KEY DATA FINDINGS

more consumers cook at home, though foodservice volume sales plummet
▪ Sauces, dressings and condiments records 8% current retail value growth and a retail volume
growth of 3% to reach PEN628 million and 31,000 tonnes in 2020
▪ Pasta sauces records the strongest retail value growth of 59% to reach PEN4.3 million in

2020 IMPACT

COVID-19 lockdown boosts consumer demand for sauces, dressings


and condiments in 2020, though foodservice volume sales plummet
The COVID-19 lockdown boosted demand for sauces, dressings and condiments in Peru in
2020, as consumers were forced to cook all their meals at home when restaurants and
takeaways shut down. Previously, many consumers often purchased a sandwich on the way to
work or a hot-dog in the afternoon, or visited the food court at the mall. The closure of
restaurants has caused foodservice volume sales of sauces, dressings and condiments to see
significant decreases, particularly mayonnaise which is the most popular sauce in the country.
However, home consumption has seen significant growth, as consumers with more time to cook
experiment with new dishes and flavours.

Health concerns negatively impact some sauces, dressings and


condiments in 2020
Sauces, dressings and condiments are important in the preparation of Peruvian food and are
frequently used in large quantities. Cooks often add cumin, onion, garlic, monosodium
glutamate, salt or coriander to dishes. Many of these are purchased fresh, although many
Peruvians also use dried herbs to add convenience.
However, Peruvians are expected to continue reducing their consumption of some of the most
popular sauces, dressings and condiments products in 2020, such as ketchup and mayonnaise,
as health concerns increase. This health trend has been accelerated by the impact of COVID-
19, which has made more consumers aware of their weight and brought attention to the obesity
problem in Peru, where over half the population is overweight. Many consumers are looking for
different ways to cut calories and fat from their dishes and avoiding sauces has proven to be a
successful strategy for some.

New product innovations seen in 2020 as companies latch onto


consumer trends
Cencosud’s private label brand Cuisine & Co launched a new range of Table Sauces in the
second quarter of 2020, with the product coming in 475g stand-up pouch formats. The sauces
come in a range of flavours including the popular mayonnaise with lemon flavour. Alicorp SAA
has also been innovating in 2020 and launched a new premium line of table sauces, in
association with premium meat producer OSSO.
Sales of breading mixes will also see strong growth in 2020, including the traditional brand Aji-
no-mix from Ajinomoto Peru. Maggi by Nestlé Peru has also relaunched its product and Fanny
by Molitalia SA launched a new seasoning base in 2020. These products are likely to remain
popular in 2020 as consumers seek to create different recipes at home.

RECOVERY AND OPPORTUNITIES

Strong tradition of home-made sauces remains, limiting retail volume


growth going forward
Cooking and table sauces are commonly made at home, from natural ingredients, with the
idea of purchasing packaged sauces and dressings not popular in Peru. For example, Peruvian
cooks almost always use a base of fried garlic and onion when preparing dishes, and
sometimes add typical Peruvian ingredients such as yellow pepper (aji Amarillo) or hot red
pepper (rocoto). Peruvians perceive that traditional sauces provide superior flavour due to their
freshness as they are prepared daily with individual influences. Manufacturers recognise this,
and are expected to introduce more sophisticated products over the forecast period in an
attempt to entice consumers and drive value growth, which is set to be strong going forward.
Retail volume growth, however, will remain muted over the early part of the forecast period
due to the strength of Peruvian cooking traditions. Even so, as Peruvians’ lives become
increasingly hectic, with long working and commuting hours, particularly in urban areas,
convenience will inevitably be a growth factor, leading to increasing retail volume growth into the
forecast period.

Salad dressings faces growth limitations, with home-made alternatives


more appealing for consumers
For many consumers salad dressing is seen as unnecessary, with home-made dressings of
lemon, salt and oil used by most Peruvians. Equally, the majority of Peruvians do not eat fresh
salads on a regular basis, making the consumer base for packaged dressing products low. As a
result, it is unlikely that salad dressings will see strong sales into the forecast period.

Companies will seek to innovate into the forecast period, though


consumers will continue to prefer traditional sauces
New product launches are expected to occur into the forecast period as manufacturers try to
anticipate trends and consumer expectations, attempting to mix traditional flavours with
packaged products. However, Peruvians traditionally consume home-made sauces, perceiving
them to be of a higher quality due to their freshness. Furthermore, consumers who are looking
for practicality can find their preferred sauces at very low prices, ready to consume, among
market stalls and in a loose format, acquiring the exact amount they need for the day and
marginally adjust them to their individual taste at home. Herbs and spices are also sold by
weight from large jute or plastic containers in open markets. Consumers believe that these

products are fresher than packaged variants, whilst prices are also lower. As a result, retail
volume sales of sauces, dressings and condiments are expected to remain low into the forecast
period.
