Potatoes are loaded with nutritional benefits, are delicious, versatile, and budget-friendly - what’s not to love? 💞🔥🥔 This is my plant-based take on a traditional favorite: Cheesy Scalloped Potatoes with Mother Raw Ranch! This dish comes together with only a few simple ingredients, including: Skinned and Sliced Potatoes (2-4 Potatoes) Vegan Butter or Vegetable Broth (⅓ Cup) Gluten-Free Flour (3 Tbs) Mother Raw Ranch Dressing (3 Cups) Vegan Mozzarella Cheese (2 Cups) Vegan Feta Cheese (1 Cup) Chopped Green Onions or Chives (⅓ Cup) Salt and Pepper to Taste 1️⃣ Skin potatoes and slice them to create thin circles. 2️⃣ In a pot, melt vegan butter and then slowly mix in gluten-free flour. Pour in a little bit of vegetable broth until a thick roux forms. Then add Mother Raw Ranch Dressing to create a creamy cheese sauce. 3️⃣ In a vegan-buttered glass pan, add a layer of sliced potatoes by placing them side by side. Next, pour in a drizzle of ranch cheese sauce and spread it from corner to corner, edge to edge. 4️⃣ Sprinkle over a layer of mixed vegan mozzarella, feta cheese, green onions, and repeat the potato, sauce, cheese, onion layering until you run out of sauce. 5️⃣ Garnish the top with cheese and chopped green onion. 6️⃣ Cover the glass pan with aluminum foil and bake the potatoes at 400°F for 50-65 minutes or until the potatoes are soft enough to easily pierce with a fork. 7️⃣ Top the scalloped potatoes with chopped green chives. 8️⃣ Sing your song, do your dance, speak your truth, a nd enjoy the vegan scalloped potatoes! 🎶🎤

This week's recipe is super easy to make and I really enjoyed making it. We are not big #quiche fans in our home. And, with two family members having gluten intolerances, we really can't have it. But, when I found a product by Gillian's, I had to try it! I was so excited we could have quiche again! YAY! This recipe uses Gillian's Wheat Free & Gluten Free Quiche & Pie Crust. I purchased it from Whole Foods. This gluten free #Mexican ham and cheese quiche recipe shows how I made it for my family. Spoiler: it was so delicious! These are smaller pie crusts than if you made the quiche from scratch so this recipe will make TWO of their quiches. That's OK; the more, the better. We used it for lunch the next day as well as dinner. Why did I call it "Mexican"? The pepper jack cheese and canned chilis added a distinct flavor of Mexican cuisine and spice to the quiche. Ingredients: -1 cup of veggies boiled (2 potatoes and 1 carrot) -2 red or yellow bell peppers, roasted and peeled -1/4 cup nutritional yeast -2 T lemon juice -1/2 t garlic powder -1/2 t onion powder -1/2 t paprika -Salt & pepper to taste -Water/almond milk as needed Instructions: 1. In a high-speed blender, combine boiled bell peppers, nutritional yeast, lemon juice, garlic powder, onion powder, and paprika. 2. Blend on high until smooth and creamy, adding water/milk as needed to reach your desired consistency. 3. Season with salt and pepper to taste. 4.
