THE FRIDGE IS NOT THE BEST PLACE TO STORE WINE Ideally, wine should be stored in a cool, humid, dark place, away from root vegetables, and free of vibrations at 10 C ( 50 F) constant temperature. Yet, most people store their white wines, and sometimes even red, in the refrigerator, along with vegetables and all kinds of juices, mayonnaise, salad dressings, etc. Red wines suffer at room temperature everywhere in rooms. I have even witnessed bottles under beds in some homes. This is one of the unsuspected major enemies of wine. It has detrimental effects on bottles, especially in the medium and long term. Wine, is a living alcoholic liquid and absolutely, despises both high temperatures as well as low ones. Above all, it dislikes environments with low humidity levels and vibrations, like many refrigerators on the market. You can safely store a battle for a couple of weeks, with no negative effects on taste. But after a month, it begins to make itself felt, imagine those bottles of Dom Perignon that gather dust waiting for the right evening you may find the cork disintegrating and the wine oxidized. While in Ukraine a few years ago I saw a bottle Dom Perignon in a yellow-illuminated refrigerated showcase and upon inquiry was told that it is customary to store bottles in that restaurant. When I informed the owners that this was a “wine crime” they immediately placed it in their wine cellar. The refrigerator tends to harden and dry out the cork, which loses elasticity, shrinks, and lets in more air than necessary. All this ends up accelerating the evolutionary path of the wine, which requires a humidity of at least 80 percent for slow and gradual aging.

More Melon. On Monday, I posted about Lieu Dit Winery 's 2022 Melon de Bourgogne from the Santa Maria Valley in California. It was super light, bright, almost clear in color... The kind of stuff that gets you through hot summer days... Briny and beautiful… Just screaming for some raw oysters. Today, I popped another Melon, and man was it different: A 2016 Chereau Carre L’Orée du Château la Turmelière Château-Thébaud Muscadet de Sèvre et Maine. Muscadet is a region in the Loire Valley of France, known for its Muscadet wine, made from 100% Melon de Bourgogne grapes. Most of the region's Muscadet is produced in Muscadet-Sèvre et Maine. This white wine had some nice age on it (7 years), was straw yellow and rich. You can totally tell it spent some time on the lees: 43 months. (Lees are dead yeast deposits that, when left in wine during aging, give it a bready/pastry taste.) There were toasty, brioche aromas, along with some green apple. The acidity was bright and sparkling at first, then creamy midway through, with some really nice chalky minerality. It was much fuller than the first Melon, almost resembling a Chardonnay. Wine Enthusiast gave it 93/100 points. Like most M de B’s this would be great with raw bar or seafood, but this wine also has the heft to stand up to pastas in cream sauce, cheese, or even white meat.
