This recipe for PB&J overnight oats sings with flavor, thanks to a hearty spoonful of peanut butter stirred into the mixture. Not only is it a time saver, it’s a delicious way to start the day.

Ingredients

  • 1 ¾ cups plain unsweetened almond milk

  • ½ cup plain whole-milk Greek yogurt

  • 3 tablespoons creamy peanut butter

  • 1 tablespoon honey

  • ½ teaspoon pure vanilla extract

  • 1 ½ cups old-fashioned rolled oats

  • 2 tablespoons chia seeds

  • ½ cup strawberry jam

  • 1 small banana, thinly sliced (about 1 cup)

  • ¼ cup chopped peanuts

Directions

  1. Whisk almond milk, yogurt, peanut butter, honey, and vanilla in a large bowl. Stir in oats and chia seeds until combined. Spoon ⅔ cup mixture into each of 4 (8-ounce) lidded glass jars. Seal jars and refrigerate until mixture thickens, at least 8 hours or up to 12 hours.

  2. Uncover jars; top each serving with 2 tablespoons jam, ¼ cup banana slices, and 1 tablespoon chopped peanuts. Refrigerate until ready to serve or up to 3 days.
