Ingredients

  • 1 cup butter
  • ¼ cup granulated sugar
  • ⅓ cup powdered sugar, plus extra for garnish
  • ¼ tsp salt
  • 2 tsp vanilla extract
  • 2 tsp almond extract
  • 2¼ cup all-purpose flour
  • 1 jar seedless, unsweetened raspberry jam
  • 2 cups fresh raspberries
  • 2 cups milk
  • 3 cups dark chocolate melting chips

Instructions

  1. Preheat the oven to 350° F.
  2. Cream all sugars, salt, and butter together with extracts. Add flour and mix to combine. Scoop dough into muffin tin, forming a cup. Then spoon in a 1-2 tbsp of the jam into the cups. Sprinkle leftover dough crumbles on top and bake for 15-20 minutes.
  3. While the tarts are baking, heat milk and chocolate chips in a double boiler. Stir until melted. Set aside.
  4. Once tarts are almost golden, remove from the oven and leave to cool in the muffin tin. Once cooled, remove tartlets and drizzle melted chocolate on top. Finish with a fresh raspberry and a dash of powdered sugar.
