Some call it “corn-stick,” others go with “sweet pole,” but we like to call it amazing — especially when you use those cute plastic corn on the cob handles. The perfect pre-summer date. (Although, for most home gardens, mid-June is still too early for the harvest.) But you can’t blame anyone for being in a hurry. The sweetness doesn’t hang around for very long. It has to be picked at its freshest, otherwise there’s a risk of — nothing really — it’s just slightly less incredible tasting. 🌽🌽 Nothing wrong with salt and butter, but something with more pizzazz, like say, miso butter, could offer an interesting twist. Sautéed shrimp with rice and zucchini. The first prototype of a shrimp dish based on sauce choron. Seasoned, wild-caught, Texas gulf shrimp, sautéed in béarnaise butter with tomato concassé, flambéed with cognac. This dish worked fairly well for the first go-round. National Potato Day is October 18th and celebrates the delicious buttery and creamy mashed potatoes (some prefer them a little chunky, including me). The history of the potato is well documented (see our post from August 19th) but the history of mashed potatoes is not. Some historians think the Incas mashed their potatoes with clay to help remove some of the toxins from the potatoes grown in their time. The mashed potatoes we have come to know and love today were invented by Hannah Glasse back in the 18th century (the recipe was found in her cookbook “The Art of Cookery.”) Glasse was the Julia Child of her time and was very popular in Britain and its colonies. In the early 1950’s the R.T. French Company created instant potatoes (not as good as the real thing) which helped speed up the process of delivering mashed potatoes to the dinner table. Mashed potatoes are not just for Thanksgiving dinner. They are great year-round and pair well with meatloaf, roast beef, roasted chicken or even a stand-alone meal if you’re craving them. 🥦 ZERO WASTE WEEK 🥦 -- Broccoli Stalk Slaw -- 🥑 5 x broccoli stalks 🥕 1 x red/white or spring cabbage 🍆 200ml yoghurt 🥦 juice of 2 lemons and zest 🌶️ 50g whole grain mustard 🌽 1 x red onion -- Method -- - Peel and julienne the broccoli stalks, julienne the carrots, slice the red onion, shred the cabbage and place in a large bowl. - Add yoghurt, lemon juice, mustard, salt and pepper to make the dressing in a separate bowl. - Toss the vegetables with the dressing until well coated. - If you have any surplus florets, these can also be shredded and added to the slaw 🥦 #zerowasteweek #contractcatering #sustainableeating #tnscatering
