The hidden costs of of agricultural systems was just released as part of the FAO's State of Food and Agriculture report. The biggest insight was on the impact of unhealthy diets on our healthcare costs. 73% of the $12.7 trillion in costs were related to unhealthy outcomes of our food systems. While we focus our attention on climate, water and land use, it is the health impacts of our food and agriculture system that are most concerning. A little change in our diet 10,000 years ago transformed gut health—both for better and worse. The dietary shift that came as a result of agriculture, particularly through the introduction of starchy cereals and processed wheat, profoundly influenced our microbiomes. The shift from wild, diverse foods to more uniform agricultural products resulted in reduced microbial diversity and increased inflammation However, just as our ancestors adapted their diets, we can also make positive changes. By incorporating diverse, fiber-rich foods and reducing processed wheat, we can help restore some of the beneficial gut bacteria, enhance our digestion, and reduce our risk of chronic diseases.
