With the harvest year complete and the calendar year coming to a close, we asked the President of our Minot Milling division to provide a durum wheat update and outlook for our blog. Durum wheat is used primarily for pasta manufacturing. When milled, durum becomes semolina and gives pasta its beautiful golden color! Cereals & QC Time travel Episode 83 – 2016 Poster (GB) Milling value and behavior during milling of wheat samples around the world (ALSO AVAILABLE IN FRENCH) Milling Quality is associated with the extraction rate, which is the maximum amount of flour of a certain quality obtained. It is important because a low yield has significant economic consequences. In the milling industry, it is also useful for the precise behavior of wheat during milling. Depending on the characteristics of the grain, most flour may be made during the breaking or reduction stage. Therefore, the industrial mill diagram should be perfectly suited to the type of grain used, and vice versa. This study aims to create a map of the world’s wheat quality. 150 wheat samples, coming from 14 countries distributed on the 5 continents (Table 1), are tempered (16 percent / 24h) and then milled on a laboratory mill (LabMill, CHOPIN Technologies). This study confirms the strong variability of wheat quality. Geographical origin provides the first indication of the milling performances of one wheat sample. Still, specific tools (like laboratory mills) are essential to obtain a fine and objective valuation of milling properties. Very interesting / worrying needs to be understood by the whole chain as could have major impact.
After the second wettest August to February since 1837 severely limited planting of wheat in the UK, prospects for the breadmaking wheat harvest are looking challenging. For millers, the adverse outlook is being exacerbated by the decline in popularity of high quality Group 1 breadmaking wheat varieties, which make up the backbone of UK flour milling demand. An estimate of breadmaking wheat production for 2024 indicates the upcoming harvest could be the smallest in over ten years and down almost 40% on 2023. Post 8: Rice Technology; Chapter 7, MILLED RAW AND PARBOILED RICE VALUE ADDITION TECHNIQUES Rice is as versatile as Corn or Wheat. Our daily life we encounter value added products from Corn and Wheat but still the Rice value addition of Raw or Parboiled milled rice are unexplored to larger available opportunities. Miller can sweat his milling infra to add few additional technologies stretching his margins. Though some sort of complexity as compared to milling might hinder in the beginning but eventually the lure of profits shall be enough for a bit more of dexterity. This chapter deals with the possibilities of value additions with minimum efforts leading to more profits. Agreed product value addition can be lab tested to pilot scale testing for market survey and eventually for commercial scale processing design. Transparent P&L shall be set and proved at commercial scale so that no risk is involved. Ready to cook to ready to eat is a demand of the day. Are millers ready to fill this gap? Worth trying this step of value addition with no frills and risks. Have a enjoyable weekend and shall post further on Monday. God bless
