The Best Bakery in Georgia 20 yards from our apartment is the best bakery in Georgia. While that’s not an official designation, anyone who frequents Independent Bakery in Athens will tell you the same. The only baguettes better than theirs are in France. Their sourdough bread is the only bread we eat now. Their pastries are phenomenal. Our balcony is across the street from Independent, so we get to see the comings and goings. On Sunday morning there is always a line out the door to get pastries. On Friday during the school year parents and kids walk to Independent to get a pastry before walking down to Barrow Elementary. They deliver bread everywhere in town. I’m there enough that I know everyone on a first name basis. Their success is not an accident. Kevin, the owner, has assembled a great team. They are skilled at what they do. Some came with skills and others Kevin has developed. When I leave the apartment to workout, usually before 5:30, they’ve already been there an hour getting ready for the day. The front staff get to know their regulars and make you feel at home. Their ingredients make a huge difference. They grind their own flour, and their other ingredients are fresh and aromatic. They are growing because they have built a team that cares – cares about the products they make, the people that buy them, and the priority of fresh bread and pastries. At the end of the day, they take the bread that hasn’t sold (in their shop as well as the other places in town that sell it) and take it to the homeless shelter. As many of you know, we are not open on Sunday. This sometimes can be an issue if you are looking for bread first thing Monday Morning as loaves don't start coming out of our ovens until 8am and some closer to 10am. We sometimes have a couple of loaves left from Saturday. We would never sell these loaves at full price because they are not at the peak of freshness (though our loaves will last about 7 days on the counter and much longer in the freezer). Starting Tomorow, Monday the 7th we will be offering products from Saturday's bake at half off with the purchase of any full priced item. If you just want a 2 day old loaf, that fine too. We will give you $2.00 off that loaf! You will find these loaves across from the register on a wire rack. Through a ton of work and dedication, my wife’s made herself into one helluva baker, and King Arthur Baking Company is her go-to source for not just ingredients, but general knowledge and inside tips, as well. To me, though, the brand is an interesting little study… An employee-owned company that’s been around since 1790 (!!), King Arthur is nestled in a small Vermont town, and specializes in everything home bakers need to be make deliciousness. (Fun fact, they rebranded in March 2020, just as everyone was hunkering down for the pandemic and many who were fortunate enough to be able to stay home were baking to keep from losing their minds.) What I love, though, is that rather than lean into themes like nostalgia, grandma’s kitchen, homespun goodness and the like, King Arthur took a different route. Their visual identity is no-nonsense, free of all filigrees and adornments. In fact, the circular badge and abstracted crown feel like the only organic elements in the system besides a great and broad color palette that allows every product in the line to be clearly identifiable. The overall feel is one of detail, accuracy, and carefully measured, mathematical precision—perfectly reflecting the way good home bakers become great. Bravo. Your career and first pancake theory... I love making pancakes and over the years I've got much better at it. But why is the first one never as good as the others? It tastes pretty much the same but let's face it, never looks great. But what if we saw that first pancake as part of the process of making what's to come? It allows you to 🥞 understand the temperature of the pan 🥞 how much batter to use each time 🥞 when to flip them 🥞 how long to cook them for Just because the first one isn't great, it shouldn't stop you from making more and improving. If you are doing something for the first time in your career it probably won't be your best-ever work ever but how about accepting your 'first pancake' as part of the process? What helps you to get past your 'first pancake'?

50 Years of expertise in the industry...
