We are hosting 5 Chefs in our Top-Chef competition, 6 food Trucks, and 27 vendors. It is going to be an epic event, and I hope you can join us for dinner from 5-7 PM. Each chef cooks for 200 people and only plats/dishes for 50 people every 30 minutes. The VIP eats before the minions in the main line. Just so you know, VerStandig Media's 104.7 WAYZ is broadcasting this information to their audience, and the CVBA is telling over 900 businesses, so the VIP line might be a little long. Did you know that, to be able to prune grapevines in Champagne, growers need to have a diploma from the Corporation des Vignerons? ✂ Pruning is not an easy task, both physically and mentally. It takes about 200 hours to prune a hectare—it’s all done manually—and judgements need to be constantly made about what and how much to cut and whether new shoots need to be left for next year. All of this, in the context of the success of last year’s harvest and of the coming year’s expected climatic conditions. 🍇 Decisions made now during pruning season will have a profound effect on the vine for this year’s harvest and next year’s, in terms of both how the grapes will grow and mature and also the health of the vine. 🏆 It’s sometimes easy to overlook the incredible work that goes into bringing a bottle of champagne into existence, but it is this diligent labour that gives grower champagne its much-deserved reputation. Here’s a bit of Champagne trivia for you. The Champagne AOC regulations permit only four vine training systems: Chablis, Cordon de Royat (or Cordon Permanent), Guyot (single or double) and Vallée de la Marne. 🍇 Chardonnay vines are not very productive in cool climates, so almost all of them are trained using the Chablis system (more canes per vine = more grapes). 🍇 Pinot noir and Meunier are more productive, so the single cordon of Cordon de Royat suffices. 🍇 Grand and Premier Crus must use only these two systems. 🍇 Other vineyards have the option of using the Guyot system, which is easier to manage and can help protect against frost damage. 🍇 Finally, the Vallée de la Marne system is used exclusively for Meunier. 🍾 🍾 🍾 So, a Grand/Premier Cru Chardonnay or Pinot noir? The influence of the Duero River's flow and the passage of time have been vital in developing these soils. Forty of these hectares are used to produce Unico, aged for at least ten years (in barrel and bottle) is one of the longest in the world.
