Renovation season is always a busy time of the year. We make a reno
list, check it twice, and the contractors start tearing apart our outdated
rooms to get to the root of the problem the ugliness. I have done
my fair share of renovations! You can even say Ive renovated more
homes than one should in a lifetime and, Ive learned a few pearls of
wisdom during my home makeover journey.
When planning a renovation project, jot down on a piece of paper
the core function of your space. Is it used to entertain dinner guests,
watch television or simply host tea parties or all of the above? (See
Erica Gelmans Home Reno on page 28.) Now that your space has a
clear function, nd design inspiration and examples of rooms you like.
Clip these examples from magazines, newspaper articles or web sites.

Many different design elements have to come together to create a
designer space. The careful selection of paint colours, fabric swatches,
xtures and window coverings (See Window Shopping with Mary
Dobson on Page 24) are an integral part of the renovation and design
process. Choose and invest in timeless pieces that will bring great
value and sustainability to your design concept. And dont forget those
nooks and crannies where you can maximize storage space! These
often overlooked spaces can be life-savers in making any room look

Measure the circumference of the


mason jar. Cut a piece of wallpaper
lengthwise two inches longer than
the measurement. Cut it again two
inches in height. wrap the piece of
wallpaper around the mason jar.
Use double-sided tape to secure
the band in place. wrap a ribbon
around the jar covering the middle
of the wallpaper band and tie a knot
in the centre. Cut the ribbon ends
diagonally. Fill the mason jar with
water and add owers.

Make sure your tin can is
thoroughly washed. Measure the
height of the can and cut a piece of
scrapbook paper in the same height.
Measure the circumference of
the tin can. Add extra wiggle room
(approx an inch) to your measurement.
Cut the piece of scrapbook paper
lengthwise to match the measurement.
Apply a piece of double-sided tape
on the can and roll the paper around
the can till it overlaps onto itself. Apply
a second piece of tape to secure the
paper in place. Put pens and pencils in
the holder and place it on your desk.
OPTIONAL: Wrap a piece of ribbon
in a complementary colour around the
can.

stairs. Traditionally, this storage would
be located through a door directly
under the stairs which makes getting
to certain areas in this space tough.

Blue Cheese Beer Burgers

Its impossible to talk about barbecuing without


throwing in a couple of good burger recipes.
Perfect for a pre-game party or a post-game
get-together, these hearty burgers hold a hint of
the beer you can serve with the meal. The Stilton
adds a pleasing, creamy sharpness to the burgers,
which are a favourite of the Companys Coming
Test Kitchen.

lbs Lean ground beef


cup Finely chopped onion
cup Fine dry bread crumbs
cup Stout beer
tsp Celery salt
tsp garlic powder
tsp Pepper
oz Stilton cheese, sliced
Onion buns, split

Combine rst 7 ingredients and divide into


8 portions. shape portions into patties, about
4 inches (10 cm) in diameter. Chill, covered,
for 1 hour. Grill patties on direct medium heat
for about 5 minutes per side until internal

After many years of offering window covering advice, Ive


noticed a few things. Many homeowners will get bogged down in
the decision making processes. One of their biggest concerns is
making a style choice they will regret. Quality window coverings,
whether drapes or blinds and shades, should last a minimum of
ten years and that can be a long time if the look isnt right.
So what are the trends? Depends who you ask but we typically
see three or four predominate styles each year. And even though
they change year to year, the good news is that they never seem
to change drastically. No matter how they are packaged or what
they are named, you will likely see the four styles; traditional,
transitional, eclectic and modern.

When I rst saw this kitchen, I walked into the


space and hit the side of the fridge. I thought to
myself, Who puts a fridge in the middle of the
space? The entire kitchen was poorly laid out. The
oors were too dark for the size of the space and
the cabinetry was hideous.

tHE
sOLUtIOn
We gutted the entire kitchen. Men with masks
and sledge hammers ripped apart every piece of
cabinetry off the walls. It looked like something out
of a horror movie! The new kitchen had to have
a proper workow so that the homeowners could
cook their daily meals with ease. Kitchen designs are
a balance of function and esthetics. You can have
a pretty kitchen but if it takes you twice as long to
make breakfast in the morning due to poor layout,
then its not much of a kitchen. In this project,
I chose a white subway tile for the back-splash.
I wanted to open the space by using the natural
reection of high gloss materials to push light into
every nook and cranny thus making the space
look bigger! The colour selections also played a
big part in the look and feel of the space. I wanted
a soft neutral colour dark enough to contrast
with the white cabinets and back-splash. I chose
neutral colours from General Paint for the walls
and trim (walls: Syntax CLC1255W, trim: Akamina
CLW1013W). They were a perfect match with the
eighteen inch porcelain oor tile (Pamesa Trabia
Crema from Carpet Superstores Calgary) which we laid
in a diamond pattern.

Kitchen and Family Room Makeover

The owners of this Lawrence Park home needed a
living space that could accommodate large family
gatherings, get-togethers with friends and a space
where their children could grow up. She wanted the
whole family to be able to gather on the sofa with
no worries of messy hands or accidental spills and
he wanted a room to lounge in after a long day of
work.

tHE
sOLUtIOn
We designed a custom sofa a twelve by nine foot
U shaped sectional with a forty-one inch deep
seat to give this family absolute comfort. We chose
a dark grey velvet fabric with just enough sheen to
cover up a potential mess, yet, a material that had
ample presence for this open-concept living space.
We also created a custom-built banquette area
where the kids would be able to get in and out
freely, and the adults could sit with an unobstructed
view of the family room. We used highly durable
upholstery vinyl for all surfaces, including the
dining chairs. We also took a brand new distressed
wood table and commissioned a custom glass
top designed for easy clean up. We decked the
banquette with lots of texture and pattern to give
some personality and add a playful touch to this
neutral area.

coloured glass vase


Pour glass paint inside the vase. Move the paint around
the vase so that the entire vase is lined in paint. Let any extra
paint drip out of the vase. Let dry. Carefully read and follow
the curing directions on the label of your chosen glass paint.
Once the paint is dry, place it in the oven at 350 degrees
Fahrenheit for thirty minutes. Caution! Do not preheat the
oven. You want the glass to heat gradually. Once you have
reached the recommended bake time of thirty minutes, let the
vase cool completely before taking it out of the oven. Wait 72
hours after curing before placing water in the vase. Place a
bouquet of owers in your new vase!

Fold the arms of the baby suit inwards
to form a rectangle. Then fold the clothing
horizontally onto itself. Roll the clothing
lengthwise to create a cupcake shape. Pin
the clothing in place to keep the shape of
the cupcake. Place the clothing cupcake
in a small coffee lter. Optional: Then set the
cupcake cup into a decorative cupcake box.
Wrap a beautiful ribbon around the box and
voila! The perfect gift for an expectant mom.

framed monogram

Create a letter (rst letter of a name) in the size of


approximately 500 points in a photo or word editing program
with a white ll and a soft Grey outline. If you dont know how
to create this type of graphic on your computer, use a stencil
in the desired size and trace an outline with a pencil. Glue
buttons to cover the entire letter including the Grey outline.
Place the paper with your button art in a frame and there you
have it, a beautiful monogrammed letter for your home.

Trim the decorative edge off the doily.
Apply Mod Podge glue to the clay pot and
glue the cut piece of doily, featuring the
pattern, to the side of the pot. Properly
adhere the piece of doily to the pot using
a brush and watered down Mod Podge.
Repeat this step until the entire pot is
covered. Let dry. Spray two coats of
Krylon White Spray Paint onto the pot. Let
dry. Place a beautiful plant inside the
pot and display it in your living room.

Unscrew the cap and empty the soap from the container into a cup.
Remove the labels and thoroughly wash the inside and outside of the
soap dispenser container. Let dry. Cover the opening of the dispenser
using masking tape and apply 2-3 coats of spray paint to the container.
Let dry. Create a chevron pattern using clear or masking tape on the
front and back of the container. Using a small craft paint brush, paint the
exposed areas in white. Remove the tape, and spray the soap dispenser
with a clear nish to protect the paint. Fill the dispenser with soap and
screw the cap/pump back on. Place the dispenser in your bathroom and
enjoy!

Sand the board to smooth out any rough edges.
Apply two coats of paint to the front and back of
the board. Drill three holes leaving seven inches
between each hole. Flip the board upside down and
using a drill bit the same size as the nut, countersink
an eighth of an inch into the board. Insert a nut into
the hole and ip the board. Add a washer and nut a
quarter inch from the base of the knob, and screw
the bolt of the knob through the hole. Repeat this
process for the two remaining knobs. Hang your
new hook board onto your wall and voila, gorgeous
ready-to-use hooks!

Select desired art to embellish. Any type of inexpensive art, especially portraits,
can be used. Imagine which features of the art can be embellished. Think
about what kind and what amount, would provide the most attractive effect. Start
embellishing! Use a glue gun or small dab of white glue to discreetly afx an
embellishment to a specic area of the art. For instance, a portrait of a lady can be
embellished by using hot glue to afx a string of faux pearl beads or jewelry along
the neckline.Try embellishing clothes by gluing on gemstones, buttons, or even
small pieces of fabric. To create a glittered lipstick or glittered dress/clothes
effect: apply a thin layer of white glue over the lips or clothing with an artists brush,
then generously dust over with glitter. Hold the artwork vertically and tap the back
of the canvas to shake off excess glitter. To create more depth to the eyes, glue faux

Take four primed pine boards, one by two inches wide by eight feet long,
and cut them in half (four feet) for easy handling, then cut into nine inch length
pieces for a total of thirty-eight slats of wood. Drill the Holes. Use a 5/16 drill
bit, and with a power drill or drill press, drill two holes into the thin side of each
slat, along the center line. Each hole should be 1-1/8 from the ends of the slat.
Lightly sand the wood with a simple sanding block or power sander using one
hundred twenty and one hundred eighty grit sandpaper. Paint the Slats. Apply
two coats of paint to all sides of each slat your choice of colours. Assemble
the Mat. Lay eight slats vertically on the table, aligned into a column, with each
slat spaced one inch apart from each other. Insert a threaded rod into the holes
along the left-hand side of the slats and screw an acorn nut on each end of
the rod. Then create a second vertical column of seven slats placed into the
open one inch spaces of the rst column. Insert a threaded rod into the holes
to interconnect the rst column of eight slats to the second column of seven
slats. Place an acorn nut on the threaded rod ends to secure in place. Continue
creating the mat trimming the excess length off one end of the threaded rods
leaving about a half inch of rod exposed on each end of the mat. - For complete

My all-time favourite spaces to design happen to be older condos


in need of a complete revamp. Condos built in the 70s and
80s are spacious and often have equally spacious outdoor areas
attached to them. They are the hidden gems of the housing
market.
The owners of this space approached us rst and foremost
because they were at a stalemate over how to proceed with their
space. They had lived in the condo for many years and loved
doing the work themselves, but when it came to the kitchen and
living space, they knew they needed help. He wanted a more
masculine and organic space, she wanted full-on glitz and sparkle.
They both loved to cook and entertain, so we started with the
kitchen.

The existing kitchen was a contained box completely closed


off from the rest of the condo. This was obviously a trademark
of the design period. Kitchens were hidden away, no way to
entertain guests. Storage, as with all condos, was paramount in
our must-haves so, when we opened up the kitchen, we doubled
the width of the peninsula to ensure we had storage on both
sides. We then added the waterfall counter top on the end to
disguise the added width. Additionally, this gave us a wider space
which is ideal for entertaining because it can act as a buffet or a
bar.

a revamp. The homeowners had been squirreling away dining
room furniture. Fortunately, it ended up working in the space,
though we didnt intentionally set out to make them work. We put
together a sultry colour palette and fabric scheme in the living
room, because the one thing both homeowners agreed upon
was their love of the Silver Screen. We chose furniture pieces
that nodded to Art Deco. It was the happy medium between the
two. Deco, naturally, has a more masculine feel, but if you mix
in a little sparkle and glitz, it softens and adds the much-needed
feminine touch the wife was after. Another marriage saved thanks
to the history of furniture!
Being huge movie buffs, TV/movie watching was a big deal, but
we didnt want to take away from the glamour of the space by
putting a TV front and centre. Instead, we opted for a projector
and screen that can come down from the ceiling. The big club
chairs we placed in the living room are secretly recliners, perfect
for movie watching! We also selected a bench cushion on the sofa
to lounge on.

Eleven years ago, when Ben purchased this home on oConner

many companies and observing carefully what others were doing.

time-lines between these crews

worked out, the whole project from
beginning to end was nished in
four months just like theyd said.

in 1972 is that back then, customers wanted

Design and dcor was very proper with rm
seating, where everything had to be nice and
neat and covered. today, we are much more
casual in our approach to design. we want
to redecorate our homes every three to ve
years were much more fashion-oriented with
our homes. today, we use furniture. Its not
just there as a display. so, naturally, we dont
expect furniture to last as long as we once
expected. today, we embrace design elements
like distressed leather, natural markings, etc.
We are more condent in our design approach.
we want to live our lives at home, and give it a
relaxed atmosphere.

What did you want to be


when you grew up? What
lead you to running one
of the most successful
furniture manufacturing
facilities in the country?

I always enjoyed styling and


merchandising, and I took courses in
college for that. For a while I worked
in the retail merchandising industry.
However, I didnt always know that I wanted
to run a business. that was my husband
Angelos idea. He was already managing an
upholstery company when we were planning
to get married, and he was ready for his next
challenge. so the next step for him was doing it
on his own. Here we are forty years later!

Canadian Design style?
Europeans like rm, contemporary
styles. Americans like big, deep and soft
marshmallow-like upholstery. Canadians, in
contrast, prefer a transitional style. were not
keen on the uber-casual, wrinkled seating thats
so popular in the States, for example. rather,
we like tailored, well-made, classic styles.
thats quintessentially Canadian design.

Talk to us about the biggest


trend in furniture design. I would
have to say, its about not only mixing different
styles and nishes, but also correlating
different fabrics too. Its about nding different
designs that complement each other, and
achieving a harmonious balance between them.
today, you dont want to have a sofa, loveseat
and armchair all in the same fabric and nishes.
you want to start with a sofa, then bring in
accent chairs that are different, and introduce
another piece thats different. Matching is out.

What trendy fabric patterns


and colours can we expect to
see in the coming year? One of
the biggest trends in fabric is the mixing of
various patterns and textures. throw pillows on
a sofa for example will feature a combination
of the following patterns, that all harmoniously
work together under a common colour scheme:
stripes, orals, geometric patterns, ame
stitching and solids. next year, this trend will

continue, but with a playful combination of


both patterns and various textured fabrics.

What country or area in the


world did you pull the most
inspiration from for your 2013
collection? I would have to say Paris and
Milan. they do a phenomenal job of combining
fabrics and mixing styles. weve really picked
up on the curved upholstery trend, alongside
a focus on nishes were showing many more
light nishes this season.

What words of wisdom can you


pass along to someone looking
to redesign their living room?
I would tell them to ask themselves the
following questions:

place to relax, a place to entertain, a place to

It doesnt take a lot of ingenuity to figure out that this


amazing summer home, nestled among trees right
on the waters edge of the lake, is a one-of-a-kind
specialty. The ingenuity happened in the hearts of
its creators and in the minds of the owners. They
worked at it and made it happen.

THE PLAN
To get a closer look at what its all about and how its all pulled together, we get to
chat with Chris Nolan of Discovery Dream Homes. He was the man in charge of the
project (consultations, planning, overseeing). There is no one better equipped to
give us a little peek behind the scenes.
Chris is proud to be part of Discovery Dream Homes whose bottom line
is - bringing your dreams to reality. This, he says, always starts with a one-on-one
consultation (call it a good old visit if you like) where they discover the planned
lot or site possibilities, determine the lifestyle of the project and the homeowners
specic needs and wants. Once this picture is clear, they are ready for the next
step.

THE PROCESS
They imagine the new place and dream up every detail. Then, using the most
advanced software, they create a virtual model that offers a 3D walk-through
in full colour. Not only can you see every detail from the comfort of your own
living room (looking up at the expanse of your vaulted ceilings lined in timber or
walking through your fully equipped gourmet kitchen), you can also request design
changes and see them happen right before your eyes. This gives you the privilege
of interactively being part of the design team.
Now they are ready for the project to proceed.
In planning the Mideld North, the homeowners needed not only a summer
get-away for the family but also space for company and entertaining. They wanted
a cottage that would blend nicely into the natural setting of the hillside waterfront
site as well as have a colourful look with a grand timber entrance from the top
of the hillside. They wanted a large space that was open and airy, yet cozy and
comfortable. Keeping those things in mind, we designed the cottage with the side
timber entrance and screened porch and incorporated lots of glass to capitalize on
the view, Chris says.

THE RESuLT
The cottage, built by Larry Toms and designed by Shawn
Hunter and Kelly Burns, turned out to be a four bedroom
home three bedrooms on the lower level and the master
bedroom on the main oor below the loft. Everything
in the custom Timber accent home is spacious, with the
large exposed wood ceiling in the living room, elegant
stairways and a deluxe gourmet kitchen ready to cook up
a storm. The design is well thought through - promotes
great ambiance, is highly energy efcient and brings
nature right into all the living spaces.
Outside, there is a superb main patio area with a screened
porch. The landscaping, right down the waterside, is

THE HISTORy Decorium, founded


in 1986, is a three-generational, family-owned
and operated furniture business. At rst, it
was small and catered only to the design trade,
but their expertise in importing beautiful and
unique pieces was growing and more people
were catching on. In 1992, by popular demand,
they opened to the public and that growth has
continued unabated. Their agship showroom
in north Toronto, where they once started with
twenty-ve hundred square feet, now boasts
one hundred thousand square feet of beautiful
home furnishings. They continue to be leaders in
value, style and selection; famous for their ability
to change, showing fresh products weekly. They
have added a second showroom in the heart of
Rosedale on Yonge St. in Toronto, which in itself
may well be the hottest thing of the year.
THE NEW SHOWROOM
Decoriums Yonge St. location is a smaller nine
thousand square foot boutique-style showroom
located in the heart of Toronto, right in the midst
of a high-end, fashion-focused community
where prices are not supposed to be the issue.
Right? No. Decorium surprised the people when
they showed up with great fashions at great
values yes, even high-income earners appreciate
getting more for their buck.

WHy ITS HOT So, why would one


rate Decoriums display of furnishings among the
hottest trends of the year? There are several
reasons. Its respected, a recognized trend setter,
has the best selection, a professionally trained

in writing and shows the world the best value in
style. But Steve Forberg of Decorium, says there
are things that are even more important than
whats on that ne list. Relationships are one of
them, and apparently that is high among their
priorities. They want to work together with their
clients, applying not only expertise, but also an
attitude of, Let me walk a mile in your shoes
today so I can understand what would make
your heart beat faster.
We are small enough to care, Steve says, but
large enough to offer really great value.
Just recently Decorium was reported in an
industry publication as being on the
twenty-three Most Watched list. That honour
no doubt ties in with their knack of connecting
the dots between value and fashion or between
high quality and personal attention to your needs.
It could also be because of their great eye for
nding merchandise while they literally shop the

This Georgian home was lovely and traditional but rather formal and it was
transformed into an airy, cosmopolitan home that became a personal expression
of its current owners, Chef David Lee and Realtor Jennifer OBrien.
Being solidly built and restored over the years, with carefully selected interior
architectural details - from the trim work right through to the door hardware
- this house seemed, nonetheless, from a different time period where formal
interactions between family, friends and neighbours were the norm. David
and Jennifer, while immersed in creative culture and style, are warm, engaging
and personal in their everyday lives. Our goal for this project was to respect,
refresh and amplify the classic framework of the home while interjecting the
homeowners sense of style.
The design project felt more like a chemical peel than a full face-lift. We sanded
away the stenciled, decorative Damask wall nishes and stripped away toile
wall covering, replacing all with a symphony of creamy white linen and pewter
shades traveling throughout the house. The gold toned oak oors were sanded
and renished to reveal a natural grey-white oak.
In the kitchen, the heart of the house for this chef (and his
only-slightly-less-procient wife) provencal yellow glazed cabinets were
stripped and re-painted in clear tones of creamy white and celadon. This colour
selection, along with an updated grey glazed crackle subway tile, rejuvenated the
look of the sea-green marble counter surfaces.

To illuminate the new interior, the existing


yellow glow of incandescent, recessed lights
were replaced with the clear, white sparkle of
halogen lights.

As for the decorative lighting, gone were


the lovely - but not for this home - antique
gilt sconces and hanging lights, replaced by
a selection of sculptural lighting. All of this,
personally selected by Jennifer (with some
designer conversations and guidance, of
course!). This included pieces made from
exterior architectural elements, from European
railings, to street lanterns, or artful creations
by the likes of Lindsey Adelman and BDDW.
Jennifers beautiful antique crystal chandelier
still graces the dining room, providing a
romantic counterpoint to the remainder of the
room.
Similarly swagged, trimmed and tasseled
patterned draperies were abandoned for simple
rendered curtains and blinds in a selection of
linen, silk and wool sheer fabrics.

A considerable mix of furnishings from their previous home alongside


a collection of new pieces (both modern and antique) provided the
framework for the dcor of the home. Comfortable lines of generously
upholstered goods are seen in counterpoint with tailored, even austere,
wood and metal pieces. Each new custom furnishing was carefully chosen,
and designed (and many locally-built, by artisans who are truly passionate
for their craft).

Admittedly, the dcor of this home is in constant, ongoing development


by the homeowners. It is never too full, nor complete enough, to preclude
the addition of some original pieces that might strike either the designers
or the homeowners eye, while traveling. An ever-changing selection of
books, decorative objects and artwork are such personal selections (of both
high design and witty, even quirky, vintage provenance) that it is impossible
not to see the nature and character of the family all around.
From a before-and-after perspective, it seems possible that the
transformation of this house mirrors the nature of what our collective
concept of home has become. Now, it is rooted in classic architectural
concepts and proportions, generously layered with comfort, simplicity and
artfulness, with a dash or a dollop of personal style, history and life evident
in every corner.

ver the last few years the idea of a small space is getting
progressively smaller. There was a time when moving into an
eight-hundred square foot condo seemed like moving into a large
closet; however, now a six-hundred square foot condo is not
uncommon to nd. It also seems the perception of working with a
designer on such a small space is like hiring a wedding planner to go
to city hall with two friends. Nothing could be further from the truth.
Making a life work in a small space means that you cannot take one
square foot for granted. Proper space planning is paramount to making the
space functional.
While we are happy to work with any condo space, this one was a little more fun
because it was part of a converted church. Not that you spend much time in the hallways
or outside the building, but coming home to a space with architectural details like a
church was much more fun for this condo owner. The budget was limited for this single
young professional woman, but her heart was fully immersed in the creative process
which was apparent just from the way she presented herself. The fact that she also
worked in a creative atmosphere meant that she was open to more avant-garde ideas.
There was something about this space that warranted an industrial feel. The space was
going to be divided into three areas; the living and dining room would be shared and the
bedroom would make up the last third. The dining table was originally a work table in a
factory. The dining chairs were salvaged from a school where the metal stacking chairs
were replaced with something more modern and less heavy for the school staff to carry
around. The open legs and backs of the chairs in combination with the light metal legs
of the table helped keep this small space open.

FLOOR pLAN

The kitchen didnt really offer much in terms of cupboard space so taking
all of the dishes and glassware and placing them on an industrial shelf on
the opposite wall freed up the needed cupboard space. Just inside the door,
a collection of reclaimed pop bottle crates act as a place to store shoes and
free up some of the front hall closet space. Over the table we hung a mid
century modern chandelier to ground the dining space while drawing the eye
beyond the xture to keep the space open.

The long wall in this condo created an opportunity to display some


interesting art. The eye chart at the end of the dining table is the perfect
size for the table. The collection of framed images over the sofa were
found on the Internet, blown up and framed to create a collage. The small
wall between the two windows at the end of the condo is perfect for the
letters in various sizes and her bike t so perfectly into the space.
The living room uses a sofa and chair to create a conversation area. The
chair separates the living room from the dining room without obstructing
trafc ow between the two spaces. The rug denes the area and the metal
coffee table adds an industrial touch to the room. The sixties styled chair
provided good visual interest from both sides making it the perfect room
break. The Madmen styled cabinet holds the television and also provides
extra storage.
In the bedroom adjacent to the living room we used wallpaper to create
a focal wall which acts as the head board. In this tight space, the addition
of a thick head board wasnt feasible to allow enough space to hold the
machine shop box drawers which now act as a dresser. The light xture has
an industrial feel and the chrome dipped bulbs create a reection to give
the illusion of additional space.
In the tiny bathroom, the sliding glass shower door makes the space look
larger than a shower curtain would and still offers great function. The
wallpaper gives the room texture and makes it a sexy backdrop for the
bathroom xtures.
With so many elements this condo owner recycled or reclaimed but well
selected, the space looks great and suits her perfectly. The money spent on
a design rm, which was a gift from family members, served to create a
perfect urban space that she can call home.

andenwood is a family home located immediately


beside Whistler Mountain in Whistler, British
Columbia. Designed by Canadian architect and
designer, Michael Gottschalk, Kandenwoods
strong visual presence belies the resolve and
accomplishment of the architect, to design a house which blends
beautifully with its natural setting. Built in a sloping section of a gigantic
rock, minimal impact was Gottschalks top priority in creating the design
and in selecting materials and nishes that would integrate the structure
with its settings.

2010, reects the meticulous attention to detail in designing the layout and
interiors to complement the lifestyle of its occupants.
Kandenwood is built on three levels offering large and airy rooms. The
middle level is the hub of the house, with the hallway, living room,
kitchen-cum-dining room and the garages.

The site was chosen carefully, taking into consideration the suns path and
local winds, along with the trees and ground cover on the property. The
size of the clearing, in particular its width, dictated the homes rectangular
shape on the uneven terrain in a southwest-northwest orientation. A stand
of pines offers protection from strong north winds, while on the south side
the house is conveniently open to mild breezes, in numerous windows on
all three stories. This allows for amazing views and natural ventilation.
Modeled on traditional Whistler houses, Kandenwood provides thirty-ve
hundred square feet of living space and a quiet venue away from the hustle
of Whistlers slopes and city centre. The house, which was completed in

The second level offers ve bedrooms


with ensuite bathrooms - all equipped by
Michael Gottschalks signature bathroom

the entertainment area and guest rooms. Big
balconies, evocative of Whistlers mountain
viewpoints, spread along the second oor,
establishing a connection from the interiors
to the surrounding woodland. Out front, a
small path connects the front garden to its
surrounding neighbourhood.
The interiors dcor reects the owners taste
as they chose the broad outlines themselves.
They got involved with nishes, colours,
paneling and xtures They went for a less
contemporary furnishing than I had originally
envisaged for the house says Gottschalk,
but the end result is functional and reects
the homeowners needs.

his twenty-ve hundred
square foot home is a
real standout, with its
front facade of glass
and its towering three story height, nestled
amongst the trees of midtown Toronto.
The homeowner and I wanted to create a
home that is both modern and functional
with hits of colour and warmth.
Being an open-concept design, we needed
to dene the various spaces on the main
oor; however, we felt that any walls - even
glass - would feel obtrusive. We custom
designed the front hall bench to separate
the entrance from the dining area. A
great solution for a tricky spot without
obstructing the view from the magnicent
front windows.
I like to add pops of the unexpected,
even in the most streamlined of homes.
Fantastic lighting is a great way to add
interest and to make a bold statement. The
oversized MOOOI light in the dining room
is quite the centerpiece and can be viewed
from every angle on the main oor.

The third oor is home to the master suite.


The master bedroom is a soft combination of
natural materials: walnut, sheepskin and linen,
in contrast to the streamlined design of the
bed and nightstands. Layers of textures work
together to make this room feel cozy.
The master bath was another tricky spot in
this home. How could we accommodate the
homeowners wish for both a freestanding
tub and a large shower in a relatively small
space? We chose to stack the tub inside the
shower to create a shower room which is both
space saving and visually interesting. We didnt
want the bathroom to feel stark, so we mixed
several different tiles to create texture. Four
by eight sheets of marble, with a soft grey
limestone and a glass mosaic for the feature
wall behind the vanity were used to create this
unique look.
Finally, the master closet - my favourite
room. The homeowner wanted a room that
would function as a closet but feels like
somewhere youd want to spend time. We
created a den-like feeling by designing built-in
clothes storage that looks like something you
might nd on the main oor, again carrying
through the walnut and steel. The large coffee
table serves not only as clothes storage and
a packing table, but also as a great spot to
put your feet up and relax while watching
television. The fantastic lighting xture in this
room is the nishing touch that adds texture
and interest while helping break up the look
of the large walnut door panels.

I think the mixture

t is truly exciting for a Designer when a homeowner is interested


in completely changing the style of their home environment. It
is a growing trend for people to downsize from a large family
home into the easy and carefree lifestyle which a condo can
provide. When I was approached to assist these homeowners in
the transformation of their lifestyle from a Traditional home to a snazzy
contemporary condo, I was delighted to embark on this journey with them!
Naturally, they anticipated missing the home they were familiar with and
comfortable in, however; I was sure that providing them with a custom
design suited to their needs would leave them wondering why they did not
take the leap sooner.
Their main concern during the transition was storage of items which
would be coming to the condo from a larger house. Items such as; dishes,
glasses and platters for entertaining (which the couple does very often),
books, home ofce, and clothing needed to be hidden away, yet easily
accessible. When it comes to wanting to put things away, I am a end for
that, thus I had no problem understanding their needs.

The homeowners requested, I want my home to make me feel as though


I am stepping into a hotel suite when I get home. This phrase set the tone
and inspiration for the type of furniture, colour scheme and design style
which we adopted for this project.
Built-ins are not the most budget friendly solution when renovating, but
no doubt the best way to solve your personal design needs. In this case, we
designed the main wall in the living room to house a new contemporary
replace, oating shelves and cabinetry with touch-latch door mechanisms
for a clean look. The cladding of the wall where the piano sits was to create
continuity and balance in the space.
Entertaining regularly, the homeowners needed a sideboard which had
lined drawers for their prized silver cutlery as well as to serve as an area
for hotplates and drinks. A quartz countertop was installed in this area so
there would be no concern of wear and tear on the beautiful deco-inspired
furniture piece. Mirrors were placed to reect the natural window light on
the opposite wall to expand the area visually.

The den is the most innovative area in this home. A pocket door was installed
leading into a tiny room off the entry hall to save space. To create space for
the home ofce and all the books the homeowner had, a built-in unit was
designed to house a desk, TV area, ling storage and speakers. My favourite
feature in this home is a secret door which was built to open into the closet
space, replacing the door which was much too large for this little room.
In the kitchen, it was important to create an area which could seat at least
eight people. This could only be achieved with a banquette built against
the wall with a sixty-inch table in front of it. A very deep drawer below the
banquette allows ample storage for miscellaneous kitchen items. Chairs were
custom made to be simple and sleek for an unobtrusive look, yet wide at
the seat with built-in springs for ultimate comfort. This condominium is
a perfect example of downsizing without compromise. Furniture, nishes
and decorations were all carefully designed and selected to provide these
homeowners with a space they can be comfortable in as well as proud of
owning.

Upon entering Tartan Homes Ashton model, the open oor


plan and wall of windows across the rear of the house are both
striking and welcoming. The goal in designing this two-storey, four
bedroom two thousand six hundred square foot model home was
to create a memorable, stylish and affordable interior with a blend
of modern trends and classic nishes, appealing to a wide range of
homeowners.

When it came to staging the home, design features such as custom


draperies in a pale grey linen added height to the already nine foot ceilings
on the main oor while creating an elegant backdrop to the tailored pieces

Rustic wood on the dining table base is paired with a stainless


steel top and upholstered chairs surrounding it. Splashes of teal,
warm blue and green become signature colours of the space,
repeated throughout the house in the artwork, paint colours and
accessories, and are focal points against the greys and whites
found in other nishes and furnishings.

Across from the dining room, separated by French doors, is the


spacious and dramatic home study with a glossy white desk, lucite
chair, glass vase with birch branches and oversized wall clock. The
painted dark teal walls create a high contrast colour scheme and
the minimal, thoughtfully chosen accessories bestow a sense of
harmony.
At the top of the open staircase is the master bedroom, with

ensuite. The combination of the white leather king sized bed,

ransforming a traditional space into a soft, elegant and


sophisticated retreat is exactly the kind of challenge
that drives designer Tina Presley. When she met the
homeowner, Breanna, and saw the space for the rst
time, she knew that cosmetic changes needed to be
made.
The rst step in the dramatic transformation was choosing a
damask wallpaper to breathe elegance into the master bedroom
and a sexy, sophisticated, chandelier embossed silver wallpaper for
the dressing room. Once these were installed, Tina went to work
sourcing beautiful pieces that were not only visually appealing but
soft to the touch; pieces that not only spoke to the client but told a
story of her style, taste and interests.
The dressing room, which was originally a third bedroom, quickly
became every womans dream. A mirrored dressing table with
soft lines, accompanied by a six foot tall jewelry armoire and
black velvet side chair, brought a touch of femininity into this
breathtaking space. A one-of-a-kind space, it is fair to say that few
would have anything like it, but many would love to replicate it.

The living room posed a different design dilemma.
With two beautifully nished deep blue velvet side
chairs accompanied by plenty of gold, mirrored
and glass accessories, Tina went about nding
the right piece of art that would incorporate
the rich blue upholstery. Choosing a piece that
complemented a portrait of soft peonies displayed
above the mantle was a challenge on its own, a
challenge that led to Kim Johnson, an independent
artist represented by Peridot. With an innate
talent for creating intriguing and individualized
paintings, Kim was able to customize a piece that
incorporated Frenchie - Breannas lovable French
bulldog. A perfect addition to the existing pieces
and close to the homeowners heart, the addition
of this custom painting gave her home the perfect
touch!
Inspired and driven to create a space that
connected the homeowners style with the way she
lived, Tina worked tirelessly to bring all the pieces
together. Soft, warm, elegant and sophisticated,
Breannas home went from a 1990s update to a
twenty-rst century retreat.

long. The key to a successful party lies within
the ability to offer food that is pleasing to all
and does not require any special attention once
placed on the table.

Ask yourself: Will it be a served dinner, an
informal cocktail party or buffet-style feast?
When compiling items for your menu, keep it
simple as this will minimize leftovers. My dinner
party golden rule is: Have a menu in mind before
going to the market, take precautions regarding
eventual dietary restrictions and have fun putting
together a succulent menu that will be easy to
produce.
When shopping, take advantage of local and
seasonal products as they will give you the
best results. We can certainly nd a bounty of
fresh produce and fruit to excite even the most
difcult palate!

My menu for this issue of Canadian Home


Trends Magazine is a Nioise Salad; just the
thought of this dish brings me back to a recent
trip to southern France. I had this salad sitting
on a patio overlooking the sea. The pungent
avour of anchovies made my palate tingle
and the salty sea air made the experience and
avours surreal. When making this dish, one can
leave some of the ingredients aside to be used
at the discretion of guests. I suggest leaving the
dressing and tuna to be added individually.
The next item is a fantastic pasta salad including
lots of vegetables. I love how easy this dish is
to prepare, not to mention the freshness of the
avours. And who doesnt like Asian noodles?
For dessert, local and seasonal strawberries are
always delicious.

this Fall for a Holiday feast!

3/4 cup Carrots, julienne
3/4 cup Cucumber, julienne

bunch green onions, chopped or
julienne if you are able to do so
1 1/2 cups Red and yellow peppers, julienne
3/4 cup Daikon radish, julienne

packages enoki mushrooms, bottom
cut away to loosen up
1/2 cup Cilantro leaves
green Onions, chopped

tbsp. Black Sesame seeds
FOR THe DReSSiNg

tsp. Lime juice
1
tsp. wasabi
1/3 cup. Sweet Rice vinegar
1/4 cup. vegetable oil

tbsp. Soy Sauce, light in salt

tsp. Brown Sugar

tsp. Sriracha, hot chili sauce

splash of Sesame Oil
Boil the noodles in plenty of salted water until
done to your liking, the package should give you
the timing for the type of noodle you use, drain
and plunge in cold water, drain again well and
place in a large bowl.
Julienne the vegetables as ne as the noodles
and add them to the bowl, mix well to distribute
the avours.
In a separate bowl whisk the ingredients for the
dressing and pour over the noodles, sprinkle
with the cilantro and the sesame seeds and
serve in a platter.
A great garnish for these noodles is dry
seaweed also known as Nori, a few leaves
julienned on top will add the Umami avour to
make it perfect.

oz. Tuna, sushi grade, freshest possible


tsp. Rubbed Oregano
oz. Olive oil
Salt & Pepper to taste

FOR THe SaLaD

pint Cherry Tomatoes, cut in half

cups French green Beans, cut in half

cups Fingerling Potatoes, cut into
wedges

Hard Boiled eggs, cut in quarters
1/2 cup Red Onion, Julienne
1/2 cup Nioise Olives, pitted

head Butter Lettuce, cut, washed and
dried
FOR THe DReSSiNg

tbsp. Shallots, minced

tsp. Dijon Mustard

anchovies, preferably in salt, washed
and fnely minced

tbsp. vinegar or Lemon Juice

oz. good quality Olive Oil

tsp. Fresh Oregano, chopped
Salt and Pepper to taste
Boil a pot of water seasoned with salt and
plunge the beans for a few minutes or until done
to your liking, remove from the boiling water and
plunge in an ice bath to cool fast and retain the
green colour, drain and set aside until needed.
Boil the potatoes in plenty of salted water and
once cooked drain them and dress with a little
vinegar and oil, set aside to cool.
season the tuna steak with salt, pepper,
oregano and olive oil and allow resting for 20
minutes.
preheat a grill pan and once hot place the tuna
in it, sear on the one side for about a minute
then turn and sear the other side for another
minute, remove and rest on a plate.
prepare the salad dressing by mixing the
shallots, the anchovies and the mustard with
a little salt and pepper, add the lemon juice (or
vinegar) and the oregano and slowly whisk in
the olive oil, taste for correct seasoning and
acidity.
place the lettuce on a serving platter and
distribute the tomatoes, beans and the potatoes
all over it, place the eggs and the olives liberally
everywhere and then slice the tuna thick and
place around the salad. Drizzle with the dressing

place the strawberries in a bowl and add three


teaspoons of sugar, the gratings of orange and
lemon rind with the juice and mix well, add the
vodka and allow resting for at most 20 minutes
before serving.
place the mascarpone and the whipping cream
in a mixer bowl and add the sugar and vanilla,
whip carefully until stiff.
Break the cookies into 2 pieces and set aside
place a spoonful of mascarpone in the bottom
of a parfait glass 8 oz. size and add a piece of
cookie, top with a spoonful of strawberries and
shave some chocolate on it, repeat by adding
mascarpone, cookie and strawberries until the
glass is full, top with some crushed nuts and
more chocolate shavings.
Another presentation is to keep all the
ingredients separate and allow your guests to
decide the quantity they like of each one.

There is an expression a Moroccan friend of mine living in Italy used
to use all the time: larte darrangiarsi (lart de sarranger, in French). It
basically means the art of nding clever and unconventional ways to get
what you need or want when theres no obvious solution before you. For
example, say youre desperate for a reservation at a famous restaurant
in Copenhagen, as was another friend, Kevin. He could get the ight, he
could get the time off, he just couldnt get a table and had no connections
to help him out. What did he do? He demonstrated one of the nest
examples of larte darrangiarsi Ive ever witnessed in my life: he wrote a
letter to the chef begging for a table and offering to pay for the entire meal
in gold nuggets from a mine in the Yukon. He taped a tiny nugget to the
letter of request and wrote, Heres my rst installment.

I think it actually took two such letters, but it worked. I happen to know about
it because on his way back from Denmark he stopped off and we cooked a
dinner party together. (I even got a gold nugget myself, which now hangs
daintily from the thinnest possible chain around my neck as a reminder of
where theres a will, theres a way.) At that same party he gave me an
idea for an hors doeuvre that to me is worth its weight in gold too. These
mushroom-stuffed crisp pastry shells have all sorts of hidden surprises:
a little trufe oil, a pinch of goat cheese, a feathery hint of lemon zest.
Earthiness and fruitiness all at once, and they wont spoil your appetite. (For
a summertime version, try chopped tomato, seasoned, with a pinch of pesto
hidden underneath.)
I buy croustades, which are thin pastry cups about an inch (2.5 cm) across.
You could also use mini pastry shells, but I prefer the lightness and crackery
crispness of croustades.
8 ounces (225 g) cremini mushrooms, stems discarded
A drizzling of olive oil
Salt and pepper
A handful of nely chopped fresh parsley
A few drops of trufe oil
Zest of 1 lemon
A squirt of lemon juice, to taste
1 to 2 tablespoons (15 to 30 mL) fresh goat cheese
24 baked aperitif shells

heat the oven to 400F (200C). spread the mushrooms on a baking sheet.
toss with a drizzle of olive oil and season with salt and pepper. Roast to
intensify their taste somewhat, about 10 minutes. Finely chop. toss with the
parsley, a few drops of trufe oil, some lemon zest, and a squeeze of lemon
juice. Check the seasonings.

Preheat oven to 375F (190C). Add oats and ax to a large bowl and sift
in both ours, sugar, baking powder, cinnamon and salt. Add any bran that
remains in sifter to bowl, as well. Fold in chocolate and apples. Make a well
in centre.
whisk together milk, agave, melted butter and egg in a medium bowl.
Add to well in dry mixture. Mix until just combined. Do not over mix. Drop
by spoonful onto an ungreased baking sheet. Bake for eighteen to twenty
minutes or until cookies begin to brown lightly around the edges. transfer
to wire racks to cool.
TIp use a gentle hand when mixing the wet and dry ingredients and stir
until just combined. Excess mixing of the batter will result in dense, tough
cookies.

Whole Grilled Sea bass


2 x 1 1/2-pound head-on sh, Branzino/Sea Bass, scaled, gutted
kosher salt
1/4 cup olive oil plus more for oiling and drizzling
2 limes, thinly sliced
2 oranges, thinly sliced
1/4 cup fresh lime juice
1/2 bunch each basil and cilantro, stems and leaves separated
1 bunch scallions/green onions
1/2 cup orange juice
1/2 cup olive oil
1 red chili, sliced thin
1 tbsp sugar
2 tsp grated ginger
2 tbsp rice wine vinegar
preheat a gas, propane or charcoal grill to medium-high. Begin to score the
sh; Cut 1 slash lengthwise down to the bone, then crosswise in 2 places,
spacing apart; repeat on other side. Season sh cavities and skin with salt
and drizzle with 1/4 cup oil. stuff some of the lime, orange slices and herb
stems inside the sh.
For the vinaigrette: add the orange juice, chili, sugar, grated ginger, rice
wine vinegar and 1/2 cup olive oil in bowl and mix well, set aside.
Spray the grill with non-stick spray and begin to grill the sh, resisting the
urge to turn them until skin is nicely charred and esh is aky and opaque
down to the bone, about 6-12 minutes. using a metal spatula, slide it
underneath the sh, then lift and gently roll over to the other side. Cook until
esh is aky and opaque down to the bone, 6-12 minutes. Use a small knife
to check whether it is done. If it slides easily through the thickest part of esh,
the sh is done.
season the scallions with salt and pepper and toss lightly with olive oil.
place them on the grill for about 45 seconds on each side, until they are
charred and wilted.

Combine rst 3 ingredients in large resealable freezer bag. Add beef. Seal
bag. toss until coated. place beef in lightly greased roasting pan. Bake,
uncovered, in 425F (220C) oven for about 10 minutes, stirring once, until
browned.
Add next 3 ingredients. stir. Reduce heat to 350F (175C). Bake,
covered, for 2 to 2 1/2 hours until beef is tender.
heat cooking oil in medium frying pan on medium. Add next 3 ingredients.
Cook for about 10 minutes, stirring often, until mushrooms are browned.

Sesame Ginger Sauce
serves 4

Sesame, ginger and sake, provide a Japanese


essence to fresh tuna steak in this innovative recipe
from the Companys Coming library. The charred
smokiness of the baby bok choy takes the overall
taste to another level.

4 oz tuna steaks, about 1 inch thick


whole baby bok choy, halved lengthwise

SeSaMe giNgeR SauCe


2 Tbsp ponzu sauce (see Tip)
2 Tbsp tahini
1 Tbsp fnely grated ginger root
1 Tbsp sake
1 Tbsp sesame oil
1 clove garlic, minced
1/2 tsp dry mustard
MaRiNaDe
1/4 cup ponzu sauce
2 Tbsp sake
2 Tbsp sesame oil
1 Tbsp fnely chopped fresh chives
Combine sesame Ginger sauce ingredients.
set aside (see tip).
Combine marinade ingredients. Reserve cup
(60 ml). pour remaining mixture into a large
sealable freezer bag. Add tuna and chill for 30
minutes. Drain and discard marinade.
preheat the barbecue to medium-high. Grill
tuna and bok choy for about 3 minutes per side,
brushing with reserved marinade, until tuna
is medium-rare and bok choy is tender-crisp.
serve with sesame Ginger sauce.
TIp Prepare the sauce in advance and store in the

refrigerator. Bring to room temperature before


serving.
Find ponzu sauce in the Asian section of most grocery
stores. Ponzu sauce is a mixture of soy sauce, lemon
juice or rice vinegar, kombu (seaweed), dried bonito
akes and mirin or sake. A common ingredient in
Japanese cooking, ponzu is generally used as a
dipping sauce.

Cedar-planked Arctic Char


with Maple Compound
Butter
serves 4 to 6

The tantalizing, cedary smell of this recipe cooking


on the barbecue will drive your neighbours crazy.
There is no need to soak the cedar boardsdoing
so will actually leech out a lot of the favour. Make
sure that you have a pail of water nearby for when
you are fnished with the planks; youll need the
water to put out the smoldering pieces of wood.
Also, make sure you use untreated raw cedar. A
chef friend of mine near Sechelt on the Sunshine
Coast of British Columbia used recycled, treated
cedar siding for his version of this recipeits lucky
no onedied!
2 untreated, rough cedar planks 1 foot long
1 8 oz fllet arctic char per person
Salt and pepper

MaPLe COMPOuND BuTTeR


1/2 lb butter
1/4 cup pure maple syrup
1 Tbsp chopped fresh thyme
1 Tbsp fresh lemon juice
Salt and pepper

For the maple compound butter, whip butter in


a stand mixer until uffy and pale. Mix the other
ingredients together in a separate bowl and
slowly add to butter. Continue to whip until butter
is well combined. Dollop onto plastic wrap, roll
up into a cylinder with the ends of the wrap
twisted, and refrigerate.
preheat the barbecue to medium to
medium-high and have a mister or pitcher of
water standing by (in addition to the pail of
water). put the planks right on the barbecue and
then put the llets on the planks. Close the lid of
the barbecue.

After 10 minutes, raise the lid to see how the


sh is doing. The planks should be smoking and
may even be burning. If they are, douse ames
with a little water. It is okay for the boards to
burn a little. Close the lid and check frequently
for about 5 to 10 minutes more until done.
season with salt and pepper, and serve topped
with a thin slice of Maple Compound Butter.
Do not save the board to use again.

TiP Cylinders of favoured butter may be frozen. If


you want to get fancy, pipe rosettes of butter onto
a wax papercovered baking sheet and freeze.
When frozen, rosettes can be stored in a sealable
plastic bag until needed.

Grilled Calamari with

Chickpeas
serves 4 to 6 as an appetizer

When we think of calamari in restaurants across


the country, we think of deep-fried, rubbery
blobs that are usually greasy and somewhat
tasteless. Because the calamari in this recipe is
grilled quickly, it stays tender and tasty. It also
picks up a hint of smokiness from the barbecue.
The chickpeas add a nice lemony contrast to
the squid.
2 lbs squid tubes
2 1/4 cups olive oil
Juice and zest from 1 lemon
1/4 tsp crushed red chili fakes
1/2 tsp ground cumin
1/4 cup chopped fresh parsley
1/2 cup sliced red onion
1 19 oz can chickpeas
wash and rinse squid very well, including
the inside of the tubes. pat dry and place in a
large bowl. In a smaller bowl, mix together oil,
lemon juice, zest and chili akes. Pour half
of this mixture over the squid. Coat well and
refrigerate for 1 hour.
In a large bowl, add the remaining oil
mixture and cumin, parsley, red onions and
chickpeas. Adjust for seasoning, and set
aside.
preheat the barbecue to hot. Grill calamari
for 2 to 3 minutes per side, or until esh turns
opaque.
to serve, mound chickpea mixture in the
middle of a platter and top with calamari.
TIp When you buy the squid for this recipe,
choose smaller tubes: smaller calamari is more
tender.

Coconut Pesto-stuffed
Chicken Breasts

1/3 cup medium sweetened coconut


1/4 cup pineapple juice

Tbsp lime juice
Salt

Cut slits horizontally in chicken breasts to form


pockets and ll with basil mixture. Secure with
wooden picks.
Combine rum and brown sugar. Grill
chicken for 5 to 6 minutes per side, brushing
occasionally with rum mixture, until chicken is no
longer pink inside. Cover with foil and let stand
for 5 minutes.

11/2 cups fresh basil, lightly packed
1/3 cup chopped macadamia nuts

preheat barbecue to medium. In a blender


or food processor, process Coconut pesto
ingredients until a thick paste forms.
