If you like piña coladas (Sorry, couldn’t help myself!) you can whip up a non-alcoholic version of the famous drink! We’ve thrown in a few secret ingredients that bump up the flavor profile of this drink and keep it interesting. Make sure to hold onto the peels and leaves of your pineapple to use as garnish as well! You’ll need these on hand to make this delicious drink – Ingredients: ¼ cup fresh pineapple chunks (You can use frozen pineapple chunks if you do not have access to fresh pineapple. Reduce the amount of ice used if using frozen pineapple) 1 cup pineapple juice ¼ cup cream of coconut 1 cup crushed ice 2 tablespoons lime juice 1 teaspoon rum extract pineapple wedges (for garnish) maraschino cherries (for garnish) pineapple leaves (for garnish) Directions: Place your hurricane glasses in the fridge or freezer so they are chilled when your drinks are ready! Cut the pineapple top off. Reserve some of the smaller leaves for garnish. Cut the skin off the pineapple. You can also rinse this and cut it into strips to use as garnish. Core your pineapple and cut the top 1/4 off of it. Cut enough pineapple wedges to garnish your glasses with it. Make sure to cut a slit in the bottom if the wedge so it can sit on the rim of the glass. Do the same with your cherries. Cut the remaining pineapple into 1-inch chunks. Shake the pineapple juice and cream of coconut well before pouring into the blender. Add the fresh pineapple chunks, crushed ice, rum extract, and lime juice to the blender. Pulse until smooth. Pour into chilled glasses and garnish with fruit, leaves, pineapple skin, and whatever other tropical accouterments you desire. Here's an awesome mocktail you can enjoy any night of the week - Berry Basil Lemonade Ingredients: 1 cup sparkling water 1/2 cup fresh squeezed lemon juice (about 2 lemons) 1/4 cup fresh or frozen mixed berries (blueberries, raspberries, strawberries) 1 tablespoon fresh basil leaves, chopped 1-2 teaspoons honey or agave syrup (optional, for added sweetness) Ice cubes Lemon slices and basil leaves for garnish Instructions: Prep the Ingredients: Squeeze the fresh lemon juice into a glass. Add Berries and Basil: Add the mixed berries and chopped basil leaves to the lemon juice. Using a spoon, gently muddle the berries and basil to release their flavors. Sweeten (Optional): Add honey or agave syrup if you prefer a sweeter drink. Stir to combine. Combine: Fill the glass with ice cubes and pour in the sparkling water. This drink is for all the women in your life who have supported, cared for, laughed, cried, and loved with you. 💖 Grapefruit French 75 🥂 💖 Grapefruit Simple Syrup Ingredients 💖 2 cups grapefruit juice, freshly squeezed (about 3 grapefruits) 1 cup sugar 💖 Grapefruit French 75 Ingredients 💖 2 ounces gin 1 ounce concentrated grapefruit simple syrup 1 ounce fresh grapefruit juice 1 cup (or two handfuls) ice 3 to 4 ounces sparkling wine to top 1 grapefruit peel, for aroma and garnish 💖 Grapefruit Simple Syrup Instructions 💖 Pour the grapefruit juice into a small saucepan. Over medium-high heat, bring to a simmer. Reduce heat to low and cook until reduced to 1 cup. Once the grapefruit juice has been reduced, add the sugar. Stir and cook until the sugar has completely dissolved. Take off the heat and allow to cool completely. Store in a mason jar or other airtight container in the fridge. This makes about 1 to 1 ¼ cups, enough for about 10 cocktails. 💖 Grapefruit French 75 Instructions 💖 Add two handfuls of ice into a cocktail shaker. Add the gin, grapefruit simple syrup, and grapefruit juice. Shake vigorously until the shaker is sweating and cold to the touch. Pour through a cocktail strainer over an 8-ounce coupe glass. Top with the sparkling wine of your choice (about 3 to 4 ounces). Twist the grapefruit peel over the surface of the drink, moving around the glass to make sure the aroma settles over the entire surface for maximum advantage. Enjoy while cold. It's Blue Monday, but at Fullers, we're turning those blues into savoury hues with Chef Paul's comforting Butternut Squash Soup! Ingredients: 1tbsp Olive or Sunflower Oil 120g Frozen Diced Onion 12g Frozen Chopped Ginger 15g Frozen Chopped Garlic 12g Frozen Chopped Chilli 1 x freshly chopped lemongrass or 2tsps of lemongrass paste 800g Frozen Diced Butternut Squash 400ml Can Coconut Milk 500ml Vegetable or Chicken Stock Frozen Chopped Coriander to taste Salt & Pepper Dried Chilli Flakes (optional) Method: 1. Heat the oil in a pan, then gently cook the white onion until translucent. 2. Add the garlic, chilli, ginger and lemongrass to the pan, and continue to soften for a further 3 minutes on low heat. 3. Add the frozen butternut squash to the pan and start to soften, stirring regularly for about 5 minutes. 4. Pour in the stock and coconut milk and simmer until the veg is tender. 5. Once the butternut squash is tender, remove the pan from heat and blitz with a blender or liquidiser until smooth. 6. Stir in the coriander and season to taste. 7. Serve with an optional garnish of cream and a sprinkle of chilli flakes for added flavour.
