Unsettling fact: Most grass-fed beef organ meats go to landfills to rot. Why? Several reasons: #1- White folks like me don't know that those organ meats are the most nutrient-dense parts of the animal, so we don't buy it #2 - Black and brown folks who do know that organ meats are super valuable often don't have access to grass-fed beef for lots of reasons #3 - It's hard for grass-fed meat processors to get the equipment and labor required to prepare these organ meats for sale So what are we going to do about it? Last week we visited our customer birdbros in the UK as part of a trip together with our friends from Experience Data and Experience Fruit Quality. They use their deep knowledge and experience of transforming data into information and better business decisions, to help improving the process of riping, grading, packing and shipping avocados and other stone fruits. We looked at the similarities and differences in grading and packing eggs compared with grading and packing avocados and had great discussions about that with operations and management of our respective customers. Which pallets of ungraded eggs should we run now to fulfill our orders of today in the most effective way? Which pallets of avocados should we run now to make sure we deliver our orders in time whilst making sure the consumer is getting the avocados when they are ready to eat? These – and many other - challenges have a lot in common and we all gained insights which will lead to better solutions and innovation, sooner or later. Another aspect in which our customers are equal is the passion and absolute will to deliver the best product and the desire to constantly keep improving the process. The lethal range for bovine livestock is 95° and 80 percent humidity for 6 hours… the average high for #Tulsa, OK from June 2023 through August 2023 was 92° F, and the Oklahoma Mesonet projects up to a 10° F average temperature increase by 2075 (and most likely much sooner). And in 2023 Tulsa reached a high temp of 105° F (123° Heat Index) on 3 separate occasions, with 17 days above 100° F. As the heat averages rise, and producer insurance rates increase as well as costs/scarcity for livestock feed, it is realistic to assume that there will come a day within this current generation where there will be no beef produced in Oklahoma; within 3 generations - maybe less - there will be children born who will never eat a hamburger. This new reality of #Oklahoma and the whole of the South and Southwest will someday see a climate unable to support commercial bovine production. Imagine that. No beef. No horses. No cowboys… The humble burger that may or may not have been invented here in Tulsa, Oklahoma will no longer be physically or commercially viable for its residents to consume.
