Variation
Choco chips cake-follow the same method as for fruit cake,but instead of truti-
fruti,color,mixed fruit essence just add choco chips and vanilla essence.
Coconut cake-follow the same method for fruit cake as for fruit cake but instead of truti-
fruti,colour ,mixed fruit essence just add coconut flakes and vanilla essence.

Fruit cake
Flour 140gm
Butter 120gm
Sugar(powder) 100gmBaking powder 1/2tsp

dry fruit 225gm

rum 30ml
lemon juice 1tsp
lemon ring 1tbsp
coffee 1tsp
mixed spice 1/2tsp

Pre- heat oven 150Cto160C.
Sieve maida,baking powder,coffie,mixed spice and keep ahide.
Beat the egg separately till double in volume.
Beat butter and sugar till creamy,light and fluffy.
Add sugar in the butter in small portions.
Add half portion of betten eggs in butter sugar mixture and whisk at low speed till eggs
get mixed with butter sugar.
Do not over mix, batter may get cardle.
Add maida and egg little by little and mix with spatula,mix well.
Coat all mixed fruit with flore and mix it a above batter.
Pore above batter in 6in tin and bake the cake for 1hour.

Method
1pre-heat oven at 180C.
Sieve atta, baking powder and keep aside.
Beat the eggs separately till double in volume.
Beat butter and sugar till light and fluffy.
Then add little maide and little eggs in the butter and sugar mixture little by little with the
spatula.
Add greaated carrot,oange plup and orange zest mix lightly.
Pour batter in a6in cake tin and bake it for 35 to40 min.

Method
Sugar Caramel -spread 6tbsp sugar in a pan. Place the pan n low heat.let the sugar cook
brown in color.boil cup ater separeatly.add the 6-7 tbsp boil water to the brown sugar
an cook for 1min.
Apple raisin muffins
Butter 60gm
Powder sugar 75gm
Maida 115gm
Baking powder 1/2tsp
Vanilla essence 1/2tsp

Egg 1large
Milk 3tbsp
Apple 1medium
Cooked apple-cook 1 apple dices with 1/tsp butter,1/2tsp cinnamon 1/2tsp- homey
Method
Pre-heat oven 180C.
Grease muffin moulds or arrenge papper cups.
Sift maida withsugar baking powder and salt in one bowl.
In another bowl mix melted butter,egg,3tbsp milk and vanilla essence together.
With spatula add this mixture to maida mixture and mix slowly.
Add cook apple crushed and stir at once or twice.
Pore this mixture in maffin tray and decorate the top with raisin ,almond or choco chips
bake in preheat oven 15to18 min till golden brown.
