What’s been the leading independent restaurant brand of the last decade? I think it might well be Dishoom. Having had the chance to hear their MD, Brian Trollip, talk at our Arena the hospitality networking association Christmas event, there was plenty of insight into why. Here are 15,000,210 of the reasons: 🚀🚫 Not chasing growth: Brian talked about how he and the team are focused on knocking what they have out of the park, rather than seeking the heavy site growth we might have seen elsewhere before. 10 sites since 2010 reinforces that view. ❤️ Business as a force for good. The pride in this flowed out of Brian as he spoke. Since 2015, there’s been a ‘meal for a meal’ policy. Every meal bought provides a meal for a child who would otherwise go hungry. So far, they’ve donated 15 million meals. This one is absolutely incredible in my book. 💁♀️ A deep focus on people: Hospitality has had a hell of a few years, with a lack of team at the core (this week’s visa announcement will be another challenge). Brian talked about the investments they’ve made into the team, and the rewards they offer. If you’ve been in the business more than 5 years, Dishoom take you on a ‘Bombay Bootcamp’ touring the city and scene that inspired the business. This year, they’re taking 200+ team members. I’d say that’s a solid retention metric. Perhaps the most interesting thing for me in the conversation was that Peter Martin (the panel host) and Brian didn’t really get into the food. If you’ve ever been (and joined the queue!), you’ll know what they serve is exceptional, but from all that Brian and fellow operator panellists Clive and Sean talked about, hospitality is more than what goes over the pass. The Hospitality sector is seeing more closures than ever before. Nearly 23,000 licensed businesses across the sector have closed in the last three years (Hospitality Market Monitor). 6,000 closed in 2023 alone, and thousands more are teetering on the brink. In Manchester, the hospitality scene is calling for a reduction in VAT to 10% from the current crippling rate of 20%, more than double the average seen across Europe. This rate reduction would ease the pressure we're all facing from rocketing energy bills and the cost of raw materials. Your favourite pub or restaurant really could close tomorrow. What is additionally concerning is that it isn't just about the sad loss of jobs with every closure. A pub is at the heart of our community. It's vital place of congregation, bringing people together. As Greg Pilley, founder and MD of Stroud Brewery says, "It offers support, solace, camaraderie and stress-busting punctuations amid the (increasing) pressures of daily life." For some it is the only respite from loneliness. Something has to change otherwise society is going to be all the poorer, in more ways than one.

Thanks, Rohini Dey, Ph.D. for starting this much need conversation. The economics of the restaurant industry are indeed challenging. Is not like the old days before the pandemic. We are the vibrant tapestry woven with challenges and triumphs. Yet, we also are the flavors of the kitchen the laughter of diners, and the soul of our communities. There is an urgent pressing concern. The economics that underpins our establishments. Since the pandemic, restaurant owners have danced on a tightrope, balancing fair pricing, decent benefits, and living wages. However, there's a silent predator lurking in our kitchens. Picture this: vibrant neighborhoods, brimming with culinary diversity, are suddenly stifled as small restaurants, the heartbeats of these communities, vanish, leaving behind only fast food establishments. Who's to blame? The so-called developers for me "The Flippers." They swoop into our neighborhoods, get the benefits of our tax incentives erect buildings, and swiftly depart, leaving behind a ghost town of unaffordable empty spaces. According to their numbers, they need to rent only 75% of the project to make their money back. But it doesn't end there. Landlords, emboldened by soaring rents, we build up kitchens and upgrade their buildings and now demand more than just a slice of our earnings. They want a pound of flesh, with no guarantee of density in their projects, or sustainability for our ventures. I refuse to be a mere pawn in this project's profit-driven game. We are the artisans, the creators, the soul of the dining experience. It takes an army of dedicated, well-compensated staff to craft each meal with love and precision. The current model is unsustainable. With razor-thin profit margins, hovering between 3–5% before taxes, we're teetering on the brink. The culprit? Skyrocketing rents that spiral out of control, devouring our hard-earned revenues. So, what's the solution? It's simple – partnership. If developers claim to shape communities, let them join forces with restaurant owners. Let's reimagine our neighborhoods as vibrant hubs of collaboration, where eateries thrive alongside residential and commercial spaces. We have the power to shape the future of dining. Let’s champion a vision that strives for an industry that values creativity, inclusivity, sustainability, and above all fairness. #ReinventingRestaurants

🍻 Pub closures seem to dominate the headlines, painting a picture that the days of the boozer are declining. It would be easy to believe that that the only venues that are achieving success are those who are more premium and food-focussed, such as those featured in the recent Top 50 gastropubs.🍽️🥂 The lack of focus given to community wet-led pubs is something that I’ve found fascinating for many years. Admittedly, these venues may not be the most instagrammable, but from a drink’s perspective at least, they continue to be where a large proportion of the volume and value sits, and they very much represent the beating heart of the on trade. It was encouraging therefore to read the comments in today’s Propel Friday News Briefing from William Rice, talking about how “…there is so much investment coming into the sector and that there is so much to be excited about that well invested and well-run pubs offering a quality experience is where people want to spend their money.” Craft Union Pub Company are a great example of a business which is investing in the sector, seeing their philosophy of putting brilliant pubs back at the heart of local communities well and truly paying dividends. Data from Hospitality Data Insights (HDI) shows that they’re the second biggest winner out of a cohort of 55 different Pubs & Bars chains over the last 5 years, with their overall share of wallet 2.7 times higher in the 12 weeks ending 6/2/24 than it was back in 2019. Their estate has grown significantly over this time, but a key part of their success is undoubtedly the fact that they have a relevant consumer proposition which is executed with brilliance – well-invested community pubs at the heart of their local communities. 🏆📈 Interested to know who took the number 1 spot in terms of growth over the last five years? Probably no surprise, but the brand that has seen the greatest growth over this period is Lounge from Loungers plc. Picture shows my local Craft Union, which funnily enough has recently seen Centivo Lounge open a couple of doors up from it!
