Coles is partnering with vegetable firm NutriV Pty Ltd to launch a range of vegetable powders made from discarded Aussie vegetables. 🗑️🥦🧁 Nutri V is a collaboration between Coles fresh produce supplier Fresh Select and CSIRO. The company claims it is the first in Australia to convert imperfect vegetables such as broccoli, pumpkin, and cauliflower into a powder that can be added to meals like smoothies, muffins, and pasta sauce. Data shows that the amount of land used to grow wasted food in Australia covers more than 25 million hectares, a landmass larger than the state of Victoria. Garlic Mustard Pesto recipe From Ryan Ralston, chef and general manager at Bread & Roses in Hyannis Ingredients: 2 cups fresh, and boiled garlic mustard leaves, or 1 cup frozen garlic mustard puree, thawed 2 cups fresh basil 1 cup sunflower seeds 2 to 3 cloves garlic 1 cup olive oil 2 tsp kosher salt 1 teaspoon black pepper, freshly ground Pour 2 cups of boiling water over 1 cup sunflower seeds. Let soak for 30 minutes, and drain well. Combine all ingredients except olive oil in a food processor and blend on high for 60 seconds. While the food processor is running, slowly drizzle the olive oil until fully combined. Season to taste.
