EATING HEALTHY ON A BUDGET Part 1 In recent months, grocery prices have shot through the roof, right alongside gas prices. That’s because the cost of transporting food must be figured into the price. Over the next 2 weeks I'll be sharing some tips to pinching pennies at the grocery store while still enjoying nutritious and delicious food: TIP #1 Eat more beans & legumes - Beans and legumes are rich in plant protein, fiber, B-vitamins, iron, folate, calcium, potassium, phosphorus, and zinc. Most beans are also low in fat. Legumes are similar to meat in nutrients, but with lower iron levels and no saturated fats. Beans & legumes are both economical and versatile. You can make bean salads, Cajun dishes, Indian dishes, vegetable soup, chili, bean dips, stir them into whole- grains like brown rice — the list goes on and on. Your family will never catch on to the fact that they’re eating beans several nights a week. What are legumes? Lentils, Peas, Chickpeas, Soybeans, Peanuts. Choose organic whenever possible.
