Easy, easy recipes for your 4th of July Watermelon, feta, and mint salad - Refreshing and light Jane Yi shares one of her favorite summer recipes. You need: · 6 cups cubed watermelon, · 1/2 red onion, chopped (optional) · 1/2 cup feta cheese · 1/3 cup fresh mint leaves, chopped Combine ingredients in a cooled bowl. Dress with either a balsamic glaze or a or a mix of equal parts lime juice, honey, and olive oil. For dessert: Heavenly angel food cake Not a baker? Not a problem. Lynn shares this scrumptious dessert. · 1 angel food cake – store bought or made from a mix. · 1 c. heavy whipping cream · 2-4 tbsp confectioners’ sugar depending on how sweet you want · 1-2 tsp pure vanilla · Strawberries (sliced) and blueberries Before you get started, make sure to chill the bowl and beaters in the freezer for 5 to 10 minutes. This increases volume. Put the heavy whipping cream, powdered sugar, and vanilla extract into your chilled mixing bowl. Begin mixing on low speed. (Be careful: Start on high and you may have a new whipped cream ceiling.) Once the mixture starts to increase a little in volume, turn your mixer up to medium-high speed and continue mixing until the mixture reaches stiff peaks. In other words, when you lift the beaters out of the bowl the whipped cream stands up and doesn’t fold over. Cover cake with whipped cream, top with berries and enjoy. It's Impossible to Eat Just One Slice of This Cherry Cheesecake Want to surprise the family? You can make a beautiful and delicious dessert like this cherry cheesecake. Just follow Martha Stewart's instructions. Ingredients: Cooking spray 8 graham crackers (3 by 5 inches) 1 tablespoon vegetable oil 3 cups of cottage cheese 220 g of cream cheese bars ¾ cup plus 2 tablespoons sugar ½ cup of sour cream 4 large eggs 2 tablespoons all-purpose flour 1 teaspoon pure vanilla extract ½ teaspoon of salt 680 g frozen cherries Preparation method: 1- Turn on the oven at 160ºC and place one of the racks in the lower third. Spread the spray in a springform pan. Line the side with a long strip of parchment paper. 2- Then, in a food processor, grind the biscuits until they become fine crumbs. Add the oil and mix everything. Transfer the crumbs to the prepared pan and press them into the bottom creating a crust. Place the pan on a rimmed tray. Bake for 15 minutes. 3- Meanwhile, clean the bowl and processor blade. Mix the two types of cheese for four to five minutes. Add 3/4 cup sugar, sour cream, eggs, flour, vanilla and salt. Mix just until the filling is homogeneous. 4- Pour the filling over the crust (the crust can be hot or warm). Bake until the center is slightly firm for about an hour. Turn off the oven. Let the cake cool in the oven for one hour. Transfer to a wire rack and let cool to room temperature. It only takes about two hours. Place in the fridge until firm. 5- Prepare the topping and, in a frying pan, mix the cherries and the remaining two tablespoons of sugar. Boil until the liquid is thick, 10 to 15 minutes. Let cool and refrigerate for at least two hours. 6- To serve, unmold the cheesecake (remove and discard the paper). Happy Wednesday! We are on fall break, so this looks like a fun recipe to try this week! 🍁🍂🍁 Baked Apple Cider Donuts 🍩 Ingredients ~ 1/3 cup apple cider 1 tsp white vinegar or apple cider vinegar 1/2 tsp pure vanilla extract 3 tbsp oil or almond butter, or applesauce or pumpkin puree 1/4 cup pure maple syrup or honey 1 cup flour {gluten free works!} 1 tsp baking powder 1/4 tsp salt 1/2 tsp cinnamon 1/4 tsp ground nutmeg Instructions ~ Whisk all liquid ingredients together. Grease a donut pan or mini muffin pan. Preheat the oven to 350 F. Stir remaining ingredients into the wet ingredients to form a donut batter. Bake for eight minutes or until the apple cider donuts have risen and are cooked through. Let cool before removing from the pan. If desired, top with cinnamon sugar coating or apple cider glaze. No Bake Chocolate Fudge Slice Yield: 16 Ingredients 125 grams Butter 1/3 Cup White Sugar 1 Egg 1 Tablespoon Cocoa Powder 1 Packet Malt or Super Wine Biscuits, crushed Optional Ingredients: 1 Tablespoon Coconut (finely desiccated) 1 Cup Sultanas Icing: 150g Melted Chocolate or/ Basic Chocolate Icing 1 1/2 Cups Icing Sugar 1 Tablespoon Cocoa Powder 1/2 teaspoon Vanilla 1 teaspoon Butter, melted 1-3 Tablespoons Water Optional topping: Sliced Cranberries & Chopped Pistachios or Cashews Steps Prepare a slice tin with baking paper and set aside In a medium sauce pan add the butter and sugar and begin to melt, do not boil or cook. Once ingredients melted stir in a beaten egg and remove from the heat. Add the cocoa, crushed biscuits and coconut and sultanas if using and stir in well. Press the mixture into the slice tin and set in the fridge until hard, then ice. Icing If using melted chocolate break up the chocolate and melt in 20 second bursts in the microwave until just melted then pour over slice and sprinkle with topping if using If using Basic Chocolate Icing: In a medium bowl combine icing sugar, cocoa, vanilla and melted butter Stir in water 1 teaspoon at a time until you have the desired pourable consistency, spread over slice and sprinkle with topping if using. 1-2-3-4 Cake Recipe Simply Delicious 👨🍳 One of the very first recipes I mastered INGREDIENTS *1 cup butter, at room temperature *2 cups sugar *3 cups sifted self-rising flour *4 eggs *1 cup milk *1 teaspoon pure vanilla extract DIRECTIONS 1. Preheat oven to 350 degrees F. 2. Grease and flour 3 (9-inch) cake pans,. 3. Using an electric mixer, cream butter until fluffy. 4. Add sugar and continue to cream well for 6 to 8 minutes. 5. Add eggs, 1 at a time, beating well after each addition. 6. Add flour and milk alternately to creamed mixture, beginning and ending with flour. 7. Add vanilla and continue to beat until just mixed. 8. Divide batter equally among prepared pans. 9. Level batter in each pan by holding pan 3 or 4 inches above counter, then dropping it flat onto counter. 10. Do this several times to release air bubbles and assure you of a more level cake. 11. Bake for 25 to 30 minutes or until done. 12. Cool in pans 5 to 10 minutes. 13. Invert cakes onto cooling racks. 14. Cool completely and spread cake layers with your favorite frosting to make a 3-layer cake.

Summer's just a little more sweet when you take a pit stop to make a delicious local stone-fruit clafoutis! 🍑👌 𝑰𝒏𝒈𝒓𝒆𝒅𝒊𝒆𝒏𝒕𝒔 6 tablespoons unsalted butter, melted 3 large eggs 1 cup milk (whole or 2%) 1/2 teaspoon vanilla 1/2 cup all-purpose flour 1/2 cup sugar 1/2 teaspoon salt 1/4 teaspoon ground cardamom 5 medium plums or apricots or 2 large peaches or nectarines 1/4 cup powdered sugar 𝑹𝒆𝒄𝒊𝒑𝒆 🔥 Preheat the oven to 375 F. Melt the butter and brush a 9-inch-deep pie pan with about ½ tablespoon of the butter. Put the pie pan on a sheet pan to catch any spillover liquid. 🥣 In a blender, add the melted butter, eggs, milk and vanilla and blend for five seconds on high. 🧂 Combine the flour, sugar, salt and cardamom and reserve. 🍑 Halve and pit the stone fruit. Cut plums or apricots in quarters; cut nectarines or peaches in eighths. Place the slices in the buttered pan. 🥄 Pour the reserved flour mixture into the blender with the egg mixture and blend for 10 seconds on high, until smooth. Pour over the fruit in the pan and put the sheet pan with the filled pie pan on top in the oven. ⏳ Bake for 45 to 50 minutes, until the center of the clafoutis doesn't wiggle when you shake the pan gently. ❤️ Cool on a rack, dust with powdered sugar and serve warm or cold. Keeps, tightly covered in the refrigerator, for up to four days.

Although radishes might be a little more on the mild side of this flavorful group, canning and pickling radishes is a sure delight – and an excellent condiment to use when making sandwiches and salads. Whichever type of radish you choose, this simple canning recipe will have your canning and pickling radishes of all varieties! A complimentary mixture of sweet, heat and pepper make this a fan favorite condiment. Sweet & Spicy Pickled Radishes Canning Recipe Makes approx. 6 half-pint jars Ingredients 2 pounds radishes, tops and roots removed and sliced 1/8” thick 1 ½ cups water 2 teaspoons canning salt 1 ¼ cups white vinegar ¾ cup raw sugar ¼ cup red wine vinegar 2 teaspoons mixed peppercorns 1 tablespoon mustard seeds 1 teaspoon dried red pepper flakes Instructions 1. In a medium saucepan combine water, salt, white vinegar, sugar, red wine vinegar, peppercorns, mustard seeds and red pepper flakes. On medium-high heat, bring to boiling stirring until sugar and salt are dissolved. 2. Pack radishes into hot, sterilized half-pint jars, leaving a ½ inch headspace. Ladle hot vinegar mixture into jars being sure to keep the ½ inch headspace. Evenly distribute the peppercorns, seeds and flakes among each jar. 3. Wipe each jar rim with a wet washcloth dipped in vinegar. Add lids and rings and hand tighten. Process half-pint jars in a boiling water bath for 10 minutes. Be sure not to set your timer until the water is at a full rolling boil. Chipotle sauce is a popular creamy sauce made with spicy, smoky chipotle peppers mixed with mayonnaise and sour cream or crema. Homemade Chipotle Sauce Ingredients •Chipotle Peppers in Adobo Sauce- Use the canned product you normally find in the grocery store. You can also use the product labeled "adobo sauce". If offers the smoky-spicy flavor, made with smoked and dried jalapeno peppers. The dried chipotles are drenched in delicious adobo sauce. •Mexican Crema- You can use sour cream or Greek yogurt, but I prefer the flavor of Mexican crema. •Mayonnaise- Use your favorite brand. •Fresh Cilantro. •Spices- Cayenne powder, garlic powder, cumin, and salt. How To Make Chipotle Sauce - The Recipe Method: First, gather up your ingredients, which include a can of chipotles in adobe (but of course!), along with ½ cup Mexican crema (or sour cream), ¼ cup mayo, chopped cilantro, cayenne powder for flavor and heat, garlic powder, cumin, and a bit of salt and pepper. If you'd like a citrus pop, squeeze in a bit of fresh lime juice. Next, add it all to a food processor and puree until smooth. Done. ✅

First time this summer eating this delicious summer dessert (strawberry shortcake). It's actually one of my favorite desserts and very few restaurants have it as a regular item let alone even as a seasonal one. My first time making this strawberry shortcake with Annie's brand biscuits (no homemade biscuits this time) and I made it healthier by making the homemade fresh strawberry sauce from my "Kick Diabetes Cookbook" (I don't have diabetes, but when I bought it for someone as a gift in the past, I got one for myself, too). The cookbook had a fresh berries puree recipe that you can serve hot or cold on various foods (ice cream, pancakes, or as I tried with strawberry shortcake!) 😊The cookbook has healthy recipes. The strawberry sauce I made has no sugar or sugar substitute in it. I did put on the good whip cream (that's from a can) that's a natural type from Fred Meyer. After eating this one pictured below, I had to cook one more biscuit & have seconds. I mean c'mon one? 🤨😊
