Rich Chocolate Cake Source: Internet Ingredients Flour- 1-3/4 cups Sugar- 2 cups Cocoa powder- 3/4 cup

Baking powder- 1-1/2 teaspoons Baking soda- 1-1/2 teaspoons Salt- 1 teaspoon Eggs- 2 Milk- 1 cup Vegetable oil- 1/2 cup Vanilla extract- 2 teaspoons Boiling water- 3/4 cup (you can add 1 teaspoon of instant coffee powder in it) Method Preheat oven to 180C. Powder the sugar finely. Sieve the dry ingredients together. In a bowl, beat the eggs till thickened and add the milk, oil and vanilla. Mix the flour mixture till well incorporated. Add the boiling water (coffee). The batter will be thin. Pour into baking pan/pans. You may require two 9 pans. Bake for 35- 40 minutes or till a skewer inserted in the centre comes out clean. Cool on a wire rack. Your delicious Rich Chocolate Cake is ready Chocolate Brownie Ingredients Butter- 100 gms Sugar- 200 gms Cocoa powder- 6 tablespoons Milk- 100 ml Flour- 150 gms Eggs- 2 Walnuts chopped- 50 gms (I use cashewnuts) Method Mix butter, sugar, cocoa and milk in a saucepan and heat on low heat till the butter melts and all the ingredients are well blended. Switch off the heat and let it cool. Add rest of the ingredients and mix well. Pour into a greased pan and bake in a preheated oven at 180C for 25 minutes. Cool and cut into squares. Enjoy!!

Cooking Time: 35 minutes Makes: Approximately 15 brownies Ingredients 250g butter 430g (2 cups) caster sugar 4 eggs 225g (1 1/2 cups) plain flour 80g (3/4 cup) cocoa powder 1 tsp vanilla essence cup (35g) cocoa powder, sifted (optional to lightly dust your brownies) Method 1. Preheat oven to 180C. Line a 20 x 30cm slab pan with non-stick baking paper. 2. Melt the butter in a saucepan over medium heat. Remove saucepan from heat and stir in the sugar. Add the eggs, 1 at a time, and stir until mixture is thick and glossy texture. 3. Sift the flour and cocoa powder over the egg mixture and stir until well combined. Add in one tsp of vanilla essence. Spread over the base of the prepared pan. 4. Bake for 30 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan to cool completely this should take around 5 minutes. Cut into pieces and serve.

Scones Source: Manus Menu Ingredients Plain flour mixed with 4 tsp of baking powder OR self-raising flour- 300 gms Butter- 2 tablespoons Castor sugar- 1 tablespoon Milk- 3/4 cup Method Sieve the flour (and the baking powder) and put it in a mixer together with the butter. Mix for a few seconds, until the butter gets absorbed by the flour. Add sugar and milk and mix until combined. Then transfer the dough onto a floured surface. Knead for a couple of minutes (adding a little extra flour if required) until you get a soft but not sticky dough. Pat the dough down into a sheet of 2 cm in thickness (1 inch). Cut the dough into rounds with a scone/pasta cutter. Shape the leftover dough into a slightly thicker sheet and cut out the remaining

scones. Place the scone rounds on an oven tray with their sides just touching each other (this produces a softer sided scone and helps to support them). If you prefer crisp tops and sides, place the scones apart from each other on the oven tray. Brush the top of the scones with a little milk. Bake in a preheated oven at 220C for 12-15 minutes or until the scones are golden brown.
