Find below why! 🍏 🍎Starting with the fruit’s selection: Cider apples are known for being the fruit that captivates the most CO2 from the atmosphere. At Coquerel Distillery, we use no less than 40 different types of apples and pears from the 4 families (bitter, bittersweet, tart, sweet). We source them from 200 farmers located just a few miles around from the distillery. Also, irrigation in the orchard is prohibited. 🚫 💧Making of the Cider : the fruits are sorted, washed, crushed and then pressed in our cidery at the estate to get apple juice that is left for natural fermentation for a minimum of 28 days to become cider. During all the fermentation process adjunction of water, sugar, yeast, colorant or aroma is strictly prohibited. 🚫 La Distillation: once the harvest is finished, then starts the distillation on the lees when we concentrate the cider aromas. The transformation of cider into a clear, fresh and fruity eau-de-vie is made in our three traditional Calvados copper stills. Once again, no addition of water in the still to cool down the vapors is allowed. 🚫They’re cooled down by the fresh cider that will then be distilled. 🪵Aging: by entering into contact with fine French oak barrels, young Calvados round off their education, gaining in structure and complexity. 🫶 LET GO and LET GROW 🌱 The opening verse of the Tao Chi Ching. The first photo (taken 3rd May 2023) is my newly constructed veggie garden, turning an unused patch of dirt into the potential to come. Today (3rd August 2023), I have Long Beans 🫘 aplenty, Beef and Salad Tomatoes 🍅 heaving off their branches, Crunchy Cucumbers 🥒 for salivating salads, Strawberries 🍓that are branching everywhere and Parsley 🌿 that is adding punch to all our dinners. But whilst a successful veggie garden requires the right preparation and moderate tending to, it also needs time to be left on its own, to grow and ripen in due course. This can also be said for everything in our lives! So next time you are wishing for that big ambition, to hurry up and get here now. Great news for organic craft brewers! From now onwards, rice husks (also known as rice hulls) are available both conventional and ORGANIC at Castle Malting. This precious adjunct is an invaluable filtering aid, when the brewing mix contains a high percentage of grains other than barley. Wheat, oat, rye, maize, rice are very often present in large proportions in the grain bill of specialty craft beer recipes. Rice husks will substantially improve wort run-off rates. The chance of a clogged filter bed is minimized. The use of rice husks won’t have any effect whatsoever, on your beer’s organoleptic properties. Aroma, flavor, color, body or gravity, won’t be affected. Our organic rice husks are available in bags of 150 liters, that is ca. 10 kg of husks. LiVA Extends "Ready-to-Eat" Avocados from the Supermarket by a Whole Week! Can you believe it ? ? 🥑🥑 The story of the bad avocados at your home is now over! With LiVA you can enjoy avocados, ripened and delicious for a whole week! Another beautiful and elegant implementation of LiVA. In this demonstration, we used “ready to eat” avocados, already ripened, that were bought at the supermarket. One package received LiVA inside, and one did not. To push the limits, we stored the packages for 3 days in the fridge, then 3 days outside at 23°C, and another 7 days in the fridge. The results were astounding: without LiVA, the avocados were inedible, with an unpleasant smell and rotten appearance. The result: while the avocados with LiVA maintained a pleasant look, smell, and the proper taste of a ripe avocado. We extended the time to consume the avocado by at least 7 days.
