Since most of us tend to grill different kinds of meats and vegetables all at once, its best to organize your grill so
that it has both direct and indirect grilling zones. Such a setup lets you move foods back and forth between zones,
alternating between high-heat direct grilling and lower-heat indirect grilling. Creating dual zones for a gas grill is
easy: just turn burners on one side on and keep them off on the other side. Heres how to do it for a charcoal grill:

before starting to cook. To tell if
the temperature is high enough
for cooking, hold your hand about
3 over the grill grate. If you have
to pull away after 4 seconds, its
time to start grilling.

6 Use the hottest area on the


grilldirectly over the coals
for your direct grilling zone. The
area without coals will become
gradually cooler; use this part
of the grill for indirect grilling.

1 Place short ribs in a bowl. Whisk juice, soy, sugar, vinegar,


oil, sesame seeds, pepper, garlic, and grated onion in a bowl;
rub mixture over ribs. Cover and refrigerate for 45 minutes.

halfway up meat. Cover, place in oven, and cook until meat
is fork-tender, about 3 hours, turning meat once halfway
through. Remove from oven and uncover. Place a sturdy
plate on top of meat, weight it down with heavy unopened
cans, and set aside until meat cools to room temperature.
Transfer meat to a pan and cover loosely with plastic
wrap, then reweight with plate and cans. Refrigerate
overnight. To serve, bring meat to room temperature,
remove string and skewers, then carve into 1-thick slices.

with charmoula &

SUMMER VEGETABLES
Topped with blistered tomatoes and squash, this succulent
salmon elevates a favorite dish from our childhood.
Charmoula

FOR THE CHARMOULA

1 tsp ground cumin

Mix together all ingredients except the yogurt and water in a blender
and blend until smooth. Add just enough water to make a smooth emulsion.
Fold in the yogurt until combined. Taste and adjust seasoning.

Blistered Summer Vegetables

FOR THE SALMON


In a pot just big enough to hold the salmon, heat the oil to 250F. Season
the filets with salt and pepper and submerge completely. Use a little extra
oil to cover the salmon if necessary.
Cook, stirring gently a few times, until the interior of the salmon is just
cooked (125F for medium rare).
Using a fish spatula, transfer filets from the oil onto a plate and dab
with paper towels to remove any excel oil. Garnish with coarse sea salt.
FOR THE BLISTERED SUMMER VEGETABLES
In a heavy cast iron pan, heat 2 tablespoons of the olive oil. When the oil
just starts to smoke, add the onion, zucchini, and squash and a pinch of salt.
Let cook without stirring for about 2 minutes. When the vegetables start to
darken on the first side, toss them gently until cooked through, about
3 minutes. Add the herbs and butter.

To serve, place a dollop of the charmoula on a plate, add some vegetables to

FETA, CHERRY TOMATO & OLIVE TAPENADE PIZZETTES


MEDITERRANEAN NIGHT
This eye-catching and colorful
pizza gets a good amount of
saltiness from both the feta and
the rich olive tapenade sauce,
which is balanced by tart
tomatoes and fragrant basil.
Serve with a Chopped Salad
(page 107) and a lively red wine.

Place a pizza stone in the middle of the oven and preheat to 450F (230C). Once the
oven has reached 450F (230C), let the stone continue to heat for 1530 minutes
longer, without opening the door.
Divide the pizza dough into 8 equal pieces. On a floured pizza peel, roll out each piece
into a 5-inch (13-cm) round. If the dough springs back, let it rest for about 10 minutes
before continuing. Brush each dough round with olive oil and season with pepper.
Leaving a 1-inch (2.5-cm) border, spread the tapenade over each dough round and top
with the feta and tomato halves.
Carefully slide the pizzettes from the peel onto the hot stone in the oven and bake for
1012 minutes, or until the crust is golden brown. Using the peel, transfer the pizzettes
to a cutting board. Drizzle the finished pizzettes with olive oil. Let cool for a few minutes,
then scatter the basil over the top and serve right away.

ORZO WITH SHRIMP & BROCCOLINI


As a one pot dish, this cant
get much easier for a weeknight
dinner. You can try variations
for the shrimp, such as shredded
rotisserie chicken or sausage,
or used blanched asparagus or
peas instead of broccolini. Serve
with a side of Roasted Red
Pepper, Tomato & Sourdough
Crouton Salad (page 121).

Bring a large pot of generously salted water to a boil over high heat. Add the broccolini
and cook until fork-tender, about 3 minutes. Using a slotted spoon, transfer the
broccolini to a plate, reserving the cooking water. When cool enough to handle, chop
into 1-inch (2.5-cm) pieces. Set aside.
Return the pot of water to high heat and bring to a boil. Add the orzo and cook until
al dente, about 2 minutes less than the package directions for doneness. Drain well
and set aside.
In a small pan over low heat, warm the broth. Keep warm while you cook the shrimp.
In a large frying pan over medium-high heat, melt the butter in the olive oil. Add the
garlic and saut just until soft, about 1 minute. Add the shrimp and season well with
salt and pepper. Cook, flipping once, until the shrimp are bright pink, about 5 minutes
total. Using a slotted spoon, transfer the shrimp to a clean plate and set aside.
Reduce the heat to medium-low and stir in the orzo and 1 2 cup (4 fl oz/125 ml) of the
warm broth, scraping up any browned bits on the bottom of the pan. Cook gently, stirring
often, until the broth is absorbed, about 2 minutes. Repeat to add the remaining broth
1 2 cup at a time, allowing the liquid to be absorbed before adding more. Stir in the
cheese, parsley, shrimp, and broccolini. Season with salt and pepper and serve right away.

Preheat the oven to 325F


(165C). Line 2 large rimmed
baking sheets with parchment
paper.

In a bowl of a stand mixer fitted


with the paddle attachment,
beat the butter and salt until
smooth, about 2 minutes. Add
the sugar and beat until well
blended, about 2 minutes. Beat
in the vanilla and almond extracts
just until incorporated. Beat in the
egg and then the egg white, beating
until each one is incorporated. Mix
in the coconut.

Drop the batter by rounded


tablespoons onto the prepared
baking sheets, spacing them
about 112 inches (4 cm) apart
and mounding them slightly with
the spoon. Using damp fingers,
gently press any loose coconut
into the mounds.

chocolate-dipped macaroons in an
airtight container in the refrigerator.

Whisk vigorously until the mixture lightens in color and doubles in volume,
about 2 minutes.
Remove the cream mixture from the heat. Whisking constantly, slowly
pour about 1 cup of the warm cream mixture into the egg mixture and
whisk until smooth. Pour the resulting egg-cream mixture back into the
saucepan, whisking constantly, and place over medium heat. Using a
wooden spoon, stir until the mixture forms a custard thick enough to
coat the back of the spoon, 12 minutes. Do not let it boil.

STRAWBERRY SHORTCAKES
MAKES 8 SERVINGS

Warm shortcakes, split and filled with whipped cream and sugared strawberries, are
an old-school treat. These golden biscuits are dropped from a spoon instead of
rolled and cut, which creates a jagged, crunchy crust after baking. Raspberries,
blackberries, or sliced peaches can replace the strawberries, if you like.

Preheat the oven to 425F (220C). Line a large rimmed baking


sheet with parchment paper.

In a bowl, using a fork, stir together the flour, granulated sugar,


baking powder, and salt. Add the butter and toss it well to coat
with the flour mixture. Using a pastry blender or 2 knives, cut in the
butter just until the mixture forms large, coarse crumbs the size of
small peas. In a small bowl, whisk together the egg and the 1 3 cup
(3 fl oz/80 ml) cream until blended. Pour the egg mixture over the
flour mixture and mix with a rubber spatula just until moistened.
Add additional cream, 1 tablespoon at a time, as needed to form
a soft dough that is wet enough to be dropped from a spoon.

While the shortcakes are baking, prepare the filling. In a bowl,


using a fork, crush 1 cup (4 oz/125 g) of the berries. Add the
remaining berries and the granulated sugar, mix well, and set
aside. Transfer the shortcakes from the baking sheet to a wire
rack and let cool for 15 minutes.
To serve, split the warm shortcakes horizontally and place the
bottom half of each, cut side up, on a plate. Spoon the berries
on top, dividing them evenly. Top each with some whipped cream.
Cover with the shortcake tops and serve right away.

cream and sprinkle with the turbinado sugar. Bake until the shortcakes
are firm to the touch and golden-brown, 1215 minutes.

THEY ARE THE ALIEN BEINGS that live among us. Strangely beautiful or

frighteningly grotesque, insectsand their arthropod cousins, spiders and


centipedesfascinate homo sapiens, particularly the subspecies known as
photographer. Small wonder, because their outlandish features and tiny size
make bugs intriguing and challenging subjects.

GETTING STARTED
You can get into many areas of photography with
a decent camera and a standard lens, but insect
photography requires a bit more. Much of its impact
comes from seeing a very small creature very big,
which means youll need a macro lens or another
optical accessory capable of extreme closeups.
If youre not already an early riser, start being one.
In the cool of early morning, many insects and
arthropods are sluggish to the point of near inertia,
making them easier to catch with your camera. There
are other advantages as well: Dew adds a jewel-like
glitter to bugs, as well as to their webs and plant
perches. And although theyre adept at blending into
their surroundings in middays flat light, the steepangled rays of early day make bugs stand out from
their surroundings.
As with all photography of wild things, knowledge of
the behavior of your pictorial prey is power, so bone
up on the habitats and behaviors of various bugs.
Some insects (such as ladybugs) are nearly oblivious
to photographers; others (such as butterflies) will flit

TECH TIPS
EXPOSURE For the most part, you will be shooting
through macro lenses or other accessories that use
extra extension from the focal planewhich means that
there will be considerable dimming of the image. So
rely on your cameras through-the-lens meter, not an
external one. You will need small apertures (f/16 to
f/32) for adequate depth of field in close focusing; set
the f-stop you need and shoot in aperture-priority auto.
FOCUS A delicate business with tiny subjects. Manual
is your best bet, and, if your camera has magnification
aid for focusing (on the LCD or through an electronic
viewfinder), use it. If you intend to stack images in
post-processing, you may want to set a low-speed burst
rate and fire as you adjust the focusing from near to far.
FLASH For extreme closeups, your cameras flash will
be uselessit will fire over, not at, the creature. But
for subjects at longer focusing distancesfor example,
a butterfly at arms length photographed through a
telephoto lensthe built-in flash can provide great fill
light. Set it to 1 stop output or less for a subtle effect,
or to full power to really pop your subject.

WHAT TO SHOOT
When photographing an interior, imagine youre

well. In spaces that have especially high ceilings, try

faithfully. But also pack a
tilt-shift lens. Besides allowing
for perspective correction and
extending depth of field, a TS
lens lets you use a neat trick:
By shifting the lens laterally, you
can photograph into a mirror or
other reflective surface without
you or the camera appearing in
the photo.

THE REAL IRON MAN SUIT


This homebuilt superhero suit looks as
good as the silver-screen version.

Anthony Le has been a fan of Iron Man since he was


a kid. When he heard that the comic-book superhero
was hitting the big screen in 2008, he was inspired to
build his own Iron Man suit. That version was more of a
costume, but his next editionfinished just in time for
the movies sequeledges much closer to the real thing.
With its dent-proof exterior, motorized faceplate, and
spinning mock Gatling gun, his take on the movies War
Machine suit could easily frighten a supervillainnot to
mention kids in the theater.

To make the suit, Lewho is a fitness consultant by


daystudied some concept sketches of the suit posted
on the Internet. He focused on the War Machine suit,
donned by Starks buddy Jim Rhodes in Iron Man 2, in
part because it just looks more hardcore. He used
thin, high-impact urethane for the armor, cutting it
into plates and joining them with some 1,500 rivets
and washers. He sculpted a clay helmet mold and then
used a mix of liquid resin to create the final product. He
added a replica of the machine gun on the suits shoulder
made of PVC pipes and other materials. But that was
just cosmetic work. He also added a small servo motor
that opens the faceplate, as in the movie, and built a gun
out of pipes and a motor. LEDs in the eyes and chestplate further add to the illusion.
All the LEDs and the motors that drive the gun and the
faceplate have their own batteries hidden within the
suits large frame. Inside the chestplate, Le added a
hands-free button that activates the helmet. When the
faceplate is open, he just stands up and points his arm
forward, causing his chest to press against the button,
triggering the servo motors in the helmet to close the
mask. This, in turn, switches on the red LEDs set inside
the eye openings, which are large enough for him to
also see out of. To open the mask up again, he presses
another button.
Le wore one of his suits to the Childrens Hospital in
Aurora, Colorado, to cheer up the kids, and the staff was
so pleased they made him his own ID card. The name
listed? Iron Man.

STEP 1 With a syringe, measure 10 ml of ferric chloride

solution and 10 ml of distilled water into a container.

STEP 3 Add 20 ml more ferric chloride solution to your filtered


green solution. While stirring, add 150 ml of ammonia.
STEP 4 In a well-ventilated area, heat the solution to near
boiling. While stirring, add 5 ml of oleic acid. Keep heating
until the ammonia smell is gone (about an hour).
STEP 5 Let cool, and then add 100 ml of kerosene. Stir until the
black color attaches to the kerosene.
STEP 6 Pour off and collect the kerosene layer in a bowl.
STEP 7 Place a magnet under your bowls bottom and watch

the weird peaks rise.

I often say, Build it, then measure it. This is horrible advice, and
an excellent way to waste time making parts that could have fit
together and materials that could have been put to good use. At
the same time, overly precise measurements can cause unneeded
frustration and waste time, too, since different tasks require
different levels of precision. When it comes to measuring
anything larger than your torso, the tape measure gets you in
the ballpark. Putting it to use is pretty obvious stuff: Pull the end
out to the extent that you want to measure, fix the tape in place
with the lock, and then measure as precisely as you can with the
markings on the tape.
But there are a few neat features that might not be so obvious.
The curve of the tape, for instance, has some structural rigidity
to it, allowing you to measure up higher and across gaps that
you cant physically reach across. Just play the tape up or
out, bit by bit. Also, most tape measures can bend to measure
curved surfaces or around corners, but take care to bend with
the concave surface of the taper on the inside of the curve.
Otherwise you might kink the tape or crack it.

Always remember that there


are many, many tools that make
things shorter, and achingly few
that make things longer.

is also handy for checking an objects angles and edges.
A common and accurate layout tool, you can spot it
by its two main parts: the steel ruler and the square.

PROPER RETRACTION Do not retract the tape by just


releasing the lock and letting the tape rush back in. The
shock of loosens the lip, weakens the spring, and makes you

one hand (or fingers of the same hand) on the tape, and let
the spring retract the tape slowly and smoothly.

MEASUREMENTS
The caliper is for measuring small things, from the size
of your thumb down to a hair, all to a satisfying degree of
accuracy. Most calipers can measure to the thousandth
of an inch, high-end ones to the millionth. Until recently,
digital calipers were an expensive specialty toolthe
type that the owner kept safe and never, ever lent out.
Today, cheap ones pop up in big-box hardware stores, but
they don't have millionth-of-an-inch accuracy and they
tend to die if they get wet or fall off a workbench. Even
still, theyre fine for most jobs, and I recommend a quality
(~US$150) digital caliper or a decent dial caliperthe
batteries will never die, and analog accuracy was good

enough to split the atom and land

To measure with a caliper, make
sure the display is at zero when the
caliper is closedif not, re-zero the dials
with the calibration knob, or zero the display
with the handy button. Use the main jaws to
straddle the part or lines. Use the smaller jaws to
measure an inside gap or hole. The rail that comes
out of the opposite end can be used as a depth
gauge. Tighten the lock knob to hold the jaws in place
when comparing sizes or using the jaws as a scribe.

Recently, I was giving an artist a crash
course in shop tools. Soon we got to the
angle grinder: Does it all. Power tool.
Full of love, but without compassion this
attachment severs your soul... After what
seemed like a moment (but I suspect was
far longer), I noticed The Look: interest
in the topic, but with concern, confusion,
and fear. I get this look more often than
one would like. So, as a way of letting her
know it was perfectly safe, I fired it up.

still-smoking track across my hand. That
led nicely to a tour of the first aid kit.
More than a hand-held shop, the angle
grinder is hand-held making. It is simple
but rich with potentiallearn the basics
in ten minutes; spend the rest of your life
mastering it. Treat it well and you can do
almost anything; take it for granted and it
will take some fingers.
I have deep feelings for the angle
grinder. A god in the old sensepowerful,
helpful, but deeply, terrifyingly crazy in a
way that reminds us that we are coming
from different base principles. It cares not
for me, or any of us.

For all their mechanics, Arthurs wire machines are

is as close to oil painting or free drawing as I can get,

into the articulated, graceful pieces for which hes
known, Arthur created his own toolkit and work flow.

I really love working with soft, black


annealed wire. It spot-welds okay, it
silver-solders fine, and I coat it with blackening
agent to make it look really nice. I made a tool
to standardize the gear-bending processa plate
with holes in the center and 180 holes around
its perimeter, and a hand tool with a pin on
the end. I put the hand tools pin in one of the
center holes and pins in two of the holes on
the outer ring, and bend wire around the central
pin until it hits one of the outer ones, which acts
as a stop. Then I reorient it and bend the other
way until it hits the other stop. Its been helpful
to track the gear specifications in a notebook.

Every sculpture starts with a feeling, and theres an infinite number


of ways that it can be expressed physicallysometimes its just wire in
space, like Untitled Fragile Machine, in which all it really has to do is move. But
sometimes I find an object and it triggers an idea. In Child Watching Ball, you
turn a crank to make a dolls head follow the motion of a small blue ball. It took
more analysis and invention, because Im using the found part as
a sort of puppet to make the wires gestures more expressive.
Initially, its like Im the puppeteer, the doll head is my
puppet, and I supplant myself with the machine.

My life completely changed


when I came across a spot
welder, a tool with copper pincers
that lets you focus welding current
onto a small space. I have a large,
bench-mounted one, but a friend
found one that was small enough
to hold in your hand and use like
tweezers, allowing you access
in all planes. I was so entranced
that I made my own version of
it by hand. The spot-welder itself
is so old that it has vacuum tubes
inside, but it works like a charm.

Polaris, also known as North Star, Northern Star,


Pole Star, and Lodestar, is the brightest star in the
constellation Ursa Minor, and the 45th brightest star
in the night sky. Its actually a multiple star, made up
of main star UMi Aa (which is a supergiant), two
smaller companions, UMi B and UMi Ab, and two
distant components, UMi C and UMi D. Recently, it
was determined to be about 323 light-years from the
Sun and Earth, much closer than the previous
estimate of 434 light-years that was made by a
European satellite in the late 1990s. This new distance
measurement is important because it could aid
astronomers in the pursuit of several cosmic
mysteries, such as the hunt for elusive dark energy.
From our vantage point on the surface of Earth,
Polaris is located very close to the north celestial pole,
making it the current northern pole star. But it hasnt
always marked true north, and wont always in the
future. The moving of Polaris towards, and in the
future away from, the celestial pole, is due to the
constant, gradual shift in the orientation of Earths
axis of rotation. The celestial pole will move away

from UMi after the 21st century, passing close by


Gamma Cephei by about the 41st century. Historically,
the Greek navigator Pytheas in ca. 320 BC described
the celestial pole as devoid of stars. However, as one
of the brighter stars close to the celestial pole, Polaris
was used for navigation at least from Late Antiquity,
and described as always visible by the Greek
anthologist Stobaeus in the 5th century.
For the time being, if youre in the Northern
Hemisphere, finding Polaris in the sky is a snap. First,
locate the famous pattern of stars called the Big
Dipper (also known as the Plough) in the constellation
Ursa Major. Then, mentally draw a line connecting the
stars at the end of the Big Dippers bowl. Lengthen
that line five times to arrive at Polaris, which is the
brightest star in Ursa Minor, or the Little Dipper.
During fall and winter, it may be harder to see
unless you have a clear northern horizon. When the
dipper lies below the horizon, then the W shape pf
Cassiopeia, on the other side of the pole, will be high.
It wont pinpoint the way as clearly as the Dipper, but
will give you an idea of the direction of the Pole Star.

If you use a sufficiently long exposure, the
rotation of the earth makes stars, planets, and
the moon seem to spin in the sky. To capture the
celestial ballet of star trails, you need a dark,
clear night far from city lights. You also need a
camera capable of long exposure (one with a B,
or Bulb, setting, or long exposure settings from
30 sec to several hours). Bring new or freshly
charged batterieskeeping shutters open for
hours sucks batteries dry.
Then head out into the night. Set your camera
on a fixed tripod aimed at Polaris. Secure it in
place to defend against squiggly star trails. A
wide-angle lens produces the best results. To
show scale, compose a shot that includes a
foreground element such as a barn or tree, and
set ISO between 400 and 800high enough to
record dim stars, but low enough to prevent
graininess. Choose a medium aperture, f/5.6 to
f/11; smaller ones reduce sky glow from nearby
towns. Use a cable or remote release, set focus
manually, focus on infinity (put a bit of masking
tape on the lenss focus ring to hold it in place),
and open the shutter. Leave it open as long as
you like. Remember: Long exposures produce
long star trails, but also pick up more sky glow.

When it comes to backpacking stoves, the Svea


123 is the origin of the species. Strip away all the
most modern elements from todays cuttingedge stovesthe piezo-electronic ignitions,
the adaptors for French press coffee makers,
the USB ports that enable you to charge a
phone while heating grueland this is what
youll have: a tough, compact, light means of
applying heat to a pot.
You might expect that from a Swedish
company known for building blowtorches. The
Svea 123 hit the market in 1955, just as
backpacking was hitting the American
mainstream. At the time, of course, it was
positively futuristic. The stove featured a
pressurized naphtha fuel tank that could be
preheated with a small amount of fuel, which
meant the contraption would fire up in unholy
cold. At full speed, it will boil a liter of water in 7
minutes, depending on altitude. Made of solid
brass, with a minimum of moving parts, there
was little to break. With an empty tank, the Svea
123 weighed only 18 ounces. It found a place
beside external-frame backpacks, Goodyearwelt boots, and egg-grate foam pads as a tool
revered by backpackers, alpinists, and even longdistance motorcycle riders.
Happily, the Svea 123 is still a viable gear
option. More modern versions come with a selfcleaning fuel needle, but otherwise, they are
near-exact copies. Mine dates from the late
1960s, and I remember when my dad bought it at
a sporting goods store where campstoves and
lanterns shared shelf space with World War II
patches, bullets, and German battle helmets.
Pulling out the stove these days makes a
statement, and Im not referring to its retro lines.
On high, or anywhere near it, the Svea 123
absolutely roarslike a jet takeoff roars. Subtle
it is not, and it elicits a horror-stricken what the
#@+*! is that? double take from some moderngear weenies. But it burns hot, it lights every time
no matter the conditions, and you can drop this
stove off a cliff and cook breakfast at the bottom.

SVEA 123 STOVE

Wading a small stream for smallmouth bass is a fun way


to spend a spring or summer day, but scoring big fish
in this kind of water can be far more challenging than
hooking up on a mighty river or deep lake. While small
bass in streams might be ravenous, large bronzebacks
are often more wary, feeding less frequently and holing
up in tight spots for most of the day. To entice smallstream trophies, you need to appeal to their predatory
instincts, dialing in a presentation and lure size these
fish cant resist. This twitchbait and teaser fly
combination packs a one-two punch.

RIG IT Cut a length of mono from your main line (which

should be around 8-pound-test) and splice it back onto


the main line with two Uni knots, creating tag ends that
measure 5 or 6 inches. Trim off only the tag from the main
line close to the knot. Next, tie a twitchbait, such as the
Rapala X-Rap, to the end of the spliced line. Now, tie a
small Muddler Minnow or a white Zonker fly onto the
remaining tag on the splice.

SAND SPIKES

Theres nothing to making your own beach sand spikes,
which make running multiple rods an easy task. Try it
with schedule 40 PVC, which is a heavier, more impactresistant pipe than standard lightweight PVC.

to make the twitchbait dive (A). This mimics a baitfish (the
twitchbait) chasing a smaller baitfish (the fly) and should get
the attention of any bass holding within striking distance.

your next cast (C). Sometimes any of the noncommittal
smallmouths will be triggered to attack when it seems
forage is trying to make a fast escape out of the area. Work
the rig all the way back to the rod tip, as big bass may
track the lure and fly for a distance before taking a swing.

HOLD IT After those initial twitches, pause the rig, thus

allowing the lure and fly to hover, then slowly rise up as


they get swept along by the current (B). Smallmouths
often attack at this point. Streams tend to feature smaller

PVC pipe into two sections, using a sharp 30-degree


angle. Sand both ends of the pipe to smooth rough
edges. You can stop here or continue on for an upgrade.
STEP 2 On the flat end, mark a hole 12 inches from the
end and drill a 1/4-inch hole through both walls of the
pipe. Thread a 2 1/2-inch galvanized bolt through the
hole, and fashion with a lock washer and nut. The butt
of a surf rod will rest against this bolt, keeping the reel
away from the lip of the pipe.

STEP 3 If youre really feeling fancy, add an S-hook.

Use pliers to crimp one end of the hook down to about


diameter, and bend the hook in the middle so
that the two ends are perpendicular. Thread this onto the
bolt before attaching the lock washer and nut, and youll
have a handy hook on which to hang fishing towels,
sunglasses, or a small tackle bag.

Theres no finer way to usher in spring than with a


floating foam spider tethered to a sinking ant. Start with
formal attire: Tie on a black foam spider with white legs.
Using an improved clinch knot, tie a 4-pound tippet to
the hook bend on the spider; it should be just long
enough to reach the bottom of the bedding area. Add the
sinking ant and youre in business. Its a deadly tactic
with spinning tackle, too. Just add a casting bubble a
few feet up from the spider.

.243 WIN

This necked-down .308 pushes a .243-caliber bullet fast


and flat, making it a fine round for white-tailed deer (with
the heavier 100-grain bullet) on down.

.308 WIN

Also known as the 7.62x51mm NATO, this cartridge is the


little brother to the .30-06. Its accuracy is legendary
among snipers and beanfield shooters, and it has plenty of
oomph for 300-yard deer.

6.8 SPC

Designed as a longer-range cartridge, this .270-caliber


round is super versatile, with muzzle energy between the
.223 and .308.

7MM-08
REM

Flat-shooting and accurate, this necked-down .308 carries


plenty of energy far down-range, making it a fine choice
for beanfield deer, elk, antelope, and other big game
smaller than brown bear and moose.

.260 REM

For shooters looking for relatively low recoil, the .260


offers that, plus much higher energy than the .243 Win.

Many shooters like the load for its subsonic possibilities,


but at fairly short ranges200 yards or lessthe
supersonic 110-grain bullet is a great hog and deer load.

Another round from the .308 family tree, this one is


necked-up to handle bigger game like moose and elk.
Pushing bullets up to 200 grains, at muzzle velocities
topping 3,000 feet per second, the .338 Fed. packs a wallop.

Dubbed the Thumper, the large-bore cartridge provides


knock-down-and-dead ballistics on large game out to 250
and 300 yards. Long-range hogs tremble at its name.

chambered for 5.56mm, but it is not recommended to run

WHEN EUROPEAN HUNTERS FIRST LANDED in the New World they were greeted

with a sound with which they were well familiar. The echoes of ruffed grouse
drumming in the old growth forests of the Northeast surely reminded them of
the red and black grouse back home. As their covered wagons pushed west, sage
grouse, spruce grouse, and prairie chickens sounded a thunderous welcome, and
many a settler survived on grouse meat cooked over a campfireif they were
smart enough to pack a smoothbore for the trek.

Today, the distinctive drumming of the male grouse can still be


heard across the northern hemisphere. After some difficult years,
ruffie numbers have stabilized thanks to restoration efforts and smart
management. Other forest-dwelling family members such as the
dusky, sooty, and spruce grouse have also survived threats, though
some subspecies that prefer more open country, including prairie
chickens and sage grouse, havent fared as well, with the heath
hen disappearing altogether in the 1930s. European populations of
red, black, and wood grouse (the largest of the family, and perhaps
better known as Western capercaillie), are also closely managed by
conservation-minded sportsmen.
Arguably, the ruffed is North Americas most popular gamebird,
and certainly the most romanticized, due much in part to the outdoor
art and literature of the early 20th century. Firmly ingrained is the
image of tweed-clad men and their long-haired setters wending their
way through grouse coverts far from industrialized America. Like
most members of the Galliforme order, grouse spend much of their
life on the ground, foraging for berries and vegetation within a small
home range, moving as their dietary whims dictate depending on
the season. During winter, grouse subsist mainly on catkins, and are
particularly fond of the emerging buds of fruit trees, making them a
frequent visitor to orchards.
Male ruffed grouse stake out their turf through loud drumming
rapidly flapping their wings, often while perched atop a drumming
log used year after year. They are solitary by nature, though more than
one hunter has been shocked by a second, unexpected flush.

If you find yourself in a wilderness survival


scenario, and you were smart enough to have
fishing gear in your survival kit, you can feed
yourself and others. Prepackaged survival
fishing kits are available, but over the years,
I have found that the all-in-one kit is neither
packaged correctly nor sized for your success.
In fact, all you really need is a small coil of
monofilament line and one or two dozen hooks.
Very often, survival kits contain large
hooks, presumably to catch large fish during
your emergency, in my experience though,
smaller hooks are more critical. There may not
be big fish in the local waterway, but there are
always little ones. For best results, pack some
small and medium hooks. And as for your line,
bundled monofilament can bend and twist,
making it a nightmare to unwind and cast. Store
your line in the largest round coils your survival
kit will allow, keeping it wound in a similar
shape to the spool it came on.
To make your survival fishing most effective,
select a long stick or branch to use as your pole
and tie your line to it. This will allow you to
conserve line and still reach the fish.

Were not carving up the kind of fish


stick you eat out of the freezer, but the
kind you use to catch a fish.
You may already be familiar with
the hobo fishing kit (if not by that
name): a hook and some fishing line
wrapped around an aluminum can
for a reel. In this still-water fishing
technique, you cast the baited hook,
weight, and bobber with one
hand while unwinding the
line from the can with the
other. But how can you save
line and incorporate a rod?
After a few false starts,
I tried using a stick sanded
smooth and wound with
some fishing line; I cast it
out directly off the end of
the stick. With the stick
held firmly, I pointed it
behind me with the
hook, weight, and
bobber hanging loosely
from the end. Then I
swung my arm
overhead in an
arc and
pointed my
stick out over
the water. My
hook, line,
and sinker
sailed out into the waterI had cast
the full length of the line I had
wound on the stick! It felt like I was
standing there holding the original
rod and reel.
After working with this
technique for some time, I came
up with two helpful improvements.
Tapering the casting end of the
fish stick makes the line cast out
easier, and winding the line
without overlapping helps to
prevent tangles.
A word of caution when
showing this to first-time fishers:
Put a wrist loop on the handle end
of the stick so they dont throw
your amazing rod into the creek.

No hooks and no line? Youre still not


dead in the water. Follow these steps to
use a gorge hook, which will catch a
fish by its innards instead of its mouth,
with your own homemade line.
STEP 1 Pluck a sharp thorn from a tree or bush
and round up the strongest fibers you can find.
If you have dental floss in your survival kit you
can skip step 2 and use it as is. Or, strip off
fibrous inner bark from any of numerous plants
and trees to twist into cord.
STEP 2 To create cord, grab a small length of
bark and twist it until it kinks. Hold the kink
and keep twisting each bundle of fiber.

STEP 3 If you twisted clockwise, then keep


twisting the fiber bundles clockwisebut
allow them to encircle each other counterclockwise. It is the opposing force that makes
the line strong. Meticulously splice in new
fibers to continue twisting a long line for your
fishing leader. It should be at least 6 feet (2 m)
long and 0.03 inches (0.7 mm) in diameter.
STEP 4 Tie the base of your thorn to a wooden
shank or the end of the line, insert into a chunk
of bait, and cast into the water. The technique
here is to allow the fish to swallow the bait. Do
not jerk the line to set the hook. After you think
the fish has swallowed, coax it into a waiting
dip netvery, very slowly.

If there is an art to long-range shooting, its reading the


wind. There are some helpful rules of thumb to use when
observing the effect of wind on the environment around
us. By looking at how much surrounding vegetation is
being moved, we can make an educated guess about the
speed and, under many circumstances, the direction of
the wind. A wind lightly felt upon your face is 35 mph; a
58 mph breeze agitates leaves on trees; an 812 mph
wind raises dust; a 1215 mph wind sways small trees;
and open water begins to whitecap at 17 mph.
Another useful tool is to observe mirage, which occurs
when reflected heat bends light rays, creating visual
distortion. When looking through a scope or binoculars,
mirage can be used to estimate wind speeds up to
about 15 mph. Wind faster than that flattens mirage.

You will need to know both the speed and direction


of the wind to make an accurate adjustment for your
point of impact. Wind drift figures are based on what
is known as a full-value condition, which is found
when the wind is blowing at 90 degrees to the target.
The more the wind blows in parallel to the shooters
line of sight, the less the wind will affect bullet flight.
(Wind that is coming in at a 45-degree angle from any
direction is roughly a -value wind, meaning a fullvalue drift of 10 inches would translate to 7 inches
of actual wind drift.) Only time spent shooting under
field conditions will hone these skills, but developing
them is essential to shooting mastery.

When the time comes to adjust the crosshairs on


your rifle, seconds count, so it pays to learn to dial
in windage or elevation corrections quickly without
lifting your head from the stock and losing view of
the target. For a right-handed shooter, pushing
forward with the thumb on the knobs and rotating
them clockwise will move the point of impact down
or to the left, while pulling on the turrets moves it
up or to the right. Memorize this push-pull method
to dial in faster.

Whats the most difficult shot to make? Id say it is when your heart is pounding and youre out of
breath. Hunters and competitive shooters both know this feeling. It occurs when you have to sprint to
your next shooting position in a match or when you need to make the final push to the ridge of the
mountain at last light. With your lungs working like a bellows and your heart pounding for all its worth,
do what biathletes do to settle down before shooting.

new sneakers, socks, or a spanking-new
sports bra. But remember to keep all
parts of your routine steady, tooeven
the day before. Dont eat anything youve
never eaten pre-run, in case of digestive upset mid-race. And dont neglect
hydration, even if its cold out. Just eat
a healthy dinner, drink water, and wear
your usual, comfy, worn-in duds.

wallet, and other essentials. But

KNOW THE SPORT

Riders have found just about every way to have fun in the
dirt, from spending a great day riding at the track or trail,
to competing in an organized event. Most are introduced
to the sport through family or friends, and so their first
taste is usually whats offered them. Often, riders stick with
what they are first shown because its their first love with
the sport, because its the best type of riding in their area,
or simply because thats what their friends do. But even if
youre already participating in one discipline, its great to
branch out and try others. A different type of riding might
suit your style better, or more importantly, you just might
have more fun. And thats what this sport is about:
enjoying your time, getting outside, and putting some thrill
into your life. If youre brave enough to ride, be bold
enough to try something new.

MOTOCROSS

GRAND NATIONAL CROSS COUNTRY


In GNCC each class starts together in a dead-engine start,
and the course is a trail loop several miles long. Amateurs
usually race for two hours; pro riders race for three.
WORLD OFF-ROAD CHAMPIONSHIP SERIES
WORCS is similar to GNCC but incorporates a motocross
track into the course. WORCS events take place on the West
Coast, while GNCC events stay in the East. The WORCS pro
classes race for two hours; amateur races are shorter.
GRAND PRIX
GP courses are very similar to WORCS racing, but races
are usually shorter, at about 45 minutes.
HARE AND HOUND
Sometimes just called Desert Racing, these events are
high-speed desert races that can be point-to-point or long
loops. Starts are dead engine, with all the riders in a row.

SUPERCROSS
SX is similar to motocross except the tracks are built
inside stadiums, jumps tend to be slower but launch the
riders higher, and events are run at night under the lights.
The race format is timed practices, qualifiers, and one
points-paying main event. The main event is 20 laps for
the 450 class, 15 laps for the 250F class. Lap times are
usually right around one minute each. This is a pro only
sport because the jumps and whoops (successive bump
sections) are so technical and dangerous.
ARENACROSS
Arenacross is similar to supercross except that the tracks
are smaller so that they fit into arenas rather than
stadiums. Starts are also similar, but the narrow tracks
have a two-row start, with both rows leaving together
from behind a single gate.

ENDUROCROSS
Sometimes referred to as EX, EnduroCross combines
enduro and arenacross elements. The temporary tracks are
small like an arenacross track, but the obstacles are all offroad based: logs, water, sand, and rock gardens. The
racing is done with a starting gate and qualifying system
much like supercross. Pro main events go for 12 laps, with
lap times about one minute long. Dont let the short
duration fool you; this sport is very intense and requires
excellent fitness as well as bike-handling skills. The events
also hold amateur races on the same track.

TRIALS
Trials is a finesse event where riders must navigate
obstacles that seem impossibleboulders, cliffs,
waterfalls, streams, etc. They accumulate penalty points
for any time their foot touches the ground. Getting through
a section without touching is called cleaning a section.

FREESTYLE
FMX is a contest of midair tricks judged for style and
difficulty. Riders jump from steel or dirt ramps and usually
land on large dirt mounds. Freestyle is a specialized form of
jumping, and riders usually perfect new tricks by jumping
into huge pits filled with foam blocks. Freestyle has
developed subcategories like Best Whip, Speed and Style,
and Step-Up (high jump on a motorcycle).
There are other two-wheeled racing disciplines: Vintage
racing is old guys on old bikes, though young riders on old
bikes are allowed, too. Rally racing is multiday or multiweek
events that test high-speed riding ability, navigation skills,
and endurance. Hill climbing involves long-swingarm
machines racing straight up insane hills. Flat track is large
dirt oval racing with high speeds, and speedway is similar
but on a shorter oval, with more-specialized bikes. Pit bike
racing is adults on small, modified kids bikes racing on
miniature supercross-style tracks . . . And then theres the
most popular type of ridingtrail riding. This is not racing;
its just having fun riding your dirt bike around on the trails
you have available to you.

Often called MX, motocross is what most people


visualize when they think of dirt bikes. Its high speeds on
rough, natural-terrain tracks also covered with man-made
jumps, berms, and various obstacles. Most tracks have
open-practice days and race days. Races begin with riders
in a row and a starting gate is droppedusually one that
falls back toward the riders and is segmented so that any
racer trying to jump the gate early gets hung up in it while
the other racers take off. A motocross race is actually made
up of two races, called motos. Professional motos are 30
minutes plus two laps long. Amateur motos usually last
between 12 and 20 minutes.

ENDURO
Enduro racing takes place on a course unfamiliar to the
racers that usually weaves through wooded areas. Riders
start out by row, usually with four riders per row, and leave
the start area at one-minute intervals. Traditionally a
timekeeping event, today the pro enduro series and many
local enduros just link special test sections (timed) with
transfer sections (not timed), and the lowest combined
time for all the days special tests wins the class.

it was the birthplace of Carlo Lorenzinis mother. Carlo himself was born in Florence
in 1826, but as a child he was sent to live with relatives in Collodi while he attended
primary school. He formed an early attachment for the place.
By the time he adopted the name Collodi as his own pseudonym in 1860,
Lorenzini was 33 years old and had already logged a colorful record of life experiences.
A passionate advocate of Italian unification, he had enlisted and fought in both the First
(1848-49) and Second (1859-60) Italian Wars of Independence. He became a journalist
in the late 1840s and launched what would become a prodigious literary output over
the next few decades. Among other things, he edited the political paper Il Lampione (so
outspoken that it was soon banned) and the arts journal Scaramuccia (which survived
longer); wrote novels, an opera, short stories, and plays; contributed to a new dictionary
aimed at establishing a consistent language for the newly unified Italy; and published
assorted works of political commentary and music and theatre criticism. Having fervently
supported the Risorgimento, Lorenzini was disappointed when the expected social
changes failed to appear during the decade of unification. His later writings maintained
his original idealism, but tempered it with a sense of disillusionment. In the 1870s he
published an Italian translation of classic French fairy tales by Charles Perrault and
others; this was successful and led him to create further works of childrens literature.
The novel that would catapult Collodi to world fame began modestly as a serial
publication in Giornale per i bambini, a childrens periodical. In July 1881 the Giornale
published the first chapter of what was known at the time as The Story of a Puppet.
Drawing on the literary tradition of the trickster, Collodis own satirical view of society,
and the rich tradition of puppetry itselfa tradition that was particularly strong in
ItalyCollodi spun a tale of a living piece of wood which, when carved into the form of

ickeys career fits into four basic phases. Phase one, which
lasted from November 1928 until about 1940, culminating
in Fantasia, was the basis for all that followed. In that twelveyear span, Mickey became one of the most revered and talked about
figures on the American scene. Phase two, a two-decade-long period
that started on the eve of World War II, as his screen stardom began
to dim, saw a dramatic revival of his popularity with the opening of
Disneyland (in the planning stages: Mickey Mouse Park) and the
debut of the Mickey Mouse Club TV series, both in 1955. During phase
three, from the 60s through the Vietnam War and into the presidency of
Ronald Reagan, Pop Art embraced the Mouse, and, by the 1980s, Mickey
had assumed the mantle of a time-tested classic. Driven by nostalgia,
marketing, and an often fractious political and social climate, at home
and abroad, phase four, from the mid 80s to the present day, has seen
the continued validation of Walt Disneys iconic invention as an integral
part of American and global culture.1
As first brought to the screen by Walt and Ub Iwerks, Mickey was
a graphic blend of preexisting cartoon mice, including Disneys own,
and his most recent animated hero, Felix the Cat with floppy ears, i.e.,
Oswald the Lucky Rabbit [126]. Combining traits of the Little Tramp,
Felix, and Ignatz, Krazy Kats pugnacious adversary, the Mouse was
peppy, free-spirited, amorous, and endearing, with a hefty dose of Walts
and Ubs buoyant Midwestern spirit. His alliterative name, Mickey (even
Mortimer) Mouse, if not lifted from the Performo-Toy Co. product,
can be traced to Krazy Kat, Charlie Chaplin, or Mickey McGuire. But
these multiple sources knitted together as more than a patchwork of
appropriation, pastiche, or parody. They took on a life of their own,
exceeding the sum of their parts.

his singular vision and evocative, impressionistic concept
art caught the eye of Walt Disney himself and influenced the
groundbreaking movies overall visual style.
Tyrus was first introduced to painting, drawing, and
calligraphy by his father, Look Git, and his natural talent
convinced his high-school teacher in Pasadena to suggest
that Tyrus apply for a scholarship to the Otis Art Institute
(now the Otis College of Art and Design) in Los Angeles,
where he graduated at the top of his class. A founding

member of the Los Angeles Oriental Artists Group, which


also included other young Asian artists such as Hideo
Date and Benji Okubo, Tyrus developed a personal artistic
sensibility that joined his formal western art-school
training with traditional Asian aesthetics. During the Great
Depression, Tyrus participated in the WPAs Federal Art
Project and exhibited his work widely in museums and
galleries, including in a 1932 group exhibition at the Chicago
Art Institute that also featured Pablo Picasso. His creativity
and drive helped shape the artistic, bohemian life of Los
Angeles during the 1930s.

Tyrus was hired by the Walt Disney Studio in 1938


to work as an inbetweener, creating the often-tedious
drawings that completed the action between the animators
key frames. While there, drawing upon his study of Sungdynasty landscape paintings, he developed soft-edged,
atmospheric pastels of an ethereal forest that formed the
basis of Bambis aesthetic. From 1942 to 1968, Tyrus worked
at Warner Brothers as a production illustrator, drawing set
designs and storyboards for many award-winning live-action
feature films, including Rebel Without a Cause, Calamity Jane,
Harper, Ice Palace, Around the World in Eighty Days, and The
Wild Bunch.

using a spiral track of pits on a CDs
mirrored surface, encoded ones and
zeros. These tracks are regularly spaced at a
very small distance, so they act as a diffraction
grating for light, meaning they spread out the
light waves, separating the different colors.
The CDs mirrored surface allows the light to
be reflected back to your eye. Each color of
light bends differently, which is why you
have to look at the CD at a certain
angle to be able to see the
whole spectrum.

This swirling, whirling dance


of color goes down because water
moleculesand food coloring and milk,
which are both mostly waterwant to make
superstrong bonds with other water molecules.
(Its sorta sweet.) This is called surface tension,
and its caused by the attraction between water
molecules negative and positive charges. But when
you add rubbing alcohol (or soap), its molecules
break those strong bonds, making water
elsewhere in the saucer pull water molecules
away from milk near the alcohol. And these
water molecules bring the food coloring
with them. Its the most psychedelic
thing thats ever happened
at breakfast!

To figure out your soils exact

type, mix up mud potion at home!


Fill a clear quart (0.95-L) jar
two-thirds full of water, toss in a
teaspoon of water softener (such
as Calgon), and fill the rest with
interesting dirt. Cap the jar and
shake until your arms get tired. Set
the jar where your little brother
cant mess with it, wait a week, and
then peek. Youll see several layers.

Not all soil is the same. Some is sandy,


somes silty, somes mostly clay. Dont know
whats under your feet? Test it to find out.
Okay, we give you permission to get really dirty. Scoop
up a great big handful of dirt from an empty lot or
community garden and squeeze it as hard as you can.
If it crumbles right away, its sandy soil. If it sticks
together in a wad, complete with finger imprints, its
clay soil. If it falls apart slowly, its probably a mixture
of sand, clay, and silt: the three main soil types.

With a pocketknife, cut the stem in

National League ball (the only kind that works for this dissection project),
and then scope out the complex layers of this seemingly simple object.

but its way more fun to
unwind the ball starting from
its outer leather covering.
First cut through the seams
threads, then strip the leather
off the ball. A dense layer of
thin twine appears.

Don yer eye patch, matey, and play ball the buccaneer
way! Cover one eye with a kerchief or taped-on paper,
then find a ball and a basket.
Can you catch passes or score? Its tough! Your peripheral
vision on the patched eye is gone, so you cant see the ball
flying past on that side. Your depth perception is out of
whack, too: Normally each eye sends your brain a different
picture of the same scene to blend into one image. But
because one eye is covered up, your brain cant accurately
judge distance to other players or to the ball.

Why do baseballs require so
many different layers? Through
decades of testing (and sometimes
cheating with nonregulation materials),
ballmakers and ballplayers developed a
near-perfect combination of materials
and density, so todays balls are
neither too lively nor too dead
when walloped by the bat.

Slice that rubber layer open, and youll

see a black rubber layer. Now slice through that,


and out pops the balls heart: a tiny cork core,
no bigger than a grape.
