Find below why! 🍏 🍎Starting with the fruit’s selection: Cider apples are known for being the fruit that captivates the most CO2 from the atmosphere. At Coquerel Distillery, we use no less than 40 different types of apples and pears from the 4 families (bitter, bittersweet, tart, sweet). We source them from 200 farmers located just a few miles around from the distillery. Also, irrigation in the orchard is prohibited. 🚫 💧Making of the Cider : the fruits are sorted, washed, crushed and then pressed in our cidery at the estate to get apple juice that is left for natural fermentation for a minimum of 28 days to become cider. During all the fermentation process adjunction of water, sugar, yeast, colorant or aroma is strictly prohibited. 🚫 La Distillation: once the harvest is finished, then starts the distillation on the lees when we concentrate the cider aromas. The transformation of cider into a clear, fresh and fruity eau-de-vie is made in our three traditional Calvados copper stills. Once again, no addition of water in the still to cool down the vapors is allowed. 🚫They’re cooled down by the fresh cider that will then be distilled. 🪵Aging: by entering into contact with fine French oak barrels, young Calvados round off their education, gaining in structure and complexity. Let’s kick off our food trends series with the avocado. Or avocado pear as it was called in the UK when introduced back in the 1960’s. At that time it was not a hit with the British public. People didn’t understand what it was, or how to eat it. It’s a great example of how language can be confusing when single words may be familiar – in this case pear – but the context isn’t and therefore their interpretation was incorrect. It may seem funny now, but many confused it with a regular pear and even tried stewing it and serving it with custard. Yuck! Whilst the food wasn’t a huge hit at this time, the colour was with avocado bathrooms being all the rage in the 1970’s and 80’s! In the 80’s the avocado started making it onto restaurant menus either with a vinaigrette (or stuffed with the infamous prawn cocktail). And this is where it stayed for quite some time. In the US, targeting the Super Bowl with a dip to go with the crisps (guacamole) along with samples and recipes did the trick in converting consumers. Despite evidence of avocados being eaten as early as 10,000 BC in Central America, it wasn’t until the 2010’s that they exploded on the UK market. Smashed avocado anyone?! Avocado on toast was a key component of Gwyneth Paltrow’s cookbook ‘It’s All Good’. It coincided with an increased interest in ‘clean eating’. It was popping up everywhere, being cited as a ‘superfood’ and before we knew it became a brunch mainstay and was filling our insta feed. Avocados made it into merchandise and jokey greeting cards to guac you up! Millennials' love of avocados became so great that it became a bit of a joke with them being told they’d be able to afford property if they stopped spending money on smashed avocado! From this it is clear that language is important so consumers understand what your product is, and what to do with it. Timing is key. How does your product fit with wider trends? Sampling works – assuming it tastes good of course! And association with events can help to create memories and triggers for repeat purchase. Challenge assumptions.
