Introductory Message
For the facilitator:
Welcome to the Bread and Pastry Production 8 Self Learning Module on
Mixing Tools and Other Equipment!
This Self-Learning Module was collaboratively designed, developed and
reviewed by educators from the Schools Division Office of Pasig City headed by its
Officer-in-Charge Schools Division Superintendent, Ma. Evalou Concepcion A.
Agustin, in partnership with the City Government of Pasig through its mayor,
Honorable Victor Ma. Regis N. Sotto. The writers utilized the standards set by the K
to 12 Curriculum using the Most Essential Learning Competencies (MELC) in
developing this instructional resource.
This learning material hopes to engage the learners in guided and
independent learning activities at their own pace and time. Further, this also aims
to help learners acquire the needed 21st century skills especially the 5 Cs, namely:
Communication, Collaboration, Creativity, Critical Thinking, and Character while
taking into consideration their needs and circumstances.
In addition to the material in the main text, you will also see this box in the body of
the module:

As a facilitator you are expected to orient the learners on how to use this module.
You also need to keep track of the learners' progress while allowing them to manage
their own learning. Moreover, you are expected to encourage and assist the learners

Welcome to the Bread and Pastry Production 8 Self Learning Module on
Mixing Tools and Other Equipment!
This module was designed to provide you with fun and meaningful
opportunities for guided and independent learning at your own pace and time. You
will be enabled to process the contents of the learning material while being an
active learner.
This module has the following parts and corresponding icons:

MIXING TOOLS AND OTHER EQUIPMENT
Mixing tools – use for mixing ingredients
1. Electric and handy mixer – it is consisting of
set of beaters attached to a gear, used for
different baking procedure like beating, stirring
and blending
2. Mixing bowls – a round bowls that comes in
different sizes that are used for combining food
ingredients when preparing recipes, from beating
eggs, mixing batter or whipping cream
3. Rotary Egg Beater – a hand tool used to
manually beat eggs or whip cream.

4. Rubber scrapper – usually made of silicon


plastic or rubber and is heat resistant used for
scraping sides of a mixing bowl or mixing/folding
ingredients to each other
5. Wire whisk - is used for beating eggs, whipping
creams or blending light ingredient/batter

6. Wooden spoon – also called mixing spoon and is


used for different types of mixing

Ovens and other baking equipment – Ovens are the workhorses of the
bakery and pastry shop and are essential for producing the bakery
products. Ovens are enclosed spaces in which food is heated, usually by hot
air. Several kinds of ovens are used in baking.
1. Bread toaster – an electric small appliance
designed to expose various types of sliced
bread to radiant heat, browning the bread so
it becomes toast
2. Convection Oven – contains fans that
circulate the air and distribute the heat
rapidly throughout the interior. Strong forced
air can distort the shape of the products made
with batter and soft dough
3. Deck or Cabinet Oven – also called stack
oven. The items to be baked is place on a
sheet pan and several sheet pans can be
stacked on top of one another

4. Double Broiler – is two pots: a large one that


looks a lot like a regular saucepan and a
smaller, shallower pan that nestles inside. It’s
used for cooking delicate ingredients that have
a tendency to seize or separate over direct
heat
5. Dutch Oven – also known as casserole dishes
and is a thick-walled (usually cast iron)
cooking pot with a tight-fitting lid. Dutch
ovens have been used as cooking vessels for
hundreds of years
6. Mechanical oven - The food is in motion
while it bakes in this type of oven. The
mechanical action eliminates the problem of
hot spots or uneven baking because the
mechanism rotates throughout the oven.
7. Rack oven - is a large oven into which entire
racks full of sheet pans can be wheeled for
baking

8. Rotary oven – it is designed with turntable


which moves the materials in circular motions
inside the heat chamber.

you use a manual or electrical, from the preparation to putting them inside
the oven, all of them speed up the process to be done.
