw materials, to the intermediate product (blend), to the finished products. Observe the packaging material and how sealing is achieved horizontally and vertically. 👍🏼 Carry out routine checks. It's in the process of carrying out routine checks that nonconformities are identified. If you don't check, you will assume that all is going well. Assumption is an enemy to product quality. 👍🏼 Segregation. Once non-conforming products are identified, quickly isolate them from good quality products to prevent mixup using visual tags, stickers or tapes. Identify the machine responsible for the defective products and alert the operator for immediate action. Carry out traceability to identify any defective products that may have escaped and make sure to recover all back to the isolation point on the shop floor. 👍🏼 Document the defect in detail. Include information such as the nature of the defect, batch number, date, time and any relevant info including pictures. 👍🏼 Conduct Root Cause Analysis (RCA) to understand why the non-conformity occurred. If it is a machine related issue, engage the operator/technician to provide more insight and how it can be addressed going forward. Use tools like the 5 Whys or Fishbone Diagram. 👍🏼Non-Conforming Product Management. Follow the SOP for managing non-conforming product for appropriate action on whether to recover, rework, use for other purposes, or dispose. Seek clarification when in doubt. 👍🏼Corrective and Preventive Actions (CAPA). Ensure that the current non-conformity is resolved before operations continue. For example, if a non-conformity is caused by a machine, ensure that engineering intervention is done and assess product quality before the machine is back on stream. Also, develop and implement preventive measures to avoid recurrence of same issue. 👍🏼 Verify that your CAPA is being implemented and monitor the process closely and document the action(s) taken and results. 👍🏼 Training and Communication. Quality control is not a one-man job. Do well to communicate the issues detected with other team members and train the operators on how to carry out self checks on the products as well.
