🍪 Let's break this goodness down 🍪 "What's changed?" All-Purpose Flour to Oat Flour: 🫙 If you've never tried baked goods with oat flour, you're in for a treat! Oat flour adds a wonderful nutty, caramel flavor, reminiscent of the brown butter taste from my 2019 recipe. Organic Brown Sugar to Organic Cane Sugar: 🍬 I used to think all white sugar was the same, but I was wrong! Organic cane sugar has a lower glycemic index (30-40) compared to granulated sugar (65), which is important for managing blood sugar levels with PCOS. This blew my mind! Remember, everything in moderation, but it's good to know the facts. Vegan Butter to Coconut Oil: 🥥 I wanted to move away from palm oil-based vegan butter, even if ethically sourced. Refined coconut oil is great because it has a neutral taste, so you won't notice it in the cookies. Egg Replacer to Almond Butter: 🥚 I wanted something more natural, so I switched from peanut butter (too overpowering) to almond butter.
